Wild Rice Meatballs in Mushroom Sauce image

Ground beef, mushrooms, and wild rice are baked and then simmered in a mushroom wine sauce that pairs wonderfully with Idahoan Signature™ Russets Mashed Potatoes.

1 small onion, finely chopped
½ cup cooked wild rice
½ teaspoon seasoned salt
½ teaspoon garlic salt
⅓ cup bread crumbs
½ cup evaporated milk
1 tablespoon butter
8 ounces sliced fresh mushrooms
½ teaspoon salt
⅔ cup dry white wine
⅔ cup water
1 (10.75 ounce) can low-sodium cream of mushroom soup
¼ teaspoon dried sage
1 (9.74 ounce) package Idahoan Signature™ Russets Mashed Potatoes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine beef, onion, rice, seasoned salt, garlic salt, bread crumbs, and evaporated milk. Shape into 1 inch meatballs. Place meatballs on rimmed baking sheet.
  • Bake in preheated oven until brown, about 15 minutes.
  • Melt butter in a skillet over medium heat. Add mushrooms and sprinkle with salt; saute until mushrooms release their moisture and soften, about 10 minutes. Add the wine, water, soup, salt, and sage to saucepan; stir to combine.
  • Transfer meatballs to the sauce and simmer until cooked through and hot, 30 minutes.
  • Prepare Idahoan Signature™ Russets Mashed Potatoes according to package instructions. Serve with the meatballs and mushroom sauce.

24 oz white mushroom, finely chopped
1 medium onion, diced
3 cloves garlic, minced
1 cup whole wheat breadcrumbs
½ cup quick-cook oats
¼ cup fresh parsley, chopped
2 tablespoons grated parmesan cheese
½ teaspoon dried oregano
½ teaspoon dried rosemary
½ teaspoon dried thyme
½ teaspoon salt
½ teaspoon pepper
½ teaspoon cayenne, optional
2 eggs

Steps:

  • In a skillet over medium heat, add cooking oil or water and mushrooms. Cook down until mushrooms begin to brown, stirring occasionally.
  • Add the onion and cook until onions are translucent. Add the garlic and stir until fragrant. Transfer to a large bowl.
  • To the mushroom mixture, add breadcrumbs, oats, parsley, Parmesan, oregano, rosemary, thyme, salt, pepper, and cayenne, and stir to combine.
  • Add eggs and mix well.
  • Cover and refrigerate for at least 2 hours, or overnight.
  • Preheat oven to 375°F (190°C).
  • When ready, use your hands to form 1-inch (2-cm) balls from the mushroom mixture. Place in rows on a parchment paper-lined baking sheet.
  • Bake for 20 minutes, or until golden, flipping halfway.

3 tablespoons dried morel mushrooms
2 tablespoons dried porcini mushrooms
¼ cup salted butter, divided
1 large leek, finely chopped
1 (9 ounce) package mixed mushrooms, sliced (shiitake, chanterelle, portobello, oyster)
salt and ground black pepper to taste
4 ¼ cups vegetable stock, or to taste
2 onions, finely chopped
1 teaspoon chopped fresh thyme
1 bay leaf
1 (16 ounce) package Arborio rice
¾ cup mascarpone cheese
1 (6 ounce) package grated Parmesan cheese, divided
2 teaspoons jerk seasoning, or more to taste
1 tablespoon all-purpose flour, or as needed
salt and ground black pepper to taste
2 eggs
½ (8 ounce) package panko bread crumbs
oil for frying

Steps:

  • Soak dried morel and porcini mushrooms in a bowl with 2 cups water.
  • Melt 2 tablespoons butter in a large skillet over medium heat. Add leek; cook and stir until softened, 2 to 3 minutes. Add mixed sliced mushrooms and cook until tender, 2 to 3 minutes more. Season with salt and pepper. Transfer leek mixture to a bowl.
  • Heat vegetable stock in a saucepan to a low simmer.
  • Wipe the skillet used for the leek mixture and return to medium heat. Add remaining butter, onions, thyme, and bay leaf. Cook and stir until softened, about 5 minutes. Add rice and cook, stirring to coat all the grains, 2 to 3 minutes.
  • Remove the re-hydrated mushrooms from the bowl and pour the liquid into the rice. Bring to a boil, stirring until all liquid has been absorbed, 3 to 5 minutes. Chop mushrooms and add to rice. Add the heated stock, 1 ladle at a time, stirring until almost completely absorbed after each addition, about 20 minutes total.
  • Stir leek mixture, mascarpone cheese, 3/4 of the Parmesan cheese, and jerk seasoning in with the rice. Stir until combined. Remove from heat and let cool until safe to handle, at least 30 minutes.
  • Season flour with salt and pepper and spread mixture over a plate.
  • Whisk eggs together in a bowl and season with salt and pepper.
  • Mix remaining Parmesan cheese with panko in a dish.
  • Form small balls of risotto using a small ice cream scoop or by hand. Dust with flour, coat with egg, and roll in the panko mixture. Place on a baking sheet and cover with plastic wrap. Cool in the refrigerator, 8 hours to overnight.
  • Heat oil in a saucepan. Fry mushroom balls in batches, turning halfway until golden brown, about 4 minutes per batch.

These little bites of risotto are crunchy on the outside, creamy inside, with a woodsy flavor.

Number Of Ingredients 16

1 20-gram package dried porcini
3/4 cup warm water
1 clove garlic, minced
1 shallot, minced
2 tablespoons olive oil
1/4 pound white mushrooms, chopped
4-5 cups chicken stock, preferably homemade and low in salt
1 cup Arborio rice
1/4 cup white wine
Salt and freshly ground pepper
1 1/2 tablespoons unsalted butter
1/2 cup grated Parmesan
1/4 pound Fontina
All-purpose flour, for dredging
Vegetable oil, for frying
Chopped fresh parsley, for garnish

Steps:

  • In a small bowl, soak porcini in warm water until soft, about 20 minutes. Remove, squeeze gently, and chop coarsely. Set water and mushrooms aside.
  • In a medium saucepan over low heat, saute garlic and shallot in 1 tablespoon olive oil until translucent, 2 to 3 minutes. Turn heat up to medium and add white mushrooms. Cook until soft, about 5 minutes. Add half the porcini.
  • In another saucepan, bring stock to a low simmer and keep it there.
  • Add rice and remaining olive oil to mushroom mixture and stir until all grains are well coated. Pour in wine, stirring constantly. Cook until rice absorbs most of the wine. Repeat with mushroom liquid.
  • Add 1 cup stock, stirring frequently to avoid sticking. Cook until most of the stock is absorbed. Repeat with as much of remaining stock as needed, adding cup by cup. Start testing for doneness after third or fourth cup; rice should be al dente, with a creamy consistency but a little drier than a regular risotto so the balls hold together. The process should take 20 to 30 minutes. Stir in remaining porcini.
  • Season with salt and pepper, and stir in butter and Parmesan. Spread in a baking pan to cool. Cover and refrigerate until cold, about 1 hour.
  • Cut Fontina into tiny cubes, smaller than 1/4 inch. With moist hands (keep a bowl of warm water close by), press a cube of cheese into center of about 1 tablespoon of rice. Enclose cheese in rice and roll with both hands until ball becomes compact and round. The risotto balls can be made 1 or 2 days ahead up to this point; refrigerate, covered.
  • On the day of the party, dredge risotto balls in flour. Deep-fry in vegetable oil at 375 degrees until crisp and brown on the outside. Serve immediately, or keep at room temperature and reheat in a 375-degree oven until hot. Roll in chopped fresh parsley if desired.

Chicken Soup with Wild Mushrooms and Herbed Matzo Balls image

1 3-pound chicken, cut into pieces
2 large onions, cut into 1-inch pieces
12 cups water
3 celery stalks, cut into 1-inch pieces
3 fresh parsley sprigs
2 bay leaves
Matzo Balls
1 ounce dried shiitake mushrooms
2 cups hot water
1/3 cup chicken fat (reserved from stock or purchased)
4 large eggs
2 tablespoons chopped fresh chives
1 1/2 tablespoons minced fresh tarragon or 1 1/2 teaspoons dried, crumbled
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup unsalted matzo meal
3 1/2 quarts water (14 cups)
1 teaspoon minced fresh tarragon or 1/4 teaspoon dried, crumbled
Minced fresh chives

Steps:

  • For Soup:
  • Heat oil in heavy large pot over medium-high heat. Add chicken and onions and cook until brown, stirring frequently, about 15 minutes. Add 12 cups water, celery, parsley and bay leaves. Bring to boil, skimming surface. Reduce heat and simmer gently until reduced to 8 cups, about 5 hours. Strain into bowl. Cover and refrigerate until fat solidifies on top. (Can be prepared 2 days ahead.)
  • Remove fat form soup and reserve fat for matzo balls.
  • For Matzo Balls:
  • Place shiitake mushrooms in small bowl. Pour 2 cups hot water over. Let soak until softened, about 30 minutes.
  • Melt 1/3 cup chicken fat and cool. Combine melted chicken fat, 1/4 cup shiitake soaking liquid (reserve remainder), eggs, 2 tablespoons chives, 1 1/2 tablespoons tarragon, 1 1/2 teaspoons salt and 1/4 teaspoon pepper in medium bowl and beat to blend. Mix in matzo meal. Cover and refrigerate 3 hours. (Can be prepared 1 day ahead. Cover mushrooms in soaking liquid and refrigerate.)
  • Measure 3 1/2 quarts water into large pot. Salt generously and bring to boil. With dampened hands, form cold matzo meal mixture into 1-inch balls and add to boiling water. Cover and boil until matzo balls are cooked through and tender, about 40 minutes. (To test for doneness, remove 1 matzo ball and cut open.) Transfer matzo balls to plate, using slotted spoon. (Can be prepared 1 day ahead. Cover tightly and refrigerate.)
  • Drain mushrooms, reserving liquid. Thinly slice mushrooms, discarding stems. Combine remaining mushroom soaking liquid, mushrooms, chicken soup and 1 teaspoon fresh tarragon in heavy large saucepan and bring to simmer. Season to taste with salt and pepper. Add matzo balls and simmer until heated through. ladle soup into bowls. Garnish with chives and serve.

1 tablespoon olive oil

1 pound ground beef

Steps:

  • Gather the ingredients.
  • Combine wild rice with 1/2 cup water in a small saucepan.
  • Bring to a simmer, then cover and simmer on low heat for 30 to 35 minutes until rice is almost tender.
  • Set aside.
  • Preheat oven to 350 F.
  • In a small saucepan heat olive oil over medium heat; add onion and garlic and sauté until tender, about 5 to 7 minutes.
  • In large bowl combine onion mixture, wild rice, seasoned salt, pepper, milk, and egg and combine.
  • Add ground beef, broken into chunks, and work gently but thoroughly with your hands to combine.
  • Form into meatballs about 1 inch in diameter and place on a broiler pan.
  • Bake in preheated oven for 25 to 30 minutes until meatballs are no longer pink in center.
  • Cool and freeze, or when baked, use in your favorite recipe.
  • Enjoy.
