1/3 cup hickory smoke-flavored barbecue sauce
1/2 cup apricot or peach preserves
1 tablespoon corn syrup
1 teaspoon prepared mustard
1/4 teaspoon ground cloves
6 bone-in pork loin chops (3/4 inch thick and 8 ounces each)
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a small bowl, combine the barbecue sauce, preserves, corn syrup, mustard and cloves; set aside., Sprinkle pork chops with salt and pepper. On a lightly oiled grill, grill chops, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°, basting frequently with sauce mixture. Let meat stand for 5 minutes before serving.

BLACKBERRY PORK CHOPS

Pork chops in a blackberry sauce is easy enough for family and fancy enough for guests!

2 tbs chili powder
1 tsp cayenne pepper
1 tsp salt
1/2 tsp pepper
4 pork chops (about 1-inch bone-in or boneless loin pork chops)
2 tbs olive oil
2 tbs minced onion
1/2 cup zinfandel (or medium-dry red wine)
4 cups fresh blackberries (divided)
1/4 cup chicken stock
2 tbs sugar (more, if desired)
2 tbs unsalted butter

Steps:

  • Combine the chili powder, cayenne, salt and pepper. Rub into chops.
  • Heat oil in a large heavy skillet over medium-high heat. Add the chops and brown on both sides. Cover the pan and reduce heat to low and cook 5-7 minutes; remove chops from the pan cover and keep warm.
  • Saute the onion in the same pan over medium-high heat for about 2 minutes. Deglaze the pan with the wine and scrape up any browned bits.
  • Add 3 cups of the berries, stock and sugar. Bring to a boil then simmer for 3 minutes. Coarsely mash the berries then simmer the sauce over low heat until it's slightly thick-about 8 minutes.
  • Stir in the remaining berries and cook until heated through; remove from heat and stir in the butter. Season with salt and pepper to taste. Add the chops back to the pan and serve with the sauce.

4 pork loin chops, about 3/4 inch thick (about 1 1/4 pounds)
1 package (8 ounces) mixed dried fruit (1 1/2 cups)
3 tablespoons packed brown sugar
3 tablespoons orange marmalade
2 tablespoons cider vinegar
1/2 teaspoon ground ginger
1 can (5 1/2 ounces) apricot nectar
1 tablespoon cornstarch
2 tablespoons water

Steps:

  • Place pork in 3 1/2- or 6-quart slow cooker. Layer dried fruit evenly over pork. Mix brown sugar, marmalade, vinegar, ginger and nectar; pour over pork and fruit.
  • Cover and cook on low heat setting 6 to 7 hours or until pork is slightly pink when cut near bone.
  • Remove pork and fruit from cooker, using slotted spoon; cover and keep warm.
  • Skim fat from pork juices in cooker if desired. Pour juices into 1-quart saucepan. Mix cornstarch and water; stir into juices. Cook on high heat 4 to 6 minutes, stirring constantly, until thickened and bubbly. Serve sauce with pork and fruit.

2 medium apples, chopped
1 cup shredded cheese (optional)
1 cup raisins
1/2 cup butter, melted
1/2-1 cup orange juice

I love pork chops. I love fruit with pork chops. The most common fruit accompaniment for pork is apple, but I wanted to try something a little different. I considered apricots (I love them too), but thought they are too sweet. After reading a number of different recipes, I settled on blackberries. They are tart and, I thought, would pair well with a sweet port to make the sauce.

6 (4 ounce) boneless pork loin chops
½ teaspoon salt
½ teaspoon ground black pepper
2 teaspoons olive oil, divided
2 shallots, minced
2 teaspoons dried thyme leaves
¾ cup sweet port wine
¾ cup blackberry juice
¾ cup chicken broth
1 tablespoon balsamic vinegar
2 teaspoons cornstarch
2 teaspoons water
2 cups fresh blackberries

Steps:

  • Season the pork chops on both sides with salt and pepper. Heat 1 teaspoon of olive oil in a skillet over medium-high heat, and pan fry the chops until they are lightly browned and no longer pink in the center, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Set the chops aside.
  • Heat 1 more teaspoon of olive oil in the skillet, and cook and stir the shallots and thyme until the shallots start to become translucent, about 1 minute. Pour in the port wine, blackberry juice, chicken broth, and balsamic vinegar. Bring the mixture to a boil, scraping off and dissolving any brown flavor bits from the skillet into the sauce. Cook until reduced by a third, about 5 minutes. Mix cornstarch and water into a paste, and stir into the sauce. Cook until thickened, stirring constantly, about 1 minute. Reduce heat to low, and stir in the blackberries. Simmer until berries are hot.
  • Return the chops to the skillet, and turn to coat with sauce. Serve hot, topped with sauce.

4 pork chops, 1-inch thick
3/4 cup water
1/4 cup vinegar
1/4 cup brown sugar, firmly packed
1 teaspoon salt
1/4 teaspoon ginger
1/8 teaspoon pepper
1/4 cup dried apricot, sliced
1/4 cup dried prune, pitted and sliced
1 cup water, cold
1 tablespoon cornstarch

Steps:

  • Brown chops in skillet, over low heat, on both sides and pour off drippings.
  • Combine water, vinegar, brown sugar, and seasonings.
  • Mix well and pour over the chops.
  • Add the spricots and prunes and cover.
  • Continue cooking for about 40 minutes or until chops are tender.
  • Remove from skillet to a serving platter and set aside.
  • Add water slowly to cornstarch in small cup, stirring to blend.
  • Gradually add this to the skillet and stir until thickened and well combined; about 5 minutes.
  • Pour over the chops and serve.

I saw a recipe similar to this in an Uncle Ben's ad some years ago. I never kept the ad, just started making this recipe. Although the seasoning is different, don't let it scare you. Everyone that I have ever made these for loves them, including my husband who doesn't like rice. Try them once. I make it without the craisins but they were in the original recipe.

4 pork chops
2 tablespoons oil
1/2 cup finely chopped onion
1/8 cup craisins, optional
1 package Uncle Bens wild rice
2 cups apple juice
1 cup cheddar cheese
salt
cinnamon

Steps:

  • Heat oil in a large skillet.
  • Add pork chops.
  • Season pork chops with salt and cinnamon (just like salt& pepper) on each side.
  • Lightly brown the chops then remove to a platter.
  • Add onions to skillet and cook until tender.
  • Add apple juice, rice mix and seasoning packet from mix.
  • Bring to a boil.
  • Add pork chops and the juices from the platter back to the skillet.
  • If using the craisins, add here.
  • Cover and reduce heat to a simmer.
  • Cook for 20-25 minutes.
  • Sprinkle the top with cheddar cheese, cover and cook for 5 minutes more or until most of the juice is absorbed.
