ROASTED CABBAGE WITH BALSAMIC VINEGAR
It's easy to liven up your favorite vegetables with a tangy dressing or a splash of vinegar or fruit juice. Here, balsamic vinegar is tossed with roasted cabbage.

- Preheat oven to 450 degrees. Cut cabbage into 12 wedges; remove thick core and discard. Pull wedges apart; toss on a large rimmed baking sheet with oil, 2 teaspoons salt, and 1/4 teaspoon pepper.
- Cover sheet tightly with foil. Bake until cabbage is crisp-tender, about 20 minutes.
- Remove foil; continue cooking, tossing occasionally, until tender and browned in spots, 20 to 25 minutes more. Toss with vinegar.

WILTED CABBAGE SALAD WITH BACON

- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, crumble and set aside. Reserve bacon fat.
- Add the onion and garlic and fry in the bacon fat until browned.
- Add the vinegar. Bring to a simmer and add the cabbage and bacon. Saute briefly and serve warm.

- Heat the oil in a large pan. Add the onions and fry, stirring every now and then, for about 10 mins, until they start to caramelise. Stir in the cloves, then add the cabbage and continue cooking, stirring more frequently this time, until the cabbage starts to soften.
- Pour in the stock, add the vinegar and sugar, then cover and cook for 10 mins.
- Stir in the cranberries and cook for 10 mins more. Cool and keep in the fridge for up to 4 days, or freeze for 1 month. Thaw in the fridge overnight. Reheat until very hot before serving.

- Shred the cabbage as thinly as you can. A food process or mandoline makes this easier.
- Heat a skillet and cook the bacon until crisp.
- Pour off most of the bacon fat, then add the vinegar and oil, stirring to get up any bits of bacon. Pour over the cabbage and toss well, then add salt to taste.
- Serve warm or at room temperature.

- Brown the bacon over medium-high heat until well caramelized and crispy. Using a slotted spoon, drain the cooked bacon off excess bacon grease and transfer to a plate.

- Chop the cabbage and set it aside. Cut the bacon into cubes and slice the onions. Finely chop the garlic cloves. Keep the garlic separated from the bacon and onions.
- Heat the oil (only if using lean bacon) in a large skillet. Saute the bacon and the onions until the fat has rendered and the onion slices are golden. Pour out most of the rendered bacon fat, keeping only about 1-2 tablespoons of the fat.
