6 cups torn leaf lettuce
3 tablespoons finely chopped onion
3 bacon strips, diced
2 tablespoons red wine vinegar
2-1/4 teaspoons sugar
1-1/2 teaspoons water
Salt and pepper to taste
1 hard-boiled large egg, sliced

Steps:

  • In a large salad bowl, combine the lettuce and onion; set aside., Place bacon on a microwave-safe plate lined with paper towels. Cover with another paper towel; microwave on high for 5-7 minutes or until crisp. Using a slotted spoon, remove bacon to paper towels., In a small microwave-safe dish, combine 1-1/2 teaspoons bacon drippings, vinegar, sugar and water. Microwave, uncovered, on high for 45 seconds or until sugar is dissolved; stir until smooth. , Pour over lettuce; sprinkle with salt and pepper. Add bacon and egg; toss to coat.

6 eggs
1 pound bacon
2 bunches fresh spinach, rinsed and dried
4 green onions, thinly sliced
2 eggs
¼ cup white sugar
¼ cup white vinegar
¼ cup red wine vinegar

Steps:

  • Place 6 eggs in a medium saucepan with enough cold water to cover. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel, and chop.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside, reserving approximately 1/2 cup of drippings in the skillet.
  • In a large bowl, toss together the spinach and green onions.
  • Heat the reserved drippings over low heat. In a small bowl, whisk together the 2 remaining eggs, sugar, white vinegar, and red wine vinegar. Add to warm grease, and whisk for about a minute, until thickened. Pour at once over spinach, add crumbled bacon, and toss to coat. Garnish with chopped egg.

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced
3 ounces red onion (1 small), very thinly sliced

Steps:

  • Remove the stems from the spinach and wash, drain and pat dry thoroughly. Place into a large mixing bowl and set aside.
  • Place the eggs into an electric kettle and cover with cold water by at least 1-inch. Turn the kettle on. Once the water comes to a boil, the kettle will turn itself off. Leave the eggs in the water for 15 minutes. Remove and peel off the shell. Slice each egg into 8 pieces and set aside.
  • While the eggs are cooking, fry the bacon and remove to a paper towel to drain, reserving 3 tablespoons of the rendered fat. Crumble the bacon and set aside.
  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

Dash ground nutmeg
Dash crushed red pepper flakes
1/4 cup olive oil
6 ounces fresh baby spinach (about 8 cups)
1/3 cup thinly sliced red onion
4 hard-boiled large eggs, chopped

  • In a skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels. 3 tablespoons apple cider vinegar
1/2 teaspoon sugar
1/4 teaspoon black pepper
1 pinch salt
8 slices bacon, coarsely chopped
1/2 medium red onion, sliced
1 clove garlic, minced
4 hard-boiled eggs, thickly sliced or quartered

Steps:

  • Place the spinach in a large bowl. Combine the vinegar, sugar, pepper, and salt in a bowl, mixing until the sugar and salt have dissolved. Set aside. Heat a skillet over medium-high heat. Add the chopped bacon and cook, stirring frequently, until browned and crisp and the fat has rendered. Remove the bacon from the skillet with a slotted spoon and let drain on paper toweling. Drain off all but 3 tablespoons of the bacon grease. Add the onion to the skillet and cook for 1 minute. Add the garlic to the skillet and cook, stirring constantly, for 15 seconds. Stir the vinegar into the skillet. Use a spatula or wooden spoon to scrape up any browned bits from the bottom of the skillet. Stir constantly, for 1 minute. Pour the hot vinegar dressing over the spinach and toss to coat the spinach in the dressing so it begins to wilt. Divide the spinach between individual salad bowls. Sprinkle with the chopped bacon and sliced hard-boiled egg. Serve immediately.

One 5-ounce package baby spinach
4 large eggs
8 slices bacon, cut crosswise into 1/4-inch-thick pieces
One 3.5-ounce package cremini mushrooms, sliced
1 garlic clove, minced
Kosher salt and freshly ground black pepper
3 tablespoons apple cider vinegar
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 small red onion, thinly sliced

Steps:

  • Place the spinach in a large bowl and leave at room temperature. Bring a medium pot of water to a boil over medium-high heat. Use a slotted spoon to gently lower the eggs into the water. Boil until both the whites and yolks are set (hard-boiled), about 10 minutes. Transfer to a small bowl filled with ice water and cool completely. Once cool, peel the eggs and cut each into quarters.
  • Meanwhile, put the bacon in a large skillet and set over medium heat. Cook, stirring occasionally, until golden brown and crisp, 6 to 8 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate to drain. Remove half of the bacon fat to a small bowl and reserve.
  • Return the skillet and remaining bacon fat to medium heat. Add the mushrooms, garlic, 1/4 teaspoon of salt and a few grinds of black pepper to the same skillet. Cook, stirring occasionally, until tender, 3 to 4 minutes. Pour in the reserved bacon fat, vinegar, mustard and honey and whisk until smooth and emulsified. Taste and season with more salt and pepper.
  • Pour the hot bacon dressing over the spinach and toss until evenly coated and slightly wilted. Transfer to a platter and top with the eggs, red onion and reserved bacon.

1 teaspoon Dijon mustard
1 teaspoon sugar
1 garlic clove, minced

1/2 lb fresh spinach, stemmed, rinsed, and patted dry
1 ripe avocado, peeled, seeded, and diced
1/2 red onion, thinly sliced
8 slices lean streaky bacon
1/2 cup extra virgin olive oil
2 hard-boiled eggs, coarsely chopped

Steps:

  • In a small bowl, combine the vinegar and mustard, and whisk until well blended. Add the sugar, garlic, and salt and pepper; stir well and set aside.
  • In a large salad bowl, combine the spinach, avocado, and onion; set aside.
  • In a large skillet, fry the bacon over moderate heat until crisp. Drain on paper towels, and crumble coarsely. Pour off all but about 2 tablespoons grease from skillet, add the oil plus the vinegar-mustard mixture, and stir until dressing is hot. Pour dressing over spinach mixture and toss well. Add the bacon and eggs, toss well again, and taste for seasoning. Serve salad immediately.
