Calling all dinosaur lovers. Celebrate with a foolproof cake made using Betty Crocker™ Super Moist™ cake mix, vanilla frosting and decorated with yellow candies.

1 box Betty Crocker™ Super Moist™ yellow or devil's food cake mix
1 cup water
1/2 cup vegetable oil
3 eggs
Tray or cardboard (18x14 inches), covered with wrapping paper and plastic food wrap or foil
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
Betty Crocker™ green gel food color
Assorted yellow round candies (candy-coated chocolate candies, candy coating wafers, chewy round candies)
Chocolate chips

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray two 8- or 9-inch round cake pans. In large bowl, beat cake mix, water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter between pans. Bake and cool cake as directed on box for 8- or 9-inch rounds. For easier handling, freeze cooled cake 45 minutes or until firm.
  • Cut 1 cake in half lengthwise, making 2 half-circles. Sculpt 1 half-circle into a head and the other half-circle into a tail. For body, cut 1-inch slice from edge of remaining whole cake. From cut edge, cut out a small inverted U-shaped piece. Place body on tray; arrange head and tail pieces next to body.
  • Spoon frosting into large bowl. Stir in enough food color until desired green color. Attach cake pieces with a small amount of frosting. Frost cake with a thin layer of frosting to seal in crumbs. Refrigerate or freeze cake 30 to 60 minutes to set frosting. Frost entire cake.
  • Decorate with yellow candies. Add chocolate chips for eyes. Store loosely covered.

Intense Chocolate Mousse Cake image

There is very little that needs to be said about a chocolate mousse cake. This one lives up to its name. It is gloriously intense. But the whisked egg whites ensure that it has a balancing lightness. A slice of it, with a smattering of fresh raspberries and a dollop of cream, or better still, sour cream, is the perfect finale. It may also invite a certain inelegant gluttony at the end. I have noticed that even those who claim not to go in for desserts come back for more.

10 ounces bittersweet chocolate
9 tablespoons unsalted butter
6 large eggs, room temperature and separated
Pinch of salt
3/4 cup sugar
2 tablespoons brandy
1 teaspoon confectioners' sugar

Steps:

  • Heat oven to 350 degrees. Position the oven rack in lower center of the oven. Cover the outside of a 9-inch springform pan with a double layer of foil. Using a microwave oven or double boiler, melt together chocolate and butter; set aside to cool slightly.
  • In a bowl, whisk together egg yolks and 1/2 cup sugar until pale, frothy and increased in volume. Whisk in brandy, then fold in chocolate mixture. Place a kettle of water over heat, and bring it to a boil. Using an electric mixer, whisk egg whites and salt until thick. Add remaining 1/4 cup sugar, and continue to whisk until stiff and shiny but not dry.
  • Fold about 1/2 cup whisked egg whites into the chocolate mixture to lighten it. Gently fold in remaining whites, being careful not to let the mixture deflate. Pour mixture into lightly-buttered springform pan, and place pan in a roasting pan. Add boiling water to roasting pan to come halfway up side of springform pan. Bake for 45 minutes; top of cake will be hard and inside will be gooey.
  • Remove cake pan from water, and place on a rack to cool completely. Unwrap foil and remove side of springform pan. Place cake on a serving platter. Just before serving, dust top with confectioners' sugar passed through a sieve.

1 1/2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
3 drops green food color
1 tube (0.68 oz) Betty Crocker™ black decorating gel
1 tube (0.68 oz) Betty Crocker™ green decorating gel
Red jelly bean

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Make and bake cake as directed on box for 13x9-inch pan. Cool 10 minutes; remove from pan to cooling rack. Cool completely, about 1 hour. Refrigerate or freeze cake 30 to 60 minutes or until firm.
  • Cut cake as shown in diagram. Arrange pieces on tray to form dinosaur as shown in diagram. In small bowl, tint frosting with green food color. Attach pieces with small amount of frosting.
  • Frost cake with thin layer of frosting to seal in crumbs. Refrigerate or freeze 30 to 60 minutes to set frosting. Spread remaining frosting evenly over cake. Let frosting set a few minutes. Carefully cover with paper towel and gently pat to give frosting a textured appearance; remove towel. Outline scales, legs, mouth, nose and eye with black gel. Decorate with green gel and jelly bean eye. Store loosely covered.

2 cups sugar
3/4 cup unsweetened cocoa powder

1 cup milk
1 cup strong brewed coffee
3/4 cup vegetable oil
2 large eggs
dreamy chocolate mousse mix (Makes about 4 1/2 cups)
1 (1/4 ounce) envelope unflavored gelatin
3 tablespoons cold water
1/4 cup boiling water
1 cup sugar
1/2 cup unsweetened cocoa powder
3 cups heavy whipping cream
chocolate fudge frosting (Makes about 3 cups)
1 cup sugar
1 cup heavy whipping cream
5 (1 ounce) unsweetened chocolate squares
10 tablespoons butter
1 cup confectioners' sugar
grated chocolate, chocolate curls

Steps:

  • Preheat oven to 350°. Grease and flour 3 (9-inch) square or round cake pans. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. Add mik, coffee, oil, and eggs. Beat at medium speed with an electric mixer until smooth.
  • Pour evenly into prepared pans and bake for 23 to 25 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes, Remove from pans, and let cool completely on wire racks.
  • Using a serrated knife, cut cake layers in half horizontally to make 6 layers. Place 1 layer, cut side up, on a cake plate, spread with one-fifth of Dreamy Chocolate Mousse. Repeat procedure with remaining cake layers and mousse. Freeze cake for 1 hour. Spread Chocolate Fudge Frosting evenly over top and sides of cake. Garnish sides of cake with grated chocolate. Garnish top of cake with chocolate curls if desired.
  • Mousse:.
  • In a small bowl, soften gelatin in 3 tablespoons cold water. Let stand for 2 minutes. Add boiling water, stirring until gelatin dissolves; set aside.
  • In a small bowl, combine sugar and cocoa powder.
  • In a medium bowl, beat cream at medium speed with an electric mixer until foamy. Gradually add sugar mixture, beating until stiff peaks form. Stir in gelatin mixture. Cover and chill for 4 hours.
  • Chocolate Fudge Frosting
  • In a medium saucepan, combine sugar and cream. Bring to a boil over medium-high heat; reduce heat, and simmer for 6 minutes, stirring frequently. Remove from heat; add chocolate and butter, stirring until melted and smooth. Let cool for 10 minutes. Whisk in confectioner's sugar. Let mixture cool until it reaches a spreadable consistency.
