There's nothing better than warm weather and a good meal. This fresh and easy Cucumber Salad is a perfect addition to any cookout. From seafood to grilled meat, these paper-thin slices of cucumber are tossed in a light vinegar mixture. Let them marinate for a few hours to heighten the flavor profile. 2 medium cucumbers, thinly sliced
1/3 cup cider or white vinegar
1/3 cup water
2 tablespoons sugar
1/2 teaspoon salt
1/8 teaspoon pepper
Chopped fresh dill weed or parsley, if desired

Steps:

  • Place cucumbers in small glass or plastic bowl.
  • In tightly covered container, shake remaining ingredients except dill weed. Pour over cucumbers. Cover and refrigerate at least 3 hours to blend flavors.
  • Drain cucumbers. Sprinkle with dill weed. Store covered in refrigerator.

Cool, delicious cucumber salad. For a pretty salad, peel only half of each cucumber, leaving strips of skin on each. Don't make the vinegar solution first and then chop the cucumber because it's important that the vinegar solution be hot to ensure proper flavoring.

4 cucumbers, thinly sliced
1 small white onion, thinly sliced
1 cup white vinegar
½ cup water
¾ cup white sugar
1 tablespoon dried dill, or to taste

Steps:

  • Toss together the cucumbers and onion in a large bowl. Combine the vinegar, water and sugar in a saucepan over medium-high heat. Bring to a boil, and pour over the cucumber and onions. Stir in dill, cover, and refrigerate until cold. This can also be eaten at room temperature, but be sure to allow the cucumbers to marinate for at least 1 hour.

Comfort food direct from my paternal grandmother's hands. One of the few things even my mother used to make. Can also be made with wilted lettuce in the same manner (my personal favorite!)

3 cucumbers, peeled and sliced thin
3 tablespoons salt
1/2 cup white vinegar
1/2 cup sour cream

Steps:

  • Prepare cucumbers in a bowl and sprinkle with salt, mixing thoroughly.
  • Cover and allow to sit on counter for 2-3 hours.
  • Rinse cucumbers throughly with water and drain.
  • Toss cucumbers with vinegar and gently drain.
  • Fold in sour cream and top with pepper to taste.
  • Stir in pepper before serving.
  • To make with lettuce, break apart one head of iceberg lettuce and separate the leaves, salting as above and allowing to sit until wilted then follow remaining steps.

4 seedless cucumbers (about 3 1/2 pounds), the skin scored lengthwise with a fork and the cucumbers sliced very thin
4 teaspoons salt
1/4 cup fresh lime juice
a 4-inch-long fresh hot red or green chili, seeded and minced (wear rubber gloves)

Steps:

  • In a large bowl toss the cucumbers with the salt and in a colander let them drain, covered with a plate and weighted with a 1-pound can, for 30 minutes. In the bowl toss the cucumbers with the lime juice, the chili, and salt to taste. The salad may be prepared 4 hours in advance and kept covered and chilled. Serve the salad chilled or at room temperature.

3 large cucumbers
1 clove garlic
4 Tbsp vinegr
2 Tbsp sugar
2 Tbsp water
salt to cover
water to coer

Steps:

  • 1. peel cucumber and cut into round slices. Peel and cut garlic in half and put under cucumber slices. Salt cucumbers and cover with water. Let stand 2 to 4 hours.
  • 2. In a separate bowl add: 2 tblspns. of sugar, 4 tblspns. of vinegar, and 2 tblspns. of water. Mix until sugar is dissolved.
  • 3. Remove cucumbers from salted water and strain. Put in a container and add the sugar, vinegar and water. Let marinate or eat it right away. Enjoy!
