Place ¾ cup sugar
3/4 cup water
750ml red wine
1 vanilla bean (split)
1 stick cinnamon
8 large figs
vanilla ice-cream

Steps:

  • Place 3/4 cup sugar and 3/4 cup water in a saucepan and stir over a low heat until sugar is dissolved. Add 750ml red wine, 1 vanilla bean (split) and 1 stick cinnamon and stir. Bring to the boil over medium heat and add 8 large figs. Reduce heat to low and simmer, covered, for 4-8 minutes (depending on ripeness) or until figs are just tender. Remove figs from pan and set aside. Increase heat to high and reduce wine mixture, uncovered, until thick and syrupy. Allow to cool, then remove vanilla bean and cinnamon stick. Place figs on serving plates, drizzle with syrup and serve with vanilla ice-cream.

10 large, slightly underripe or somewhat overripe Black Mission figs
1/4 cup plus 2 tablespoons granulated sugar
2/3 cup tawny port
1 1/2 teaspoons whole black peppercorns

Steps:

  • Remove the stems from the figs and cut them in half lengthwise.
  • Place a 10-inch stainless-steel or enamel-coated saucepan over medium-high heat until hot but not smoking. Sprinkle the sugar evenly over the surface. It will melt right away and begin to caramelize and smoke. Immediately place the figs, cut side down, onto the caramelizing sugar. Reduce the heat to low and let the figs cook for 2 to 3 minutes. Do not stir or toss or turn the figs. The figs will naturally release their own juices which will dissolve the sugar.
  • Carefully add the port to the saucepan. Keep the pan over low heat until the caramel melts completely and begins to coat the figs. Add the peppercorns, first enclosing them in a tea ball or cheesecloth, if desired. Use heat-resistant tongs to flip the figs over and cook for 2 to 3 minutes more. Transfer the figs to a platter, cut side up, and cover to keep warm.
  • Return the pan to medium heat for 3 to 5 minutes, using a heat-resistant rubber spatula to stir and occasionally scrape the bottom to pull up all the caramel and peppercorn goodness that may be stuck there. Remove and discard the peppercorn via the tea ball or cheesecloth or a slotted spoon. The port sauce should be deep purple, thick, and velvety. Remove the pan from the heat.
  • Drizzle the warm figs with the port sauce and serve immediately.

12 fresh figs
½ cup heavy whipping cream
½ cup sour cream
¼ cup honey
pinch of salt
1 ½ cups port
2 cinnamon sticks
2 peppercorns
2 whole cloves
1 tablespoon honey
2 teaspoons vanilla extract
1 tablespoon balsamic vinegar
1 lemon, zested
1 orange, zested
fresh mint

Steps:

  • Trim a small piece from the bottom of each fig so they stand up straight. Remove stems, and score a 1/4 inch "X" into the top of each fig. Set aside.
  • In a bowl, beat whipping cream together with sour cream until stiff peaks form. (This can be done either by hand, or with an electric mixer.) Gently fold in 1/4 cup of honey and a pinch of salt. Cover, and refrigerate.
  • Pour port into a small saucepan over medium high heat. Add cinnamon sticks, peppercorns, cloves, 1 tablespoon honey, vanilla extract, balsamic vinegar, and lemon and orange zests. Stir to dissolve honey and blend flavors. Bring mixture to a boil, reduce heat, and simmer for up to 30 minutes, or as time allows, being careful not to reduce liquid too much. Place figs upright in pan, cover, and cook for 5 minutes.
  • To serve, place a spoonful of honey cream in the center of each plate. Arrange 3 figs around the cream, and drizzle with a small amount of poaching liquid. Tuck a sprig of mint into the slit on the top of each fig. Serve immediately.

If you have neither, the splurge may well be worth it. Non-vegans can top their figs with crème fraiche or whipped cream. Any excess poaching liquid should be saved--it's lovely over almost anything. 750 ml dry white wine
1 lemon, peel of, cut in one continuous spiral if possible
2 tablespoons lemon juice, freshly squeezed
6 sprigs fresh thyme
2 bay leaves
4 white peppercorns
2 1/2 lbs figs, fresh

Steps:

  • In a large, non-aluminum saucepan, combine honey and wine. Bring to a boil. Lower heat and cook, stirring constantly, until honey is completely dissolved.
  • Add lemon peel, lemon juice, thyme, bay leaves, and peppercorns.
  • Place figs in wine syrup and poach over low heat, uncovered, for four minutes, turning figs every minute.
  • Remove figs with a slotted spoon and place in a ceramic bowl.
  • Reduce poaching liquid to about 1-1/2 cups. Spoon over figs and chill.
  • Serve figs with some of the poaching liquid in individual bowls.

This quick, no-bake, gluten-free dessert is refreshing after a heavy meal or as a summer treat. Serve it with anything from whipped cream or mascarpone to cheesecakes, crepes, and pavlovas.

2 cups water
1/4 cup honey
2 tablespoons brown or granulated sugar
1/2 vanilla bean (, split lengthwise and seeded (optional))
1 cinnamon stick ((optional))
8 figs

Steps:

  • In a small or medium saucepan that's large enough to hold the figs, heat water, honey, and sugar (and vanilla and cinnamon, if using) on medium-high. Cook until sugar dissolves. Reduce heat to medium-low and add figs. Let simmer until tender but not mushy, 5-10 minutes, turning them occasionally so that each side is poached evenly. Using a slotted spoon, transfer figs to a bowl. Let the water-honey liquid continue simmering on medium-low heat until liquid reduces and thickens to a syrup consistency, about 15 more minutes. Let cool.
  • Once the figs have cooled slightly, remove stems and cut in half.
  • Keep sauce and figs in the refrigerator until ready to use. Serve at room temperature.
  • Arrange figs and serve as desired. Figs can be served either a dollop of whipped cream, mascarpone, crème fraiche, or yogurt, or alongside desserts such as cake, cheesecake, or crepes. Drizzle with syrup.

12 fresh figs
1/4 cup tawny port
1/4 cup full-bodied red wine, such as Pinot Noir
3 tablespoons honey
1 orange zest, 3 inches, plus 1/4 cup fresh orange juice
1 stick cinnamon, 3 inches
1 vanilla bean, seeds scraped
2 whole green cardamom pods, split open
2 whole cloves
1/2 teaspoon whole black peppercorns

Steps:

  • Preheat oven to 325 degrees. Put figs in an 8-inch square ceramic or glass baking dish. Pour port, wine, honey, and orange juice over figs. Submerge remaining ingredients in the liquid around figs. Cover dish with foil, and bake 1 hour.
  • Remove foil; continue to bake 45 minutes more, basting 2 or 3 times with accumulated juices. Let cool completely, turning figs occasionally to keep moist.
  • Transfer figs to a plate. Pour liquid through a fine sieve into a bowl; reserve for fig vinaigrette. Discard solids. Figs can be refrigerated in an airtight container up to 3 days.

  • Combine wine, sugar, lemon zest, 1 1/2 cups water, thyme, and vanilla bean in a non-reactive medium size saucepan and heat to simmer, let simmer gently for 5 minutes.
  • Add figs to the syrup and continue to simmer until the figs are tender about 5 minutes. Remove from the heat and let figs cool about 10 minutes in the syrup. Remove and discard the thyme.
  • Divide the figs among four glasses or bowls and spoon the warm syrup over the fruits. Garnish with Creme Fraiche and fresh thyme sprigs.

1 package (10 ounces) dried Calimyrna figs, (1 1/2 cups, packed)
1 bottle (3 cups) red wine
1/3 cup sugar
Zest of 1 orange

Steps:

  • In a medium saucepan, combine all ingredients and bring to a boil, stirring occasionally. Reduce heat; simmer, covered, until figs are easily pierced with the tip of a sharp paring knife, 45 minutes to 1 hour.
  • With a slotted spoon, transfer figs to a bowl; simmer remaining liquid until reduced to about 1/3 cup, 3 to 5 minutes (liquid should look syrupy and coat the back of a spoon). Pour through a fine-mesh sieve over figs, and let cool slightly. (If refrigerating, bring to room temperature before serving.) Serve figs and syrup over ice cream or whipped ricotta cheese, if desired.

2 pounds ripe but firm fresh figs
Zest of 1 lemon, peeled in strips about 1/2 inch wide
2 bay leaves, preferably fresh
Recommended Equipment
A heavy-bottomed 9-inch sauté pan, 3 inches deep

Steps:

  • Spread the sugar in the bottom of the pan, and pour in 1/2 cup water and the lemon juice. Set the figs in the pan, stem up, in one layer. Nestle the strips of lemon zest and the bay leaves in between the figs.
  • Set the pan over low heat, and cook slowly until the sugar melts and the figs release their juices. As the juices rise in the pan, gradually raise the heat to keep them bubbling (and "galloping"). When the figs are soft and the liquid level comes halfway up their sides, in 30 minutes or more, turn off the heat, and let the figs rest in the pan for an hour or longer, to reabsorb some of the juices.
  • Slowly heat the figs and juices until they're bubbling again, and cook for 30 minutes or so, until the figs are very soft (but still intact) and the juices have become thick and syrupy.
  • Let the figs cool before serving. Arrange them in a serving dish if you like, with the syrup all around. Enjoy the fruit and syrup on their own, or atop vanilla ice cream, or with a soft, creamy cheese such as Taleggio or Robiola.
