WILD GAME CHILI

2 tablespoons olive oil (or corn oil)
½ pound buffalo meat (diced in ¾ inch cubes)
½ pound elk (or venison, diced in ¾ inch cubes)
½ pound wild boar ( or pork, diced in ¾ inch cubes)
1 onion (medium diced)
2 cloves garlic (chopped)
1 tablespoon kosher salt
½ tablespoon black pepper
2 tablespoons pasilla chile powder
2 tablespoons New Mexican chili powder
½ cup coffee (brewed)
1 bay leaf
9 ounces tomato juice
18 ounces diced tomatoes (canned )
1½ cups beef stock (or one 12-ounce can of beer)
4 cups water
sour cream (for garnish)
gGreen onions (for garnish)

Steps:

  • Mix all the dry spices together and use half the mixture to season the meat.
  • Heat the oil in large stock or soup pot until hot but not smoking and brown the meat for 10 - 15 minutes in the pan.
  • Add the onions and garlic and saute for 3 to 4 minutes.
  • Add the coffee, tomato juice, bay leaves, diced tomatoes, stock, water and the remaining spice mixture. Simmer for 2 to 3 hours until the meat is tender. You can adjust the consistency with more stock and check the seasonings.
  • Garnish with sour cream and green onions before serving.

This is for my daughters hsm party. From the Disney Family Editors: This recipe can be too spicy for many younger children. If your family's tastes call for milder dishes, substitute regular Italian sausage for the spicy kind in the ingredients, and leave out the chili pepper, hot sauce, and cayenne.

2 lbs ground chuck
1 lb bulk Italian sausage
3 (15 ounce) cans chili beans, drained
1 (15 ounce) can chili beans, in spicy sauce
2 (28 ounce) cans diced tomatoes with juice
1 (6 ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 green chili peppers, seeded and chopped
1 tablespoon bacon bits
4 beef bouillon cubes
1/2 cup beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons hot pepper sauce (e.g. Tabasco(TM)
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
1 (10 1/2 ounce) bag corn chips such as Fritos corn chips (R)
1 (8 ounce) package shredded cheddar cheese

Steps:

  • Directions.
  • Heat a large stock pot over medium-high heat. Crumble the ground chuck and sausage into the hot pan, and cook until evenly browned. Drain off excess grease.
  • Pour in the chili beans, spicy chili beans, diced tomatoes and tomato paste. Add the onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon, and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot pepper sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir to blend, then cover and simmer over low heat for at least 2 hours, stirring occasionally.
  • After 2 hours, taste, and adjust salt, pepper, and chili powder if necessary. The longer the chili simmers, the better it will taste. Remove from heat and serve, or refrigerate, and serve the next day.
  • To serve, ladle into bowls, and top with corn chips and shredded Cheddar cheese.

2 tablespoons olive oil
2 pounds ground beef
2 stalks celery, chopped
1 onion, chopped
1 green bell pepper, chopped
3 (14 ounce) cans stewed tomatoes
1 (10 ounce) can diced tomatoes with green chiles (such as RO*TEL)
1 (14 ounce) can tomato sauce
1 cup water
2 (1.25 ounce) packages chili seasoning (such as McCormick® Mild Chili Seasoning Mix)
1 (14 ounce) can kidney beans, undrained
1 (14 ounce) can pinto beans, undrained
salt and ground black pepper to taste
1 tablespoon white vinegar, or more to taste

Steps:

  • Heat olive oil in a large pot over medium-high heat. Press ground beef into the hot oil to form one large patty; let the bottom brown, 8 to 10 minutes. Stir and break the ground beef into crumbles and cook until no longer pink, about 5 more minutes.
  • Stir celery, onion, and green bell pepper into ground beef and cook until onion is translucent, about 5 minutes; pour in stewed tomatoes, diced tomatoes with green chiles, tomato sauce, and water. Break apart large chunks of stewed tomatoes. Stir in chili seasoning.
  • Mix kidney beans and pinto beans into chili, season with salt and black pepper, and bring to a boil. Reduce heat to low and simmer for 1 hour. Mix vinegar into chili.
