WONTON EGGCUPS
This little breakfast takes less than 30 minutes to prepare and cook, and its healthy and simple; not to mention delicious!

Steps:
- Preheat oven to 375.
- Spray 12 cup muffin tin with a non-stick cooking spray and place won ton wrapper into tin pushing won ton down in hole so that some of the won ton is sticking out.
- Add diced ham into bottom of pan and spread out between won ton wrappers.
- In a bowl, combine eggs and milk and mix.
- Pour egg and milk mixture evenly into muffin pan. Top with desired amount of salt and pepper.
- Place in oven for 10-15 minutes until eggs begin to solidify, then remove and sprinkle tops with cheese. Place back in oven for about 5 minutes; until cheese is melted. Serve and enjoy.
- Note: You can use any kind of milk to make this recipe and feel free to add any breakfast style ingredients to it! I've also used bell peppers, onions, sausage, etc and its delicious!

- Pre-heat the oven to 375 degrees. Lightly mist a 12 count standard-sized muffin tin with cooking spray and set aside.
- Cook the bacon slices according to package directions until crisp and then set aside on paper towels to drain. Crumble 3 slices of the bacon into a mixing bowl and the crumble the remaining slice into a separate pile.
- Place the ground turkey in a separate mixing bowl and add ¼ teaspoon of the salt, ¼ teaspoon of the black pepper, the sage, the thyme, the marjoram, and the crushed red pepper. Mash/stir together with a fork or your hands until well combined (this step added sausage seasoning to the ground turkey).
- Mist a large skillet with cooking spray and bring over medium heat. Cook the seasoned ground turkey, breaking it up into small chunks, until cooked through. Transfer the cooked turkey into the mixing bowl with the crumbled bacon. Wipe out the skillet with a paper towel.

- Preheat the oven to 350° F. Spray a 12 cup muffin pan with nonstick cooking spray and press wonton wrappers into muffin tins to form a shell (see picture below). Bake 8-10 minutes or until golden brown. Remove from oven and set aside to cool.
- Heat 1 tablespoon of oil over medium heat in a large skillet. Add the ground chicken and cook, crumbling it as you go. Season the chicken with salt & pepper to taste, then add the soy sauce, ginger, and five spice and saute until chicken is fully cooked. Add the shredded cabbage, celery, onion, salt, sugar, corn starch, and sesame oil. Cook, stirring, 4-5 minutes or until tender-crisp.

- Preheat the oven to 375° F. Lightly spray a 12 cup muffin tin with olive oil and place two wonton wrappers in each cup. Rotate each wonton wrapper slightly to cover the whole cup.
- Divide the onion, asparagus, and gruyere cheese between wonton cups. Then pour the egg mixture in. Careful not to overfill the wonton cups, they will puff up a bit while cooking.
- Reduce the oven temperature to 350° F and bake the egg bites for 15 minutes or until the center has set. When finished, remove from the oven and let them cool for 5 minutes before carefully removing them from the pan.
