COCKTAIL WIENERS
A sweet and savory treat for any get-together that will sure be a crowd pleaser. It's cheap and easy to make in a slow cooker with only three ingredients. I make this for any get-together and it is always a hit! I was a little unsure at first about the grape jelly concoction, but I tried it and have never done it any other way. It is so savory with just enough sweet. I always receive or over hear lots of agreement with the taste of the sauce. It always disappears at parties, and the next day I have cravings for these cocktail wienies. Try it for your next potluck, back yard BBQ, or any event!

CLASSIC COCKTAIL WIENERS
Super easy to make, our Classic Cocktail Wieners are ready in just 30 minutes. We've substituted raspberry jam for grape jelly and added a little more punch with chopped chipotle chiles in adobo sauce. There's no need to have a big meal planned next; this cocktail wiener recipe is so simple you can enjoy the classic appetizer as a main course too.

- In large saucepan, stir together all ingredients. Heat to boiling over medium heat; reduce heat to low. Simmer uncovered 20 to 25 minutes or until thoroughly heated and wieners are plump.
- Remove wieners from sauce to serving platter; pour sauce into small bowl. Serve with toothpicks or bamboo knotted party picks.

BOURBON WIENERS
Great appetizer. Family favorite for many years. Make them in a pan or a slow cooker. You can use uncut small smoky sausages, too.

- Place hot dogs, bourbon whiskey, ketchup, and brown sugar into a saucepan over medium heat. Heat, stirring often, until the brown sugar has dissolved and sauce is bubbly, 10 to 15 minutes.

WIENER
The wiener is a cured, smoked and cooked sausage. It is a ready to eat sausage or it may be boiled, fried or grilled for serving. The wiener originated about 300 years ago in Vienna, Austria and German immigrants brought this technology to the USA. The terms frankfurter, wiener or hot dog are practically interchangeable today. The big difference is that today's mass produced wieners have nothing in common with high quality wieners of yesterday.

- Grind meats through 5 mm (1/4") plate. Keep lean meats separately from fat trimmings. Refreeze and grind again 3 mm (1/8") plate.
- Mix lean beef with all ingredients adding 1/3 (50 ml) of cold water. Add lean pork and 50 ml of cold water and mix again. Add fat trimmings and the last part (50 ml) of water and mix everything well together.
- Stuff firmly into 24-26 mm sheep casings. Form 4-5" (10-12 cm) long links.
- Hold at room temperature for 30 minutes.
- When sausages feel dry apply hot smoke 60-70º C (140-158º F) for about 60 minutes until they acquire brown color.
- Cook in water, at 75º C (167º F) until internal meat temperature reaches 68-70º C (154-158º F). This should take about 25 minutes.
- Cool and refrigerate.

CRANBERRY WIENER BITES
These little dogs are served with a zippy curry-spiked sauce, & the recipe comes from the 1967 Better Homes and Gardens cookbook 'so good with FRUIT.'

WIENER BITES
These were served at our Finger Food Fiesta For New Years. My sons gobbled them up. They were extremely easy to make. The recipe calls to serve them hot but they are great after they have cooled down as well. From Company's Coming - Appetizers - by Jean Paré.

- Wieners that are 5 inches (13cm) in length can be cut into 6 pieces each for bite-size servings. (I don't usually count. I just cut them up into little bites).
- Fry bacon slices until fat part has lost its whiteness. Do not fry until crisp or it won't roll. Cut slice in half crosswise and lengthwise. Allow to cool.(I usually do about 4 slices of bacon in the microwave for about 4 to 5 minutes. Then while I am getting the next plate ready to microwave, the first batch of bacon is cooling.).
- When cool enough to handle, wrap around wiener section and secure with toothpick. Uncooked bacon may be used but it takes longer to cook (they need broiling) at the last minute.
- To serve: Arrange on baking tray (or plate for microwave) and heat in hot oven, 400°F (200°C) until sizzling hot. Can be kept hot on serving tray. (We served them piled nice and high in a pretty bowl.)
- Watch for toothpicks!
