2 teaspoons olive oil
1 onion, diced
1 green bell pepper, diced
3 jalapeno pepper, seeds and membranes removed, and sliced into thin strips (or to taste)
1 pound extra lean ground beef
1 clove garlic, minced
2 teaspoons seasoned salt
2 teaspoons chili powder
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon red pepper flakes
1 teaspoon white sugar
1 (16 ounce) can tomato sauce
1 (15 ounce) can black beans, drained and rinsed
1 (14.5 ounce) can diced tomatoes

Steps:

  • Heat olive oil in a pot over medium heat. Cook and stir onion, bell pepper, and jalapeno pepper in hot oil until tender, about 5 minutes. Break ground beef into small pieces and add to vegetable mixture; cook and stir, continuing to break beef into smaller pieces, until beef is completely browned, 5 to 7 minutes. Add garlic, seasoned salt, chili powder, oregano, cumin, red pepper flakes, and sugar to the beef mixture; cook and stir until you smell the garlic, about 1 minute more. Pour tomato sauce, black beans, and diced tomatoes into the pot; stir.
  • Bring the mixture to a boil, reduce heat to low, place a cover on the pot, and continue cooking until the beans and tomatoes are tender and the flavors blend, 30 minutes to 2 hours.

6 cups Romaine lettuce ((shredded))
2 medium Roma tomatoes ((diced))
1 cup Mixed Italian olives ((pitted))
1/4 medium Red onion ((sliced))
1/4 cup Pickled banana peppers ((sliced))
6 ounces Italian meats ((diced; I used pepperoni and salami))
1/2 cup Olive oil
1 tablespoon Red wine vinegar
1 tablespoon Italian seasoning
1 pinch Sea salt
Black pepper

Steps:

  • Whisk the ingredients for the dressing together and set aside.
  • Toss all of the salad ingredients together and toss with dressing. Easy as that!

This is a no brainer and super easy to toss together and bring to a picnic or cookout. Some of my girlfriends always ask me to bring this along when we get together.

4 - cucumbers
2 package(s) cherry tomatoes
1 large fresh mozzarella ball (or square)
1 bottle(s) ken's italian dressing (large bottle)

Steps:

  • Rinse and peel the cucumber. I usually leave a couple stripes of skin on the cuke...just to leave some color. Then cut the cucumber into slices and than into halves.
  • Rinse and cut the cherry tomatoes in half.
  • Cut the mozzarella into cubes.
  • Put all of these ingredients into a bowl and add the Ken's Italian Dressing. Make sure to cover all of the veggies and cheese with the dressing, but don't drown them!
  • Let marinade and chill for about one hour. Serve and enjoy!!

2 cans Sardines ((packed in olive oil or water))
1 tablespoon Lemon juice
3 tablespoons Tapioca flour
1 pinch Cayenne pepper
1 pinch Chili powder
1 pinch Cumin
1 pinch Sea salt
1 pinch Black pepper
3 tablespoons Coconut oil ((for frying))
2 cups Watercress ((including stems))
2 cups Arugula
1/2 cup Fresh parsley ((minced))
4 small Purple sweet potatoes
1 tablespoon Whole grain mustard
1 tablespoon Apple cider vinegar
1/2 teaspoon Lemon juice
1 dash Hot sauce
1/4 cup Olive oil
Sea salt ((to taste))
Black pepper ((to taste))

Steps:

  • Place the sardines in a medium bowl with their juices and squeeze the lemon over them. Allow to marinate for 30 minutes.
  • Bring a large pot of water to a boil and dice the sweet potatoes into bit size pieces. Place in boiling water and cook 7-10 minutes or until tender but not mushy. Drain and set aside.
  • For the dressing, whisk together the mustard, vinegar, lemon juice, and hot sauce. Stream in the olive oil while whisking to incorporate. Season with salt and pepper to taste.
  • Mix together the tapioca starch and spices. Heat the coconut oil over medium-high heat and remove sardines from marinade, dredge the sardines in the tapioca. Pan fry 3 minutes per side until nicely browned and crisp.
  • Toss the water cress, arugula, parsley, and sweet potatoes with the dressing. Top with sardines and serve.

  • To make Southern Chicken Salad, get your eggs and chicken cooking at the same time. Start by adding your eggs to cold water in a large saucepan along with a splash of vinegar. Heat your saucepan on High until your water boils, then cover your pan and turn your burner off. Do not remove your saucepan but let it continue to stay on the now turned off stove burner. Let sit for 12 minutes and then move your eggs to either a bowl filled with ice and water or run them under cold water for a few minutes until they cool down are able to be handled. Lightly crack your egg, peel off the shell and set aside.
  • While your eggs are cooking, preheat your oven to 350 degrees, spray a baking sheet with non-stick spray and then lightly coat your chicken breasts with olive oil, salt and pepper. Transfer your chicken to the baking pan and bake for 30 minutes. Remove from the oven and let cool for 5-10 minutes. Using a fork, gently pull apart and shred your chicken, moving the shredded chicken to a large mixing bowl as you go.
  • Once all of your chicken has been shredded, move your eggs to a cutting board and either chop or mash your hard boiled eggs before adding them to the mixing bowl. Add the remaining ingredients and stir well to combine. Cover the bowl with plastice wrap and move to the refrigerator. Let chill for at least 2 hours but overnight is better. Serve your Southern Chicken Salad with crackers, veggies or piled high as Chicken Sandwiches.
