WILTED DANDELION SALAD WITH FETA CHEESE
A very inexpensive salad. Dandelion leaves, flowers, and roots are all edible if you have an organic yard or store buy! Dandelion is a bitter green. The cheese helps smooth out the bitterness, the honey gives it sweetness and receives saltiness from the bacon, cheese and olives giving this salad an all round full flavor for your taste buds.hese greens are nutritious--high in vitamin A, vitamin C and iron. Also low in calories, fat and cholesterol. As with any green, the younger the plant, the more tender it is. Steps:
- Fry bacon in skillet until crisp, drain on paper towels, crumble.
- Pour off bacon fat leaving behind 1/3 cup in the skillet.
- Put vinegar, mustard and honey in the skillet mixing with a whisk.
- Add the olive oil.
- Add salt and pepper, keep this dressing warm.
- Toss the greens with bacon, olives, onions and cheese in a bowl.
- Pour the warm dressing over greens and serve.
- Garnish with flowers.
- Yield: 4-6 servings.

WILTED GREENS WITH BACON
Steps:
- Trim and chop 2 bunches dandelion greens, watercress or baby kale. Cook 3 slices chopped bacon until crisp; transfer to paper towels using a slotted spoon. Add 1 each sliced garlic clove and shallot to the drippings; cook, stirring, 1 minute. Add 3 tablespoons cider vinegar and 1 tablespoon sugar; stir until dissolved. Add the greens in batches, tossing to wilt. Season with salt and pepper; top with the bacon.

- In a large skillet, heat oil over medium high heat. Stir in onions and cook for 1 minute. Add the garlic and cook for 30 seconds. Stir in the vinegar and raisins and cook for 2 minutes. Remove the skillet from the heat and add the greens and toss to coat. Immediately transfer the greens to a large bowl and add the orange and bacon. Season with salt and pepper and serve immediately.

- Cut greens into 1 1/2-inch lengths and transfer to a large bowl.
- Cook bacon in a large heavy skillet until golden and crisp, then transfer to a cutting board, reserving fat in skillet. Finely chop bacon.
- Whisk together shallot, vinegar, salt, and pepper in a small bowl, then whisk in 3 tablespoons hot bacon fat. Toss greens with enough warm dressing to coat and sprinkle with bacon. Serve immediately.

Steps:
- Washing the greens very carefully, discarding the roots and tough stems. Dry between two towels. Tear the greens into small pieces.
- Fry the bacon in a large skillet until the bacon is very crisp. Remove bacon to paper towel.
- Add the mustard, sugar, vinegar, salt and pepper to the fat in the pan. Bring to boil and put in dry greens.
- Cover and cook the greens for about 3 minutes, until just hot and wilted.
- Transfer to a warm vegetable dish and crumble bacon all over the top.

- Using a cookie sheet, spread the raw pecans into a single layer. Toast the nuts in the oven for 5 minutes, or until fragrant. Keep an eye on them because they can easily burn! Roughly chop and reserve.
- Take the dandelion greens and cut the stems off, about 2 inches at the bottom. Discard the stems. Take the remaining leaves and chop into 3 inch pieces. Place in a large mixing bowl.
- In a medium saute pan, heat the olive oil over medium heat. Add the chopped shallot, sugar, salt, and pepper to the pan. While stirring occasionally, cook until lightly caramelized (watch for burning), about 4-5 minutes.
