BOLOGNESE SAUCE
An excellent chunky pasta sauce with beef, pork, lots of vegetables and tons of flavor. Freeze any unused portions for later use. If you have fresh herbs, you may substitute 2 teaspoons chopped fresh basil for the dried basil in this recipe.

Steps:
- In a large skillet, warm oil over medium heat and saute bacon, onion and garlic until bacon is browned and crisp; set aside.
- In large saucepan, brown beef and pork. Drain off excess fat. Stir in bacon mixture, mushrooms, carrots, celery, tomatoes, tomato sauce, wine, stock, basil, oregano, salt and pepper to saucepan. Cover, reduce heat and simmer one hour, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Serve sauce over hot pasta.

- Heat oven to 375 degrees F.
- Cook pasta in large saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last minute.
- Meanwhile, cook and stir chicken and basil in large nonstick skillet sprayed with cooking spray on medium-high heat 3 min. Stir in tomatoes and spaghetti sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.
- Drain pasta mixture; return to pan. Stir in chicken mixture and 1/2 cup mozzarella; pour into 2-qt. casserole sprayed with cooking spray.

PENNE BOLOGNESE
This is a streamlined version of the classic Bolognese meat sauce that is fairly low fat. The penne pasta is perfect for trapping the chunky sauce, but you can substitute other sturdy pasta shapes, such as rigatoni or ziti. Serve with a salad, crusty garlic bread and a good Italian red wine for a great meal!

- In a large non-stick skillet, heat the oil until hot but not smoking over medium heat.
- Add the onion and cook, stirring frequently, until softened, about 5 minutes.
- Stir in the carrots,celery, and 1/3 cup of water and cook until the vegetables are tender and the liquid has evaporated, about 5 minutes longer.
- Stir in the beef and cook until no longer pink, about 4 minutes.
- Add the wine and cook until the liquid has evaporated, about 5 minutes.
- Stir in the tomato paste, 2/3 cup of the milk, the salt, pepper, and oregano, reduce to a simmer, and cook,stirring frequently until the milk has been absorbed.
- Continue to cook until the sauce is thick and creamy, gradually adding the remaining 1 cup milk until all has been absorbed, about 20 minutes longer.
- Meanwhile, cook the pasta in a large pot of boiling water until just tender.Drain well.
- Transfer the sauce to a large bowl, add the pasta, the parsley, if desired, and the Parmesan and toss to combine all.
- Spoon the Penne Bolognese into 4 bowls and serve with additional Parmesan cheese, if desired.
PASTA BOLOGNESE WITH CHEESE
If you like lasagna, you'll love this dish, and the addition of the red wine takes this over the top! (We're not wine drinkers, but it makes this dish "totally money", as my nephew would say.) Nary a single human being has crossed paths with it and NOT loved it. I like to cook the bacon and mushrooms separately first - and longer than stated below so that they brown and crisp up better, but the flavor will be the same if you follow the instructions as is. We just gotta have our carcinogens! ;)

Steps:
- Fry the onion, garlic, carrot and celery in the olive oil until softened.
- Add the bacon and fry for 3-4 minutes.
- Add the mushrooms, fry for 2 minutes, then fry the beef until brown.
- Add the wine, tomato paste, 3 tablespoons water, tomatoes and the sprig of fresh thyme; bring to a boil; cover and simmer for 30 minutes.
- Preheat the oven to 400 F; Cook the pasta.
- Meanwhile, place the milk, butter and flour in a saucepan; heat gently, whisking until thickened.
- Stir in the mozzarella and Parmesan cheeses and season.
- Drain the pasta and stir into the cheese sauce; uncover the Bolognese sauce and boil rapidly for 2 minutes.
- Spoon the sauce into a casserole; top with the pasta mixture and sprinkle with the remaining Parmesan.
- Bake for 25 minutes or until golden; Garnish with basil and serve hot.

- Crumble the ground beef into a large skillet over medium-high heat. Add onion and cook, stirring to break up large chunks, until no longer pink. Drain off excess grease. - In a deep large skillet, brown the meat seasoned with pepper, over med-high heat.
- Add in garlic, crushed red pepper, and allspice.
- Grate the onion, using a hand-held grater, directly over the pan.
