Wild Boar Meatballs or Any Domestic Pork, Beef, Turkey, and Veal image

If you don't have wild boar handy, these will also work well with domestic pork, beef, turkey, and veal. If you have time, roll the meatballs in advance and put them in the refrigerator for 30 minutes to help them stay round while they cook.

2 lbs ground wild boar (as fatty as possible)
1/2 cup finely chopped flat leaf parsley
1/2 cup finely chopped fresh basil
1 cup breadcrumbs
3 garlic cloves, minced
1/2 cup finely diced shallot
1 teaspoon dried oregano
2 teaspoons fresh ground black pepper
2 teaspoons kosher salt
1/2 cup parmesan cheese
1/4 cup ricotta cheese
1/2 cup heavy cream
1/4 cup marsala wine
2 eggs
4 tablespoons grapeseed oil
3 cups tomato sauce
fresh linguine, cooked according to package instructions (or your other favorite pasta!)

Steps:

  • In a large bowl, combine all of the ingredients except the oil, tomato sauce, and pasta. Mix well with a wooden spoon or spatula until uniform in consistency.
  • Heat the grape seed oil in a large heavy bottom sauté pan.
  • Roll the wild boar mixture with your hands into 2-inch balls. Place them in the hot oil and cook for 2-3minutes on all sides until well browned.
  • Add the sauce and simmer covered for 10 minutes.
  • Spoon the meatballs and sauce over your favorite pasta or rice.

1 lb ground elk or 1 lb ground venison
6 slices bacon, cooked
1/2 white onion
2 garlic cloves
1 egg

Steps:

  • Pre heat oven to 350.
  • I mention using a food processor but you can just chop everything by hand, just make sure it's chopped very fine.
  • In a food processor add your white onion and garlic and pulse a few times. Then break up your cooked bacon and pulse again. Add your ground meat pulse, add egg, pulse until combined well. If meat is warm or room temperature then place in the fridge for a few minutes. Using your hands make 5 large meatballs the size of baseballs or you can make 10 small golf ball sized meatballs. In a large skillet warm some oil and brown each side of the meatballs, place in a baking dish and bake for about 15 minutes in the oven. You may need to bake less or more depending on the size you choose to make.

I created this recipe after buying a small amount of wild ground boar to try. I didn't find that the boar was gamey, but maybe just tasted more earthy than, say, beef. If you can find boar, why not give it a try? The cambozola adds richness while complementing the earthy tones of the sage and thyme. The shallot adds a bit of sweetness. A really different burger!

1/2 lb ground wild boar
1 shallot, finely chopped
1 1/2 teaspoons vegetable oil (or more if necessary)
1 pinch dried thyme
1 pinch dried sage
1/2 teaspoon Worcestershire sauce
ground black pepper, to taste
2 ounces cambozola cheese, sliced,rind removed if desired (see note below)

Steps:

  • In a non-stick or well-seasoned cast iron pan, heat the vegetable oil over medium-low heat.
  • Saute the chopped shallot for 2 minutes or until softened but not brown.
  • Set aside.
  • In a bowl, place the ground boar.
  • Sprinkle the thyme and sage over top.
  • Add the worcestershire sauce and pepper.
  • Add the shallot and oil and mix with hands until well combined.
  • (If you are making the burgers ahead of time, let the shallot cool completely before adding it to the burger mixture).
  • Form into two patties about 1/3" thick.
  • Broil or grill until well done, about 5-6 minutes per side.
  • Divide cheese and place on burgers about 1 minute before they are done.
  • Let burgers sit about five minutes before serving.
  • Nice served with a spinach and mushroom salad with a white wine vinagrette.
  • (A note about cambozola: It is a blue-veined brie and has a very mild blue flavour. You could probably substitute a mild blue cheese which will emphasize the sage, or a brie which will add richness. Experiment!).

4 wild boar chops
3 meyer lemons, juiced
1 cup olive oil
2 tablespoons olive oil
1/4 cup fresh rosemary, chopped
1 tablespoon garlic, minced
1 teaspoon salt, kosher

Steps:

  • salt and pepper the chops.
  • place chops in roomy, non-metal container so each chop lays flat.
  • whisk all ingredients (sans chops) for marinade.
  • pour marinade over chops.
  • cover and refrigerate at least (4) hours, turning every hour or so.
  • prepare grill/fire for direct heat on hi.
  • sear chops on both side for 2 minutes.
  • turn heat down or place chops on cooler part of grill for remaining cooking.
  • Close lid and cook about (5) mins on each side for medium rare.
  • let chops rest at room temp for (10) mins before serving.
