- To the bottom of a almost-empty jam or jelly jar, add the other ingredients and shake to combine. Or, whisk together all the ingredients in a salad bowl, streaming in the EVOO. Toss with lettuce and vegetables and season with salt and pepper.
FETTUCCINI WITH GARDEN VEGETABLES AND GREENS

- Bring a large pot of water to boil over medium heat. When boiling, salt the water and add the pasta. Cook until just shy of al dente.
- Meanwhile, heat 2 tablespoons extra-virgin olive oil, 2 turns of the pan, in large skillet over medium heat. Add the onions, garlic and vegetables as you chop them, the zucchini, eggplant and red pepper. Season vegetables with salt and cover, cook until tender, about 10 to 12 minutes.
- Just before draining the pasta, add about 1 cup starchy cooking liquid to the vegetables. Drain the pasta and add to the vegetables, tossing to combine. Stir in the basil and the cheese and a little black pepper, to taste. Transfer the pasta to a serving bowl and top with the shredded lettuce. Serve with an extra sprinkle of cheese and drizzle with the remaining 1 tablespoon of extra-virgin olive oil.
GARLIC CHICK PEAS AND GREENS

- Heat a skillet over medium heat. Add oil and crushed garlic. Saute garlic in oil 2 minutes, then add greens. Turn and wilt greens in garlic oil and season with salt and pepper. Add 1 cup vegetable broth to the pan. Bring broth to a boil. Cover pan, reduce heat to simmer and cook greens 7 or 8 minutes in broth. Uncover the pan. Add chick peas to the pan and combine with the stewed greens. Adjust salt and pepper and serve.
GREENS AND ANDOUILLE

- Heat a pan with a few inches water over medium heat. Bring to a boil, season with salt, to taste, and add the bitter greens. Cook for a few minutes, then drain and reserve.
- Heat the extra-virgin olive oil in a large skillet over medium to medium-high heat and add the andouille. Brown the crumbles or the chopped cooked sausage, then add the onions and cook until softened, about 5 minutes. Stir in the stock and add the bitter greens. Heat through for a few minutes, then douse with vinegar, and season with sugar, salt, pepper and nutmeg, to taste. Transfer to a serving bowl and serve.
RICE WINE-STEEPED FISH
This is a very good and easy fish recipe. You can use just about any firm fleshed white fish but my favorite is orange roughy. This recipe is from Ken Hom's Quick and Easy Chinese Cooking. Cook time includes 5 minutes standing time.

Steps:
- Bring the rice wine, water, soy sauce, pepper, 1 tsp of the salt, and the sugar to a boil in a skillet.
- Reduce the liquid over high heat to about half its original volume, add the cornstarch mixture, and cook for 30 seconds.
- While the sauce is reducing, rub the fish fillets with the remaining 1 tsp salt and the toasted sesame oil and set aside.
- Add the fish fillets to the liquid and simmer gently for 2 minutes.
- Take it off the heat and let sit for another 5 minutes, covered.
- Transfer the fish fillets to a serving platter, pour the sauce over them, and sprinkle with the green onions.

- In a small saucepan over medium heat, bring all the ingredients to a boil. Simmer for about 10 minutes or until the wine is syrupy. Strain the wine reduction through a sieve. Set aside.
- Meanwhile, in a large skillet over medium heat, lightly brown the garlic in the oil. Add the bread and continue cooking, stirring frequently, until the bread begins to brown and turn crisp. Set aside on paper towels.
- In the same skillet over medium-high heat, brown the bacon, onion and garlic in the oil. Add and brown the green beans and broccoli. Add the kale and continue cooking for about 5 minutes or until it begins to wilt. Add oil if needed. Lightly season with salt and pepper as the reduction already contains pepper.
