HAM HOCK AND WILD GREEN GUMBO

Number Of Ingredients 26

4 ham hocks (about 2 pounds, total)
Pinch of cayenne
5 bay leaves
8 1/2 cups water
4 pounds of assorted greens, such as collard, mustard, turnips, frisee, arugula, and spinach, washed, stemmed, and trimmed
2 tablespoons vegetable oil
2 cups chopped onions
1 cup chopped bell peppers
1 cup chopped celery
1/2 teaspoon dried leaf thyme
1/2 teaspoon dried leaf oregano
1/2 teaspoon dried leaf basil
1/2 cup finely chopped parsley
File powder
Salt and pepper
3 cups cooked white rice, warm
1 tablespoon chopped green onions
Essence
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a large pot, combine the ham hocks, bay leaf, and water together. Season with salt and pepper. Bring the liquid up to a boil and reduce to a simmer. Cook the ham hocks for 30 minutes. With a slotted spoon remove the hocks, remove the meat and chop. Reduce the heat to medium and add the greens, a handful at a time and blanch until they are wilted. Drain and reserve the liquid. Chop the greens. Set aside. In the same pot, heat the oil. When the oil is hot, saute the vegetables until they are wilted, about 10 minutes. Add the ham hock, greens, reserved liquid, and herbs. Bring to a boil and reduce to a simmer. Cook for 1 1/2 hours. Add the file powder right before serving. Season with salt and pepper. Ladle the gumbo in a shallow bowl and place a spoonful of the rice in the center. Garnish with green onions and Essence.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

Wild game hunting is a tradition with the males in my family. During my childhood, wild game was the about only meat we had to eat so I have a great appreciation for it. This is one of my dad's favorite things to make. He takes two days to make it. Recipe adapted from Southern Living.

2 quarts water
1 broiler-fryer chicken
1 1/2 teaspoons salt
8 dove breasts (about 1 pound)
1 lb venison roast, cut into 1-inch cubes
1 squirrel, dressed and cut into pieces
1 rabbit, dressed and quartered (about 2 pounds)
2 quail, dressed
1 small onion
1 stalk celery
1 bay leaf
1 tablespoon salt
1 teaspoon cayenne pepper
1 1/2 lbs smoked link sausage, cut into 1/2 inch slices
1/4 cup bacon drippings
1/2 cup flour
1 cup chopped onion
1 cup chopped celery
2 -3 teaspoons black pepper
1 teaspoon hot sauce
1/2 teaspoon cayenne
1 teaspoon Worcestershire sauce
hot cooked rice

Steps:

  • Add 2 quarts of water, chicken, and 1 1/2 teaspoon salt to a large pot.
  • Bring to a boil; cover, lower heat, and simmer 1 hour or until chicken is tender.
  • Take chicken from stock pot; chill broth, then remove fat from broth.
  • Remove chicken meat from bones; chop into bite-size pieces; set aside.
  • Add dove breasts and next 9 ingredients to a large pot; add water to cover.
  • Bring to a boil; cover, lower heat, and simmer for 2 hours.
  • Take meat out of broth; strain broth and set aside.
  • Remove meat from bones and chop into bite-size pieces; set aside.
  • Brown sausage in a large skillet over medium heat.
  • Transfer sausage to a paper-towel lined plate.
  • Add bacon drippings to sausage drippings; heat over medium heat until hot.
  • Add in flour; cook, stirring constantly until the color of caramel (about 20 mintes) (this is the roux).
  • Add onion, celery, and pepper; cook/stir 10 minutes.
  • Add roux to the chicken stock in a large pot; cover and simmer for 30 minutes.
  • Add game meat, sausage, chicken, hot sauce, cayenne, and Worcestershire sauce; stir to combine.
  • Add reserve game stock if more liquid is needed; simmer, uncovered, for 2 hours; stir occasionally.
  • Remove bay leaf; serve over hot cooked rice.

2 wild ducks, cut up
1/2 cup canola oil
2/3 cup all-purpose flour
1 pound smoked sausage, sliced
2 cups chopped onion
1-1/2 cups chopped green pepper
1-1/2 cups sliced celery
2 tablespoons minced fresh parsley
1 tablespoon minced garlic
1 can (14-1/2 ounces) stewed tomatoes
2 bay leaves
2 tablespoons Worcestershire sauce
1-1/2 teaspoons pepper
1 teaspoon salt
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper
2 quarts water
Hot cooked rice

Steps:

  • In a Dutch oven over medium heat, brown duck in batches in oil. Remove and set aside. Discard all but 2/3 cup drippings. Add flour to drippings; cook and stir over medium heat until brown, 12-14 minutes. Add sausage, onion, green pepper, celery, parsley and garlic. Cook for 10 minutes, stirring occasionally. , Stir in the next eight ingredients. Add duck; bring to a boil. Reduce heat; cover and simmer 60-75 minutes or until duck is tender., Remove duck. Cool. Debone and cut into chunks; return to pan. Simmer 5-10 minutes or until heated through. Remove bay leaves. Serve with rice.

  • In a Dutch oven or large pot, add the cup of oil to the pot, and turn the heat to medium-high. Whisk in the flour, and stir this frequently until it turns the color of chocolate. You can go as dark as dark chocolate brown, but under no circumstances can you let this roux burn. Keep in mind that this takes time, maybe 15 to 25 minutes of frequent stirring.
  • When the roux is ready, add the peppers, onions, celery and garlic and stir to combine. Cook this, stirring often, for 6 to 8 minutes, until the veggies are soft.
