WILTED GARLIC SPINACH

I saw this recipe made on an Italian cooking show, it was all in Italian, but the recipe was so easy to follow I didn't need to know the language. You can use either fresh spinach, or frozen, but if you do, make sure the excess moisture has been squeezed out. I served it with roasted chicken.

1 kg fresh spinach, washed and trimmed
4 tablespoons olive oil
4 -6 cloves garlic, more or less to your garlic preference
1/4 teaspoon nutmeg
salt
pepper

Steps:

  • Heat the olive oil in a pan.
  • Add the garlic, either chopped or smashed.
  • Cook the garlic for about 3 minutes.
  • Add spinach and with tongs, turn constantly until wilted.
  • Sprinkle with nutmeg, salt and pepper.
  • Enjoy!

Get John's easy chicken saltimbocca recipe with a side of wilted garlic spinach - the dish he made for Rach for Valentine's Day.

Number Of Ingredients 23

6 boneless
skinless chicken breast cutlets
pounded ⅛-inch-thick
Salt and white or black pepper
12 slices good prosciutto
18 large sage leaves
Long wooden toothpicks
½ cup flour
4 tablespoons extra-virgin olive oil
4 tablespoons butter
¼ to ⅓ cup good Marsala or white wine
1 clove garlic
crushed
¼ to ⅓ cup chicken stock
Extra-virgin olive oil (EVOO)
4 cloves garlic
grated or chopped
1 pound spinach
washed and stemmed
Salt and black or white pepper
Nutmeg
to taste
1 lemon

Steps:

  • Season chicken with salt and pepper
  • Layer 2 to 3 slices of prosciutto on top of each chicken cutlet and place 2 large sage leaves on top of the prosciutto
  • Use toothpicks to thread the sage in place on top of the prosciutto
  • Place the flour on a dish or plate and very lightly dredge each piece of chicken, prosciutto and sage
  • Heat approximately 1 tablespoon each of EVOO and butter (enough to coat the bottom) in a large nonstick skillet over moderate heat
  • Fry cutlets 2 at a time so not to overcrowd the pan, prosciutto-side down, until crisp, 3 or 4 minutes
  • Flip cutlets and cook on the other side for a minute or 2
  • Transfer to a large platter
  • Pour out the excess oil, wipe out pan and repeat the frying process until all chicken is cooked
  • Carefully remove toothpicks and gently cover chicken with foil
  • Return the pan to the heat
  • Add Marsala or wine, 1 clove crushed garlic, and reduce by half
  • Add stock and reduce by half again
  • Pour over chicken and replace foil
  • For the spinach, return pan to heat
  • Add EVOO, 2 turns of the pan, and grated garlic
  • When garlic starts to bubble, wilt in the spinach
  • Season spinach with salt, pepper and nutmeg
  • Squeeze juice of a lemon over spinach and remove from heat
  • To plate, put a bed of spinach on one side of the plate and place the saltimbocca across the spinach toward the other side of the plate

2 tablespoons balsamic vinegar
1 teaspoon lemon juice
1 tablespoon bottled minced garlic
1 pinch sea salt
1 pinch ground black pepper
4 ounces baby spinach
1 ½ tablespoons pine nuts

Steps:

  • In a bowl, mix the olive oil, vinegar, lemon juice, garlic, salt, and pepper.
  • Place the spinach over boiling water in a pot fitted with a steamer basket, and steam 2 to 3 minutes, until wilted but not soggy.
  • Toss spinach in a bowl with the dressing, and sprinkle with pine nuts to serve.

1 teaspoon sugar
2 tablespoons chicken broth
1 tablespoon reduced-sodium soy sauce
1/2 teaspoon sesame oil
6 garlic cloves, minced
1 tablespoon canola oil
3/4 pound fresh spinach, trimmed

Steps:

  • In a small bowl, combine the cornstarch, sugar, broth, soy sauce and sesame oil until smooth; set aside. , In a small skillet, saute the garlic in canola oil for 1 minute. Stir broth mixture and add to skillet. Cook and stir over medium heat until slightly thickened. Add spinach; cook and stir for 2 minutes or just until spinach is wilted and coated with sauce. Serve with a slotted spoon.

1 1/2 lbs chicken breasts, cutlets
1 lb spinach, coarsely chopped (washed 3 times, stems removed)
2 teaspoons poultry seasoning
1/2 cup all-purpose flour
2 large eggs, plus
1 egg yolk
4 tablespoons extra virgin olive oil
3 tablespoons unsalted butter
3 garlic cloves (1 crushed, 2 chopped)
1/2 cup dry white wine
1/4 teaspoon nutmeg, grated
flat leaf parsley, finely chopped (about a handful)
salt and black pepper
1 dash milk or 1 dash half-and-half

Steps:

  • season chicken cutlets with salt, pepper, and poultry seasoning.
  • dredge the chicken in flour.
  • in a small bowl, beat the eggs and egg yolk with milk or half-and-half.
  • heat a large skillet over medium-high heat.
  • add 2 tablespoons of EVOO and 2 tablespoons of butter to skillet.
  • when heated add the crushed garlic, fry until aromatic.
  • coat the chicken in the egg and milk mixture and fry on both sides for about 7-8 minutes.
  • transfer chicken to plate and keep warm.
  • add wine to the skillet, reduce for 1 minute.
  • add the remaining tablespoon of butter, and parsley to the pan.
  • pour sauce over chicken.
  • bring skillet back to heat and add remaining 2 tablespoons of EVOO.
  • add garlic and saute for about 1 minute.
  • add the spinach, toss to coat with the oil, keep tossing until spinach becomes wilted.
  • add nutmeg, salt and pepper to taste.
  • server chicken along side the spinach.
  • pass crusty bread around.
