This delicate, super-thin bread is inspired by a Sardinian classic, carta di musica - serve with flavoured butter for a special starter or side

Yield Makes 8 flatbreads

Number Of Ingredients 5

200g '00' flour , plus extra for dusting
100g semolina flour or fine semolina
olive oil , for brushing
8 slices wild garlic butter (see recipe in Goes well with), to serve
flaky sea salt , to serve

Steps:

  • In a bowl, mix together the flours and 1/2 tsp salt. Pour in 175ml water and mix to a soft dough. Tip onto a lightly floured surface and knead for about 5 mins or until smooth. Wrap in cling film and leave to rest for 30 mins. Meanwhile, place a pizza stone or one or two large baking trays in the oven, then heat it to 240C/220C fan/gas 9 or as high as it will go.
  • Divide the dough into 8 and shape into balls. On a floured surface, roll out balls very thinly into rough circles about 20-22cm in diameter.
  • Cut out 8 squares of baking parchment a little larger than the dough circles. Pop the dough circles on top and brush with olive oil. Cook the breads, 1 or 2 at a time, on the hot pizza stone or baking tray (still on the baking parchment) for 6-8 mins or until bubbled up in places, golden brown and crisp. Remove and leave to cool on a wire rack while you cook the rest. Pop all the breads back in the oven for 1 min to warm through. Remove and top with a slice of garlic butter (see Goes well with) and sea salt.

Easy Buttery Garlic Bread image

For the best garlic bread, use softened butter and a generous amount of fresh garlic. We bake the bread wrapped in foil and turn the bread once during baking so that the bottom crust of the loaf does become too hard.

Number Of Ingredients 8

1 loaf French or Italian bread (1 pound)
1/2 cup unsalted butter, softened, see notes for using salted butter
1 tablespoon minced fresh garlic (3 to 4 cloves)
1/4 cup finely chopped parsley or basil
1/2 teaspoon fine sea salt
1/2 teaspoon fresh ground black pepper
1 cup shredded mozzarella cheese, optional
1/4 cup shredded parmesan cheese, optional

Steps:

  • Set the oven rack to the center position. Heat the oven to 400 degrees Fahrenheit.
  • Combine the softened butter, garlic, herbs, salt, and pepper in a small bowl. Use a fork to mix the ingredients together.
  • Slice the loaf of bread in half, lengthwise. Face the bread halves cut-side-up, and then divide the garlic butter mixture between each half. Spread into an even layer all the way to the edges. Put the bread halves back together and wrap with foil.
  • Place the wrapped garlic bread onto a baking sheet and bake for 10 minutes. Flip the bread and bake another 5 to 10 minutes or until the butter has melted into the middle of the loaf.
  • Unwrap the foil then position the bread halves so that the cut-side is facing up. Scatter cheese over the bread then bake, uncovered, until the cheese melts and the edges of the bread crisp up a little, about 5 minutes.
  • Slice the bread and serve warm. Keep garlic bread warm by wrapping in foil. Or wrap in foil and keep in a warm oven (170 to 200 degrees F).

1/2 cup salted butter (softened)
1 tablespoon minced garlic
1/2 teaspoon garlic powder
salt & pepper (to taste)
1 teaspoon parsley (freeze-dried or fresh)
1/4 cup grated parmesan cheese
1/4 cup shredded cheddar cheese
1 loaf french bread

Steps:

  • In a small bowl, stir butter, garlic, garlic powder, salt, pepper and parsley together until well combined.
  • Stir in cheeses.
  • Cut french bread evenly in half lengthwise and remove any excess crumbs.
  • Divide butter mixture in half and spread in an even layer across the two cut sides of the loaves.
  • Place garlic bread on foil lined baking sheet and broil on high until brown and bubbly and melted. You may have to move the pan around to get it to broil evenly. Cut into 24 skinny pieces, 12 per side. 1 serving is 2 pieces.

  • Grease the bread pan with oil and then line with parchment paper. Add 2 tablespoons flour (from 430 g (15.2oz/ approx: 3 2/3 cups)), yeast, sugar to the jar with lukewarm water. Using a spoon stir well and let the mixture stand for 10 minutes.
  • Meanwhile combine flour, salt and olive oil in the bowl. After 10 minutes, pour the yeast mixture to the flour - salt mixture. Knead the dough very well, until the dough is no more sticking on the walls of the bowl. If you're using your hands, mix all the ingredients together to form a smooth dough, then knead the dough on a lightly floured surface for 5 minutes.
  • Remove the dough from the bowl, grease the bowl and put it back. Pour few drops of oil on the dough, so that it will not dry out. Cover with a cling film and then kitchen towel. Put the dough in a warm place and let it rise for 40 minutes or until it has doubled in size.
  • In the meantime wash wild garlic very well, shake it and place it in a large colander to drain. Shortly before the dough is completely raised, finely chop wild garlic. Then grate the cheese if you're using ungrated cheese. In a second bowl combine chopped wild garlic, cheese and olive oil. Mix well using a spoon and season with salt. Then preheat the oven to 200 ° C (392 °F), with both top and bottom heat.
