WILD RICE MEAT LOAF
I've shared this recipe with many friends. The unique, hearty meat loaf is full of surprises - tangy wild rice and pockets of cheddar cheese make it extra special. Even so, it's not that tricky to prepare...try it and see! -Genie Lang, Jamestown, North Dakota

- In a large bowl, combine the first nine ingredients. Crumble beef over mixture and mix well. , Firmly press into a greased 9x5-in. loaf pan. Bake, uncovered, at 350° for 70 minutes. Cover with foil during the last 15 minutes if the top is browning too quickly.

PORK AND WILD RICE CASSEROLE
This recipe is a delicious use of wild rice. Just be sure to season your ground pork if you don't buy it preseasoned (usually labeled as pork sausage). Fresh Italian sausage can also be used, just cut open the casing. Works great prepared a day ahead and re-heated for 20 minutes at serving time.

- Place rice and water in a pot and bring to a boil. Reduce heat to low, cover, and cook 45 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet over medium-high heat and cook until evenly brown. Drain, crumble, and set aside. Place pork in skillet and cook until evenly brown. Drain and set aside.
- Reduce skillet heat to medium and melt butter. Stir in onion and celery, and cook until tender; set aside. Mix flour into remaining butter until smooth. In a bowl, mix the reserved mushroom liquid and half and half; stir into the skillet and cook until thickened. Stir in the soup. Mix in 6 cups cooked rice, cooked bacon, cooked pork, mushrooms, almonds, pimento, parsley, salt, and pepper. Transfer to a 9x13 inch casserole dish.
- Bake 40 minutes in the preheated oven.

RICE STUFFED MEATLOAF

- 1. https://www.justapinch.com/recipes/side/rice-side/long-grain-and-wild-rice.html Prepare rice ahead of time. You will need 3 c. of prepared rice for 3 lbs. of meat. Let cool.
- 2. Saute bacon and onion in about 1-2 TBL. of olive oil till bacon is almost done, add mushrooms and cook a few minutes longer. Let cool.
- 3. In large bowl, break apart ground beef, add mushroom mix, all spices, and eggs. Mix together. On a large pc.of foil, mold meatloaf mixture into a roll.
- 4. Now flatten meat out into a rectangular shape. Place thin slices of beef to cover most of the meat, leaving a couple inches around all sides. Spoon on rice placing in the center of your sliced meat.
- 5. Using the foil as a rollin tool, began to roll meatloaf into a log. Seal ends and using the foil to pick up your loaf, place in baking dish, or onto bakers rack SEAM side down. Place a pc. of foil over top of loaf to keep from over browning and drying out. Bake 375° for about 1 hr. Remove foil and bake about 15 min longer. Use meat thermometer at 1 hr to check for doneness.
- 6. Serve with mushroom onion brown gravy.
PORK LOAF
This is a new-wave meatloaf! I just purchase a 1-pound piece of smoked ham at the deli department for this and chop it finely on my processor, any brand will do as long as it is a smoke flavor ham, or save some of your cooked leftover ham to make this! I have made it two times in one month, including today, and has become a favorite of my familys. You can use regular saltine crackers for this in place of whole wheat crackers, and red bell pepper can be substituted for green, or use both!

Steps:
- Set oven to 350 degrees.
- Melt butter in a medium saucepan over medium-low heat.
- Add in onions and bell pepper/s; cook until veggies are tender, stirring occasionally (about 8-10 minutes) then cool the mixture completely.
- In a large bowl mix together ground pork, ham, crushed crackers, milk, eggs, pepper, salt and the cooled onion/pepper mixture; mix well to combine.
- Shape into an approx 9x5-inch loaf, and place onto a shallow greased baking pan.
- Using a long knife, make shallow criss-cross (diamond) pattern in the top of of loaf.
- Bake for 30 minutes.
- Meanwhile for the glaze blend the orange marmalade, Dijon mustard and brown sugar in a small bowl.
- After 30 minutes of baking remove from oven and drizzle about 1/3 cup glaze over loaf and return to oven to bake for another 15 minutes.
- After 15 minutes, drizzle the remaining glaze over loaf and bake for about another 22-25 minutes or until a thermometer inserted in the center of the loaf reads 165°F.
- Transfer the loaf to a platter; let stand for 10 minutes.
- Pour the pan juices into a small bowl and whisk to blend.
- Slice the loaf and serve with the pan juices.
- Delicious!

PORK AND CABBAGE WITH WILD RICE AND SPICED APPLE
You'll never want to cook cabbage any other way. Roasting the purple cabbage is not just super easy, but it keeps the pretty purple vibrant.

- Position an oven rack in the top third of the oven and preheat to 425 degrees F. Prepare the wild rice as per package instructions (discarding any included flavor packets). Keep warm and set aside.
- Meanwhile, toss the cabbage, garlic, 1 tablespoon of the oil, 1 tablespoon of the vinegar, 1/4 teaspoon salt and a few grinds of pepper together on a baking sheet. Spread out leaving room for the pork tenderloin in the center.
- Sprinkle the pork with 3/4 teaspoon of the apple pie spice, 1/2 teaspoon salt and a few grinds of pepper. Heat the remaining 1 1/2 teaspoons oil in a large nonstick skillet. Add the pork and cook, turning as needed, until brown on all sides, about 5 minutes. Place on the baking sheet and brush the top and sides of the pork with 2 teaspoons of the mustard. Roast until the cabbage is tender and the internal temperature of the pork registers 145 degrees F on an instant-read thermometer, 25 to 30 minutes. Transfer the pork to a cutting board to rest for a few minutes and then slice. Toss the parsley with the cabbage.
- Toss the apples with the remaining 1/4 teaspoon apple pie spice. For the sauce, stir together the sour cream and the remaining 2 teaspoons mustard and 1 teaspoon vinegar. Divide the rice, cabbage, pork and apples evenly among four dinner plates. Spoon the sauce over the pork. Serve each with a glass of milk.

- Place cranberries in a small bowl and add 1/2 cup boiling water. Cover and let stand for 10 minutes. Drain.
- You're going to double butterfly the tenderloin so it can be flattened, stuffed and rolled. To do that, you'll make two long horizontal cuts, one on each side, dividing the tenderloin in thirds without cutting all the way through.
- Stir apple and rice into the drained cranberries. Add 1/2 teaspoon each thyme, rosemary, and parsley, and 1/8 teaspoon each salt and pepper; stir to combine.
- Spread half the rice mixture across the flattened pork, leaving a 1-inch border all around. Starting on a long side, tightly roll the pork, securing with a few toothpicks.
- Roast until the internal temperature reaches 145 degrees F, 20 to 25 minutes. Remove from oven and Let the pork rest for 3 minutes.
- Meanwhile, place a steamer basket in a medium saucepan. Add water to just below the basket and bring to a boil. Add green beans to the basket; cover, reduce heat to medium and steam until tender, 3 to 5 minutes.
- Heat the remaining rice mixture in a small nonstick skillet over medium heat until heated through. Transfer to the serving platter with the beans.
- Slice the pork crosswise into thick rounds and transfer to the serving platter. Garnish with thyme and pepper, if desired.
