PACE WILD WEST PICANTE BURGERS
Fire up the grill and tempt family and guests with these robustly flavored burgers spiked with Pace Picante sauce. Soooo tasty!! These burgers are very good served with coleslaw or fresh cut veggies and ranch dressing for dipping and corn -on-the-cob. For dessert, sliced watermelon or fresh fruit salad would be a delight.

Steps:
- Thoroughly mix the beef and picante sauce. Shape the beef mixture firmly into 4 patties, 1/2 inch thick.
- Heat the grill to medium. Grill the patties for 10 minutes or until they are cooked through, turning them once halfway through cooking and brushing often with additional picante sauce.
- Serve on rolls with additional picante sauce.

Steps:
- 1.Combine Sesame-Soy Mayonnaise ingredients in small bowl; refrigerate until ready to use.
- 2.Combine Slaw Topping ingredients in small bowl, set aside.
- 3.Combine Ground Beef, bread crumbs, egg white, salt and 1/8 teaspoon black pepper in large bowl, mixing lightly but thoroughly. Lightly shape into four 1/2-inch thick patties.
- 4.Place patties on grid over medium ash-covered coals. Grill, covered, 8 to 10 minutes (over medium heat on preheated gas grill, 7 to 9 minutes), until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. About 2 minutes before burgers are done, place buns, cut sides down, on grid. Grill until lightly toasted.
- 5.Spread equal amount of mayonnaise on bottom of each bun, top with burger. Evenly divide Slaw Topping over burgers. Close sandwiches.

- 1. Mix thoroughly beef and picante sauce.

- 3. Grill patties 10 minutes or until done, turning once and spreading with more picante sauce.
- 4. Serve on rolls, with your choice of trimmings.
WEST COAST BURGER
Steps:
- Caramelized Onions: Heat the canola oil in a large skillet over medium heat. Add the onions and cook until soft and lightly caramelized about 15 minutes. Add the mustard and a pinch of salt and cook for another 2 minutes. Remove the onions from the pan to a small bowl and set aside.
- Special Sauce: In a medium bowl combine all the ingredients and whisk until smooth.
- Burgers: Preheat the broiler to low.
- Form the ground meat mixture into 6 equal patties. Do not over handle or compress the patties, keep them loose. This will help create a tender burger. Over mixing and compacting will result in a tough heavy burger.
- Heat the canola oil a large heavy-bottomed skillet over medium-high heat.
- In a small bowl combine the salt, pepper and garlic powder and season the burgers generously with the mixture. Put the patties in the skillet and cook for 4 minutes. Flip and let cook for 1 minute, then top each patty with a piece of cheese. Cook for another 2 minutes until the cheese is melted and the burgers are medium.
- While the burgers are cooking, lightly brush the buns with melted butter and put them on a sheet pan. Broil until lightly toasted, about 2 minutes.
- To assemble, split the buns and spread each half with about a tablespoon of the special sauce. Put the burgers on the bottom half of each bun, top with caramelized onions, tomato and lettuce. Cover with the top half of the bun and serve.
