4 cups (1 lb, 1 oz or 482 g) all purpose flour, plus extra for dusting
2 cups (9 oz or 255 g) whole wheat flour
2 tablespoons (24 g) instant or active dry yeast
2 tablespoons (25 g) sugar
1 tablespoon (18g) kosher salt (if using table salt, reduce to 1 1/2 teaspoons (9g)
2 cups (480 ml) very warm water (about 120 degrees)
1/4 cup (60 ml) olive oil

Steps:

  • Mix the flours, yeast, sugar, salt, water, and olive oil in a large mixing bowl with a sturdy spoon until a shaggy dough forms, then knead until the dough comes together and becomes smooth, about 4 minutes by hand or machine.
  • Form a smooth dough ball. Return the dough to the bowl, cover with a clean tea towel, and let it rise in a warm place for 15-25 minutes.
  • Divide the dough in half and form into two tight dough balls or loaf shapes. You can place the balls or loaves directly on a rimmed baking sheet or in standard-size loaf pans. Press down slightly to flatten them, then dust a teaspoon of flour over each loaf, rubbing with your hands to distribute the flour. Slash the tops of the loaves three times.
  • Place the loaves on the middle rack of a cold oven with a pan of hot tap water on the rack below it. Close the oven, set the heat at 400 degrees, and set the timer for 40 minutes. It is imperative that you start this in a cold oven!
  • After 40 minutes, remove the bread from the oven and transfer the baking sheet to a cooling rack. Cool the bread completely before removing from the pan and slicing.

1 package (1/4 ounce) active dry yeast
3 cups warm water (110° to 115°), divided
3/4 cup canola oil
1/4 cup sugar
1/4 cup molasses
1 tablespoon salt
7 to 7-1/2 cups all-purpose flour
3 cups whole wheat flour

Steps:

  • In a large bowl, dissolve yeast in 3/4 cup warm water. Add the oil, sugar, molasses, salt and remaining water. Combine flours; add 4-5 cups flour to mixture. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. 3 1/2 cups white whole wheat flour
1/3 cup vital wheat gluten
4 teaspoons instant dry yeast ("quick rise" or "rapid rise")
2 1/2 cups very warm water (120°F to 130°F)
1 tablespoon salt
1/3 cup coconut oil (melted and cooled (OR vegetable oil))
1/3 cup honey
4 teaspoons lemon juice
2 1/2 cups white whole wheat flour

Steps:

  • In the bowl of a stand mixer fitted with a dough hook, mix together 3 1/2 cups white whole wheat flour, vital wheat gluten, and quick-rise yeast until well combined.
  • Add the water and mix for one minute, scraping down bowl halfway through. Cover the bowl with a clean kitchen towel and allow to rest for 10 minutes.
  • Uncover the bowl and add the salt, oil, honey, and lemon juice. Beat for 1 minute.
  • Add the remaining 2 1/2 cups of flour, one cup at a time, mixing well between each cup. Knead the dough in the mixer (still using the dough hook) until the dough pulls away from the sides of the bowl and feels smooth rather than sticky. This usually takes 10 to 15 minutes, but if your dough pulls away and loses its stickiness sooner, it could take as little as 5 minutes.
  • Grease two nonstick bread pans measuring 8 1/2" x 4 1/2" x 2 1/2" to 9" x 5" x 3" each (or grease two regular bread pans and then line them with parchment paper). Preheat the oven to lukewarm by setting it to 350°F and then turning it back off after exactly 1 minute.
  • Turn the dough onto a greased surface. Evenly divide it into two loaves. Form and place the dough into the prepared bread pans, gently pressing it into the corners.
  • Place the pans in the warm oven and allow them to rise for 20 to 40 minutes, until the dough is nicely domed above the tops of the pans. Without removing the pans from the oven, turn on the oven to 350°F and set the timer for 30 minutes. The bread is done when the tops are golden brown and the internal temperature reaches 190°F to 200°F on an instant-read thermometer. Once the loaves are baked, immediately remove the hot bread from the pans to cool on a rack.

Steps:

  • Place the warm water in a large bowl and sprinkle the yeast on top. Set aside for 5 minutes to allow the yeast to proof.

  • Blend in 2 cups of the flour and the salt until moistened. Beat on medium speed for 3 minutes.
  • Stir in an additional 1 1/4 to 1 3/4 cups flour, until dough pulls away cleanly from the sides of the bowl.

2 cups all-purpose flour
2 teaspoon salt
¾ teaspoon active dry yeast
2 cups water (room temperature)

Steps:

  • Mix Ingredients and Rest: In a big bowl combine whole wheat flour and all-purpose flour, salt and yeast. Pour the water into the bowl and using a spatula or a wooden spoon, mix it until it's all incorporated. It will be sticky, so just mix until most of the flour is incorporated. Cover the bowl with plastic wrap and let it sit on your counter for 12 to 18 hours.
  • Preheat Oven and Pot: Preheat oven to 475°F. Add your Dutch Oven to the oven and heat it as well while you're prepping the dough.
  • Shape Dough: Flour your hands really well and and sprinkle plenty of flour over the dough in the bowl. With your floured hands gently remove the dough from the bowl, scraping at the sides first, adding more flour as needed (see video) and roughly shape it into a ball. Take the ball of dough and drop it directly into the pot or place it on a piece of parchment paper and grab the parchment paper with the dough and place it in the pot. Be careful not to burn yourself, the pot will be quite hot, so use oven mitts to handle it. Cover the pot with the lid and place it back in the oven.
  • Bake: Bake the bread for 30 minutes covered with the lid on, after which remove the lid and bake for another 10 to 15 minutes until golden brown. and crusty.
  • Cool: Remove from the oven, transfer to a cooling rack and let cool before slicing and serving.

2 (1/4 ounce) packages active dry yeast
2 cups warm water (110F)
1/4 cup butter, melted
1 tablespoon salt
3 1/2 cups whole wheat flour
1/3 cup honey
3 -3 1/2 cups unbleached flour

Steps:

  • In a large mixing bowl, combine yeast and water; stir to dissolve yeast.
  • Stir in the melted butter and salt.
  • Add the whole wheat flour and mix well.
  • Let stand for 3-5 minutes.
  • Stir in the honey.
  • Stir in as much unbleached flour as you can.
  • Turn dough out onto a floured surface.
  • Knead enough remaining flour to make a stiff dough that's smooth and elastic (8-10 minutes).
  • Place the dough in a greased bowl.
  • Cover; let rise until double in size (1 1/4 hours).
  • Punch down dough; let rise again until almost double (about 45 minutes).
  • Divide dough; shape into two loaves and place in two 9x5x3-inch loaf pans.
  • Cover; let rise until nearly double and center is rounded (45 minutes).
  • Bake in a 350F oven for 30 minutes then COVER WITH FOIL if necessary to prevent browning.
  • Continue baking for 15 to 20 minutes more or until done.
  • Remove from pans and cool on wire racks.
  • While warm, you may brush loaves with melted butter.

2 cups buttermilk (or sour milk)
¼ cup honey
2 tablespoons olive oil

Steps:

  • Preheat oven to 300℉ (150ºC).
  • Spray 9" x 5" (2 L) loaf pan with non-stick spray.
  • In a very large mixing bowl, whisk together the whole wheat flour, baking soda and salt. Set aside.

  • Into a bowl, pour in the lukewarm water.Water which is not cold nor hot; but just slightly warm.Add the honey,yeast,salt,and stir everything together until everything get dissolved in water.If you are using active dry yeast, use 1 and 1/ 4tsp and make sure it dissolved in water completely before adding the flour.Now add the softened butter and the whole wheat flour into this.Combine everything together to form a shaggy mass of dough.Transfer the dough onto a clean work surface.Knead the dough for 10-12 minutes until we get a soft and elastic dough.

  • Proof the dough for 45 minutes or until it rises well.When the dough reaches 3/4 height of baking tin, start preheating your oven to 350F.

  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

  • Start by adding slightly warm water (not above 110 degrees!) to your mixer bowl Then add the oil and agave (or honey if you prefer) to the bowl, followed by the yeast.Pulse the machine to mix slightly. The yeast should begin to react immediately and appear bubbly.Add four cups of flour covering the water, then add the salt, and gluten flour. Turn your mixer on to low speed (or Bosch level 1).
  • Now add 4 more cups of flour while mixer is working on low. Add another half cup of flour as the final touch, and check to make sure that the dough is cleaning the sides of the bowl. (You can add up to another half cup of flour if the dough appears to be sticking, but you shouldn’t need it.) Turn the mixing speed up to medium (Bosch level 2) and mix and set a timer for 10 minutes.At the end of ten minutes, your dough will be smooth and elastic. Turn dough onto a clean and oiled or pan sprayed surface. Divide dough into three equal portions.
  • Take one of the three dough portions and press roughly into a 8 inch square. Fold the top down, bottom up, and sides in, pressing into the center each time (watch the video!)
  • Flip the dough over, seam side down, and shape into loaf by placing hands on sides of dough and pressing together.Place dough into oiled or pan sprayed baking pan, and press down firmly with your hand. (The dough is elastic and will spring back, so don’t worry about filling the pan – or about having your handprint on the top – it won’t last!)
