EASY CHOCOLATE WAFFLE RECIPE
Rich and fluffy chocolate waffles that aren't too sweet and make the perfect breakfast topped with buttermilk syrup, berries, and a little whipped cream.

Steps:
- Preheat you waffle iron as directed.
- In a medium mixing bowl add the flour, cocoa powder, sugar, baking powder, and salt. Use a whisk to combine. Make a small well in the center of the dry ingredients.
- Add the eggs, oil, and milk to the well, and use the whisk to slowly combine the wet and dry ingredients. Stir well, until very few lumps remain.
- Pour the batter into your waffle iron according to manufacturers directions.
- When the waffle is done cooking, carefully place it on a wire rack to cool, taking care not to stack the waffles on top of each other. Repeat with remaining batter.
- Serve waffles hot with your favorite topping, such as buttermilk syrup, strawberries, and whipped cream.

WONDERFUL WAFFLES
A wonderful waffle recipe I have been making for quite some time on my waffle machine, adding in 1/2 cup fresh blueberries will only add to the flavor, do not use frozen berries.

Steps:
- In a bowl whisk together the egg yolks with milk, vanilla and sugar.
- In a small bowl combine the flour with baking powder and salt; add to the egg mixture and whisk until smooth, then whisk in the melted butter.
- Allow the mixture to sit at room temperature for 30-35 minutes.
- Meanwhile you may beat the egg whites until stiff.
- Fold in the beaten egg whites to the wet mixture.
- Spoon mixture into the waffle machine using amounts stated for your machine.
- Cook until browned.

WONDERFUL WAFFLES
I've tried other waffle recipes, and this is one is by far the best! The texture is moist, not dry - and they freeze well. Cool on wire racks before freezing, then just pop them in the toaster to reheat.

- Preheat waffle iron. In a medium bowl, sift together flour, baking soda, baking powder and salt; set aside.
- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg yolks. Blend in flour mixture alternately with buttermilk.
- In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
- Spray waffle iron with non-stick cooking spray, or lightly brush with oil. Ladle the batter onto preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

- Melt the butter and shortening in a small saucepan, stirring to combine; remove from the heat and set aside. Whisk the flour, baking powder, salt and sugar in a large bowl.
- Whisk the eggs, milk, chocolate syrup and vanilla in a large liquid measuring cup or a separate bowl. Whisk the egg mixture into the flour mixture until combined. (The batter will be slightly lumpy.) Whisk in the butter mixture until combined.
- Preheat the oven to 250 degrees F. Preheat a waffle iron and spray with cooking spray. Ladle some of the batter into the waffle iron to within an inch of the edge (1/3 to 1/2 cup batter, depending on your waffle iron); cook until crisp. Transfer the waffle to a baking sheet and keep warm in the oven. Repeat with the remaining batter.
- Divide the waffles among plates. Dust with confectioners'sugar and top with berries and/or chocolate syrup.

- Sift first 5 ingredients into large bowl. Mix in sugar. Stir chocolate and butter in heavy small saucepan over medium-low heat until melted. Pour into medium bowl. Whisk in eggs, then milk, kirsch and vanilla. Make well in center of dry ingredients. Gradually whisk in milk mixture.
- Following manufacturer's instructions, make waffles with batter (waffles will be somewhat soft when removed from pan). Cool waffles. (Can be made 1 day ahead. Store chilled in airtight container.)
- Preheat oven to 350°F. Cut waffles into large triangles. Place on baking sheet. Bake waffles until beginning to crisp around edges, about 5 minutes.
- Stack waffle triangles alternately with scoops of ice cream on each plate. Drizzle chocolate sauce and Cherry Compote over.

- In a mixing bowl, combine milk and vinegar and let set for a few minutes to activate. Then add the rest of the wet ingredients: melted coconut oil, maple syrup, vanilla extract and whisk.
- In another bowl, whisk together the dry ingredients: flours, starch, cocoa powder, salt, baking powder and sugar.
- Pour the wet ingredients into the dry ingredients. Stir with a big spoon until just combined (the batter will still be a little lumpy). Let the batter rest for 10 minutes so the flour has time to soak up some of the moisture. Plug in your waffle iron to preheat now.
