PORK AND SHRIMP WONTON
Steps:
- Gather the ingredients.
- Process half of the shrimp and all the pork, ginger and seasonings in a food processor .
- Roughly chop the remaining shrimp and transfer to a medium bowl. Add the spring onions and the mixture from the processor to the bowl. Fold together to combine.
- Put 1 teaspoon of filling onto the center of the wonton wrapper and use your fingers to gently close the wrapper tightly. You can brush a little bit of water onto the edges to help the wrappers seal and stay closed. Sprinkle a thin layer of flour on a large plate. Place the wontons on the plate as you finish forming them.
- Bring a pot of water (or broth) to a boil. Drop in the wontons in batches and cook until they float to the top, about 5 minutes.

- Combine pork, garlic, ginger, soy sauce, sesame oil, and vegetables in a bowl.
- Separate wonton skins.
- Place a heaping teaspoon of filling in the center of the wonton.
- Brush water on 2 borders of the skin, covering 1/4 inch from the edge.
- Fold skin over to form a triangle, sealing edges.
- Pinch the two long outside points together.
- Heat oil to 450 degrees and fry 4 to 5 at a time until golden.
- Drain and serve with sauce.

- Spray 1 or 2 baking sheets with nonstick spray.
- Cut each wonton wrapper to make 4 triangles.

- In a bowl, mix the ground pork, shrimp, soy sauce, sesame oil and white pepper together. Stir to combine well to form a sticky filling.
- To wrap the wontons, lay a piece of the wonton wrapper on your palm and add 1/2 tablespoon of the filling in the middle of the wrapper. (Use 1 teaspoon filling if you are a beginner.) Dip your index finger into the sealing water and trace it on the outer edges of the wonton wrapper.
- You can wrap the wontons three ways. To make a triangle, just fold it up to form a triangle. Pinch the edges to seal tight. To make them into the pretty shape (far left in the above picture), just pull the two corners of the triangle down so one overlaps the other, pinch and seal with water. To make them into Hong Kong style wonton (far right in the above picture), please watch my video at the top of this post.
- Heat up some oil for deep-frying. Once the oil is fully heated, deep fry the wontons until golden brown. Drain the excess oil with paper towels. Serve hot with Chinese sweet and sour sauce or Thai sweet chili sauce.

- Mix together the ground pork, celery, carrot, onion, and garlic in a bowl. Season with salt, pepper, and soy sauce; mix with your hands until well blended.

- Adjust oven racks to upper-middle and lower-middle positions and heat oven to 400°F. Line 2 baking sheets with parchment.
- Place the cut wonton wrappers on the baking sheets and brush both sides of the wonton wrappers very lightly with oil.
- Lightly sprinkle the top-side of the wrappers with flaked sea salt.
- Place one baking sheet in the middle of each rack and cook 5 minutes.
- After 5 minutes, set the bottom tray on the upper-middle rack and the set the upper tray on the lower-middle rack, and rotate each tray from front to back.
- Bake an additional 5-10 minutes or until the chips are light golden brown.
- Set sheets on a cooling rack and carefully transfer the chips to a different baking sheet or serving tray.
- Reload the trays with additional wonton wrappers (if necessary) and repeat the process.
- Keep in an airtight container up to 1 week.

This recipe comes from Snack Attack Kids Cookbook. I make these on Saturday nights just for my mom and grandma Andy, we enjoy them with a little salsa or white salsa to dip into.

Steps:
- Turn oven on to 350 degrees F.
- Cut each Won Ton wrapper into triangles.
- On a non stick baking sheet, line with tin foil, shaping into a fan , or ridges.
- Place the pieces of Won Ton wrappers over the foil, letting them fall over the foil. This will give you rippled chips.
- Or you can just lie them on the pan for flat chips.
- In a small bowl mix the olive oil, garlic, and oregano ( could use basil), and lightly brush this over each won ton wrapper.
- Sprinkle with the grated cheese.
- Bake in the oven for about 8 minutes or until golden, just the way you like them.
- Use hot pads to remove from oven, and tongs to remove the chips on to a rack to cool completely.
- Make a second and third batch until all the won tons are baked.
- Turn off the oven.
- Enjoy munching as a snack or with a great chilli, or bean soup recipe.

- Remove the shrimp shell and deveined.
- Add a teaspoon of salt and 1/2 teaspoon of baking soda to the shrimps, soak for 15 minutes.
- Clean the shrimps under running water until the water becomes clear.
- Drain off the excess water and keep it dry by leaving it on a piece of kitchen paper.
- Mince the pork coarsely.
- Combine all the ingredients until it becomes sticky. Keep it refrigerated for fifteen minutes before wrapping the wonton.
- Place the filling at the center of the wonton skin. Fold the two opposite corners of the skin together. Squeeze the wonton very lightly to let the skin adhere to the filling, leaving part of the wonton skin hanging freely.
- Blanch the pork bone in boiling water for five minutes. Removed and scrub clean.
- Fill the stockpot with cold water, put all the ingredients in the water. The level of water should just enough to submerge all the ingredients.
- Bring the water to a boil over high heat.
- Once the water is boiling, reduce to bare simmer for three hours.
- Skim away the scum floating on the surface from time to time.
- Remove the bones.
- Strain through a wire mesh strainer to get a clear soup.
- Season with light soy sauce, salt, and ground white pepper.
