1/4 cup butter, softened
1/3 cup sugar
1 large egg, room temperature
2-1/3 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup 2% milk
1 teaspoon vanilla extract
1-1/2 cups fresh or frozen wild blueberries or 1 can (15 ounces) water-packed wild blueberries, well drained
STREUSEL TOPPING:
1/2 cup sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed

Steps:

  • In a bowl, cream butter and sugar. Add egg; mix well. Combine dry ingredients; add to creamed mixture alternately with milk. Stir in vanilla. Gently fold in blueberries. Fill greased or paper-lined muffin cups two-thirds full. In a small bowl, combine the sugar, flour and cinnamon; cut in the butter until crumbly. Sprinkle over muffins. Bake at 375° for 20-25 minutes.

⅔ cup granulated sugar ((or reduce to ½ cup for a slightly less-sweet muffin))
2 tablespoons quick-cooking oats, optional
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
¼ teaspoon ground nutmeg
¾ cup whole buttermilk, well shaken at room temperature ((or sub with whole milk))
¼ cup (½ of a stick) salted butter, melted and slightly cooled
¼ cup vegetable oil
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 ½ cups fresh blackberries
Optional, for topping: coarse sugar

Steps:

  • Preheat oven to 375°F. Line a standard 12-cup muffin pan with paper liners; set aside.
  • In a large bowl, whisk together flour, sugar, oats (if using), baking powder, cinnamon, salt, and nutmeg.
  • In a medium bowl, whisk together buttermilk (or milk), melted butter, oil, eggs, and vanilla extract.
  • Add the wet ingredients to the dry ingredients. Stir just until combined, being careful not to over-mix. The batter may be lumpy, which is fine.
  • Fold in the blackberries.
  • Divide batter evenly among the prepared muffin cups, filling each cup almost to the top. Sprinkle coarse sugar on top, if desired.

Number Of Ingredients 11

3 cups white flour
1 cup white sugar
1 tablespoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3 large eggs
1 cup milk
1/4 cup molasses
1/4 cup vegetable oil
1 teaspoon vanilla
2 cups wild blueberries

Steps:

  • Mix sifted dry ingredients. Fold in blueberries. Add beaten liquid ingredients in a few swift strokes, just until dry ingredients are moistened. The mixing is held to an absolute minimum, a light stirring from 10-20 seconds, batter will be lumpy. The batter should not be mixed to the point of pouring, ribbon-like from the spoon, but should break into course globs. If the batter has been beaten too long, the gluten in the flour will develop and toughen the dough. Sprinkle muffins with a mixture of sugar and cinnamon prior to baking.
  • To bake, preheat oven to 400°F Grease bottoms only of medium size muffin cups, fill 2/3 full. Bake at once in a preheat 400F oven until golden brown, about 15-20 minutes. If muffins remain in tins a few moments after leaving the oven they will be easier to remove.

¼ cup avocado or olive oil (or any neutral tasting oil)

  • Preheat the oven to 400F*. Lightly spray or grease a standard 12-well muffin tin.
  • Set aside. In a large bowl, combine oats and buttermilk to soak 15 minutes. In a second bowl, whisk the flour, salt, baking soda, baking powder, salt, and cinnamon.
  • Stir the oil, egg, brown sugar and vanilla into the soaked oat mixture. Add dry ingredients. Stir just until combined. Do not overmix. Gently fold blackberries into the batter.

We pick the wild blackberries and spread them on cookie sheets and put them in the freezer. When frozen, transfer the berries to freezer bags. 1/2 teaspoon almond extract
1 cup frozen blackberrie (I fill up the glass measuring cup to brim full)

Steps:

  • Soak oats in buttermilk for 10 minutes.
  • Grease 12 muffin cups.
  • Preheat oven to 375°F.
  • Measure flour, baking powder, baking soda, salt and sugar into large bowl making well in centre.
  • Whisk egg, then stir in butter and extract.
  • Combine egg mixture with oat mixture before adding into flour mixture. Mix gently until almost combined.
  • Add frozen berries to batter. Do not over mix.
  • Bake for 25-30 minutes until cake tester comes out clean.
  • Remove pan from oven and let it sit for about 5 minutes before inverting the muffins onto a cake rack.
