I found this recipe quite a few years ago in a Southern Living Cookbook. It's a good way to use up some of the leftover turkey from the holidays.

Number Of Ingredients 11

1 turkey carcass
4 quarts water
1 cup butter
1 cup flour
3 onions, chopped
2 large carrots, diced
2 celery ribs, diced
1 cup long grain rice, raw
2 teaspoons salt
3/4 teaspoon pepper
2 cups half-and-half

Steps:

  • Place turkey carcass and water in Dutch oven; bring to a boil. Cover, reduce heat, simmer 1 hour.
  • Remove carcass and pick off meat. Broth should measure 3 quarts.
  • Heat butter in Dutch oven; add flour and cook over medium heat stirring constantly 5 minutes.
  • Stir onion, carrot and celery into roux; cook over medium heat 10 minutes, stirring often.
  • Add broth, turkey, rice, salt and pepper; bring to a boil. Cover, reduce heat. Simmer 20 minutes.
  • Add half and half. Heat through.

1 turkey carcass
4 quarts of water
1 large onion, chopped fine
3 stalks celery, chopped
3 large carrots, chopped fine
1 cup uncooked brown whole grain rice
1 cup butter
1 cup milk
1 cup half and half
3 cups diced cooked turkey
salt and pepper to taste

Steps:

  • In a large stock pot cook turkey carcass with water to make 3 quarts stock. Remove bones; set meat aside. Strain stock; set aside.
  • In a large saucepan, combine the onions, celery, carrots, rice and 1 qt. of stock. Cook for 20 minutes; set aside.
  • In a saucepan, melt butter. Blend in flour and heat until bubbly. Add half and half, milk and remaining 2 quarts stock to butter and flour mixture. Cook and stir until bubbly. Stir in reserved vegetable mixture, turkey and salt and pepper. Heat until warmed through. Serve. Also freezes well.

1 leftover turkey carcass (from a 14-pound turkey)
3 quarts water
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1/2 cup uncooked long grain rice
1 medium onion, finely chopped
4 celery ribs, finely chopped
2 medium carrots, grated
1 bay leaf
Dash poultry seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon pepper
Salt, optional

Steps:

  • In a stockpot, place turkey carcass, water and broth. Bring to a boil. Reduce heat; cover and simmer 4-5 hours. , Remove carcass from stock. Remove any meat; dice. Return to stock along with rice, onion, celery, carrots, bay leaf and poultry seasoning. Add remaining seasonings to taste. Cover; simmer over medium-low heat until rice is cooked. Discard bay leaf.
