WILD RICE MEATBALLS IN MUSHROOM SAUCE
Ground beef, mushrooms, and wild rice are baked and then simmered in a mushroom wine sauce that pairs wonderfully with Idahoan Signature™ Russets Mashed Potatoes.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Combine beef, onion, rice, seasoned salt, garlic salt, bread crumbs, and evaporated milk. Shape into 1 inch meatballs. Place meatballs on rimmed baking sheet.
- Bake in preheated oven until brown, about 15 minutes.
- Melt butter in a skillet over medium heat. Add mushrooms and sprinkle with salt; saute until mushrooms release their moisture and soften, about 10 minutes. Add the wine, water, soup, salt, and sage to saucepan; stir to combine.
- Transfer meatballs to the sauce and simmer until cooked through and hot, 30 minutes.
- Prepare Idahoan Signature™ Russets Mashed Potatoes according to package instructions. Serve with the meatballs and mushroom sauce.

WILD RICE MEATBALLS
Wild Rice Meatballs is a delicious twist on a classic meatball recipe made with onion and garlic and baked so the tender balls are perfectly cooked.

Steps:
- Gather the ingredients.
- Combine wild rice with 1/2 cup water in a small saucepan.
- Bring to a simmer, then cover and simmer on low heat for 30 to 35 minutes until rice is almost tender.
- Set aside.
- Preheat oven to 350 F.
- In a small saucepan heat olive oil over medium heat; add onion and garlic and sauté until tender, about 5 to 7 minutes.
- In large bowl combine onion mixture, wild rice, seasoned salt, pepper, milk, and egg and combine.
- Add ground beef, broken into chunks, and work gently but thoroughly with your hands to combine.
- Form into meatballs about 1 inch in diameter and place on a broiler pan.
- Bake in preheated oven for 25 to 30 minutes until meatballs are no longer pink in center.
- Cool and freeze, or when baked, use in your favorite recipe.
- Enjoy.

- In a bowl, combine the beef, oats, 1/2 teaspoon salt, pepper, celery salt and parsley. Shape by tablespoonfuls into meatballs. Place meatballs on a greased rack in a shallow baking pan. Bake at 400° for 18-20 minutes or until browned. , Meanwhile, combine rice, celery, onion, mushrooms, soup, water and remaining salt. Transfer meatballs to a greased 3-qt. casserole; pour soup mixture over. Cover and bake at 350° for 1 hour or until liquid is absorbed and rice is tender.

- In a bowl, combine the egg, rice, onion, parsley, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place on the rack in a pressure cooker. Combine the soup, water and Worcestershire sauce; pour over meatballs., Close cover securely; place pressure regulator on vent pipe. Bring cooker to full pressure over high heat. Reduce heat to medium; cook for 10 minutes. (Pressure regulator should maintain a slow steady rocking motion or release of steam; adjust heat if needed.) Remove from the heat. - Pulse the white beans in a food processor until coarsely ground. Stop before they turn into a paste. Transfer into a large bowl. Next, pulse the nuts until coarsely ground and add them to the bowl. Add the cooked wild rice. Whisk the egg and add it to the bowl.
- Warm the oil over medium heat. Add the onion, garlic, carrots, and salt. Cook, stirring occasionally, until softened, 8-10 minutes. Add the pepper, balsamic, Worcestershire sauce, tamari, rosemary, and thyme. Cook for a couple more minutes. Add this to the bowl that has the beans, nuts, and egg. Add the oat flour and stir to combine. Taste and season with additional salt, if desired. However, the gravy is rather salty, so you probably won’t need more salt in the meatballs!
- Preheat the oven to 375 degrees Fahrenheit and line a large baking sheet with parchment paper. Form the bean mixture into 20 balls and bake for 35 minutes.
- In a medium saucepan, warm the oil over medium heat. Add the onion, garlic, salt, and pepper. Cook for about 8 minutes, stirring occasionally. In a bowl, whisk together the broth, miso, tahini, nutritional yeast, toasted sesame oil, flour, and maple syrup. Whisk this into the saucepan and cook, whisking often, until the mixture thickens, 10-15 minutes. If the gravy is refusing to thicken enough (this happens from time to time), dissolve a tablespoon more flour in a small amount of broth, and then whisk that into the gravy and cook for a couple more minutes, until it thickens.

- Place ground beef, bread crumbs, milk, egg, onion, salt, pepper and nutmeg in large bowl. Mix well, to combine. Form mixture into 1 inch meatballs; set formed meatballs onto wax paper or foil.
- Heat shortening (or oil) in large skillet on medium heat. Add meatballs to hot oil in single layer. Brown on all sides (a minute or two per side). If necessary, add additional shortening (or oil) if necessary, to prevent sticking. When meatballs are fully browned, remove them to a plate, and keep warm.
- Add hot water back into skillet (DO NOT CLEAN OUT SKILLET). Stir while cooking on low, to deglaze the skillet and scrape up the flavorful browned bits off bottom of skillet. In a separate small bowl, combine cold water and flour. Mix really well, to remove lumps. Add this mixture to hot liquid in skillet, whisking well while adding. Continue to whisk gravy to remove any lumps. Bring mixture to a boil, stirring often until mixture thickens. Taste gravy... add salt and pepper to season, if desired.
- Add meatballs back into skillet. Turn to coat with gravy. Put a lid on the skillet; cook meatballs and gravy for 30 minutes, adding additional water to gravy, if necessary, to ensure there will be enough gravy (as gravy will cook down a bit).
