ARTICHOKE RICE SALAD



Artichoke Rice Salad image

This is a recipe of my mother's, and has always been one of my favorites. Prepare the night before, and serve chilled.

4 cups chicken stock
2 cups uncooked white rice
3 (6.5 ounce) jars marinated artichoke hearts, chopped
2 cups mayonnaise
1 teaspoon curry powder
salt and pepper to taste
5 green onions, chopped
1 green bell pepper, chopped
3 stalks celery, chopped
¼ cup chopped parsley

Steps:

  • Combine chicken stock and rice in a medium saucepan. Bring to a boil, reduce heat to low. Cook until tender, about 20 minutes.
  • In a small bowl, mix together artichoke marinade, mayonnaise, and curry powder. Season to taste with salt and pepper. Set aside.
  • In a large bowl, combine artichoke hearts, green onions, green bell pepper, parsley, and celery. Mix in cooked rice, then mix in reserved marinade mixture. Cover and chill overnight. Serve cold.

Interesting combination of brown rice and artichoke hearts. Recipe borrowed from The Cheshire Cat in Santa Barbara, CA.

1/2 cup marinated artichoke hearts, drained and chopped
1 cup cooked brown rice, chilled
1 cup cheddar cheese, shredded
4 large eggs
1/2 cup milk
1/3 teaspoon dried mustard
1/8 teaspoon paprika
salt and pepper

Steps:

  • Mix together artichoke hearts, rice and cheese and pour into a greased baking dish.
  • Whisk together eggs, milk and mustard and pour over rice mixture.
  • Sprinkle the top with paprika, salt and pepper.
  • (At this point, you could refrigerate over-night).
  • Bake for 50 minutes in a 350 degree oven.

I was looking for a nice side dish to go with my marinated pork tenderloin and Greek Salad and I found this one. It turned out really nice and definitely complimented the pork. Hope you will enjoy it as well.

1 cup uncooked wild rice
1 (10 ounce) can consomme
1 3/4 cups water
1/2 teaspoon salt
3 tablespoons butter
1/3 cup chopped onion
2 cloves garlic, minced
2 (6 ounce) jars marinated artichoke hearts
1 tablespoon chopped fresh parsley
1/4 teaspoon oregano

Steps:

  • Wash and drain wild rice.
  • Place rice, consomme, water and salt in saucepan.
  • Heat to boiling; reduce heat and simmer, covered, until tender, about 45 minutes.
  • In a large frying pan, melt butter and saute onion and garlic until soft.
  • Drain and cut artichokes into quarters.
  • Add to frying pan with cooked rice, parsley and oregano.
  • Stir until heated through.

Inspired by a 1960s classic, this side dish calls for Arborio rather than conventional rice, resulting in a chewy and creamy texture.

1 1/2 cups homemade or low-sodium store-bought chicken stock
2 tablespoons olive oil
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 cup Arborio rice
2 teaspoons coarse salt
1/4 teaspoon curry powder
12 small green olives, pitted and sliced
12 ounces marinated artichoke hearts, cut into 1/2-inch wedges, liquid reserved
1 celery stalk, thinly sliced on a bias
1/2 ounce baby spinach (about 1 cup)

Steps:

  • Bring stock to a simmer. Meanwhile, heat oil in a saucepan over medium heat. Add onion and garlic. Cook until onion is translucent. Add rice, salt, and curry powder. Cook, stirring, 1 minute.
  • Raise heat, and add half the stock. Stir 30 seconds. Stir in remaining stock. Bring to a boil, then reduce heat to low, and cover. Cook 20 minutes.
  • Spread rice onto a rimmed baking sheet. Let cool. Cover with plastic wrap, and refrigerate 1 hour.
  • Combine olives, artichoke hearts, and celery in a large bowl. Add rice, and toss. Add 1 tablespoon reserved artichoke liquid, and toss. (Salad can be made up to this point and refrigerated overnight.)
  • Before serving, stir in spinach. Serve cold or at room temperature.

2 celery ribs, chopped
2 to 3 green onions, chopped
1/2 cup Italian salad dressing

Steps:

  • Prepare rice according to package directions. Cool; place in a large bowl. Add remaining ingredients and toss to coat. Cover and refrigerate overnight.

6 tablespoons margarine or butter
6 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups chicken broth
1 cup milk
1 tablespoon margarine or butter
2 cups julienne-cut (2x1/4x1/4-inch) carrots
1/2 cup chopped green bell pepper
1/3 cup chopped green onions
1/2 cup milk
1/4 cup dry sherry
2 1/2 cups cubed cooked chicken
2 slices bacon, crisply cooked, crumbled
8 oz. (2 cups) shredded mozzarella cheese
1 1/2 cups cooked white rice
1 1/2 cups cooked wild rice
1 to 2 (14-oz.) cans artichoke hearts, drained, quartered
1/4 cup grated Parmesan cheese
1 to 2 teaspoons dried parsley flakes

Steps:

  • In medium saucepan, melt 6 tablespoons margarine over medium heat. Stir in flour, salt and pepper. Cook until mixture is smooth and bubbly, stirring constantly. Gradually stir in chicken broth and 1 cup milk. Cook until mixture boils and thickens, stirring constantly.
  • Heat oven to 350°F. Grease 13x9-inch (3-quart) baking dish. In large skillet, melt 1 tablespoon margarine over medium-high heat. Add carrots, bell pepper and onions; cook and stir until crisp-tender. Stir in white sauce, 1/2 cup milk, sherry, chicken, bacon and mozzarella cheese; blend well. Remove from heat.
  • Combine white and wild rice; spread evenly over bottom of greased baking dish. Arrange artichokes over rice. Spoon chicken mixture evenly over artichokes.** Sprinkle with Parmesan cheese and parsley flakes; cover tightly with foil.
  • Bake at 350°F. for 40 minutes. Uncover; bake an additional 15 to 20 minutes or until casserole is thoroughly heated.
