1/2 cup finely chopped onion
2 tablespoons butter
1 tablespoon all-purpose flour
2 cans (14-1/2 ounces each) chicken broth
1 can (15 ounces) solid-pack pumpkin
1 teaspoon brown sugar
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
1 cup heavy whipping cream

Steps:

  • In a large saucepan, saute onion in butter until tender. Remove from the heat; stir in flour until smooth. Gradually stir in the broth, pumpkin, brown sugar, salt, pepper and nutmeg; bring to a boil. Reduce heat and simmer for 5 minutes. Add cream; cook until heated through, about 2 minutes.

2 tbsp Unsalted butter
1 cup Spanish onions (chopped)
1 lb Pumpkin
1 lb Sweet Potato
2 cups Chicken broth
2 cups Milk
1/2 tsp Salt
1/2 tsp Black Pepper
1 tsp Ginger (grated)
1 Apple (chopped)
1 tbsp Honey
1 tbsp Maple syrup
1/4 tsp Ground cinnamon
1/8 tsp Ground mace
1/8 tsp Ground nutmeg
3 tbsp Sour Cream
2 tbsp Parsley (chopped)

Steps:

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • Slice pumpkin in half and remove seeds. Stab fork into each side of the pumpkin's skin 3-4 times. These holes allow steam to escape when roasting in the oven.
  • Slather sweet potatoes and pumpkin halves in vegetable oil. Place pumpkin flesh sided own on the parchment paper.
  • Roast pumpkin and sweet potato for 45-50 minutes. You'll known when they are finished baking when you insert a pairing knife into the vegetable flesh and it easily slides in and out.
  • Let roast pumpkin and sweet potatoes cool. Once at room temperature scoop the pumpkin away from the skin into a measuring cup. Slice roasted sweet potatoes in half and similarly scoop out the flesh to be measured.
  • Melt butter over medium heat in a large dutch oven. Add the onions and cook, stirring occasionally, until soft, approximately 5 minutes.
  • Add roasted sweet potato and pumpkin to the onions and stir in chicken broth, salt and pepper. Simmer for 3-5 minutes while stirring.
  • Add sliced apple, honey, ginger, maple syrup and spices.
  • Using an immersion blender, puree the soup until thick and creamy.
  • Slowly stir in room temperature milk then simmer while stirring for 2-3 minutes until desired consistency is reached.
  • Use a ladle to pour Roasted Pumpkin and Sweet Potato Soup into bowls. Top with a dollop of sour cream and chopped parsley.

Roasted Corn and Pumpkin Soup with Jumbo Lump Crabmeat and Crisp Mache image

2 ears fresh corn
1/2 pound sliced shallots
1/2 gallon chicken stock
1 pumpkin
2 teaspoons salt
2 tablespoons olive oil
1 clove garlic
2 ounces crabmeat
1 tablespoon sour cream
1 teaspoon black pepper
1 bunch Mache
1 teaspoon cider vinegar
Pumpkin seed oil, to taste

Steps:

  • Shuck corn and cut from the cob. Separate into 2 piles.
  • Heat a saute pan and add 1/2 of the sliced shallots, 1 pile of corn and salt, and pan roast until golden brown. Add 1/2 quart heavy cream. Puree and pass through a sieve, getting corn puree.
  • Saute the second pile of corn in the same manner. Add 1/2 gallon of chicken stock. Put corn stock into a blender and pass through a sieve. Put on low and simmer to reduce.
  • Cut pumpkin in quarters. Rub with oil and garlic. Roast in a preheated 350 degree oven until tender.
  • Remove pumpkin pulp from outer skin and puree.
  • Add roasted pumpkin puree and corn puree to corn stock. Season with salt and pepper.
  • Mix crabmeat with sour cream and divide equal amounts between 4 bowls. Toss mache with cider vinegar and place on top of crabmeat. Lace with soup and garnish with pumpkin seed oil.
