CHICKEN CASSEROLE
The original old family recipe for this chicken casserole called for the sauce to be made from scratch. Through the years, I developed this version that takes less time to prepare and still tastes great. It's an attractive main dish. -Ruth Van Dyke, Traverse City, Michigan

- In a large skillet, saute the celery, onion and green pepper in butter. Remove from the heat; stir in the chicken, mushrooms, olives, soup, milk and noodles. , Transfer to a 2-qt. baking dish. Cover and bake at 325° for 25 minutes. Meanwhile, combine topping ingredients. Sprinkle around edge of casserole; bake 5 minutes longer or until cheese is melted.

I grew up eating this recipe and then when I began my career and was helping people learn to cook I use this recipe. It is so easy to make and everyone I make it for asks for the recipe! Enjoy!!

Steps:
- Place chicken breasts in large pot covered with water, bring this to a boil over high and cook for 20 minutes or until the chicken is no longer pink.
- Drain chicken, and finely chop chicken into small bite size pieces. Place in a large bowl and mix in the sour cream, chicken broth and cream of chicken. Mix until combined.
- In a second bowl melt the 1/4 cup butter, then mix in the Petridge Farms stuffing until moist.
- In a 3-5 quart casserole dish layer the two bowls. First a layer of chicken mixture, then a layer of stuffing, repeat and end with stuffing.
- Bake at 350 for 1-1.5 hours. If the top of the crumb layer is browning you can cover the casserole for the remaining time. Since everything is precooked, the goal of cooking is to have the dish heated through, and let the flavors combine.

WONDERFUL CHICKEN CASSEROLE
No cleanup on this one. When a friend told me about this I thought it sounded funky. Didn't think the potatoes would be that great. OMG, was I wrong. Another friend substituted little ears of corn instead of potatoes. You may need to tweak the amount of margarine & italian dressing.

Steps:
- Line a 9x13 dish with foil.
- Place chicken breasts in the center.
- Place green beans on one side of chicken.
- Place sliced potatoes on the other side of chicken.
- Mix melted margarine& italian dressing together& pour over everything.
- Add some black pepper.
- Cover with foil and bake at 350 for 1 hour.
- Uncover& cook 15 more minutes or until potatoes are tender.
