- In a small bowl, mix warm water and 1 teaspoon sugar; add yeast and whisk until dissolved. Let stand until bubbles form on surface. In a large bowl, whisk 3 cups flour, salt, remaining 1 teaspoon sugar and, if desired, dried herbs. Make a well in center; add yeast mixture and oil. Stir until smooth. Add enough remaining flour to form a soft dough. , Turn onto a floured surface; knead, adding more flour to surface as needed until no longer sticky and dough is smooth and elastic, 6-8 minutes. Place in a large greased bowl; turn once to grease top. Cover and let rise in a warm place for 30 minutes; transfer bowl to refrigerator and chill overnight. Allow dough to come to room temperature, about 30 minutes, before rolling.

SEMOLINA BREAD
This Semolina Bread Recipe produces an artisan loaf with a crisp crust and light, chewy crumb. It is best baked in a Dutch oven, but the recipe is very flexible and adaptable.

- In a large mixing bowl or in the bowl of a stand mixer, combine the water, yeast and 2 cups of the all purpose flour. Mix with the paddle on low speed until it forms a thick batter. Cover the bowl and set aside for 30 minutes.
- If using a stand mixer, switch to the dough hook. Add the salt and the semolina flour and mix until the dough begins to form a ball around the hook. Add the remaining 1/4 cup of all purpose flour. If mixing by hand add the flour using a wooden spoon and/or a plastic bowl scraper. Knead the dough for 5 minutes until it is smooth and elastic.
- Place the dough into a lightly oiled bowl, turn once to coat the dough. Cover the bowl and set it aside at room temperature for 1 - 1 1/2 hours or until doubled in size. At this point you can cover the bowl tightly, refrigerate overnight and finish shaping and baking in the morning or continue to bake the same day.
- Use the semolina/all purpose mix to dust a proofing basket or wooden peel. Turn the dough out onto a lightly floured surface. Knead 4-5 times, then use your cupped hands to form the dough into a smooth ball and place the dough, smooth side down, into the proofing basket. If you don't have a proofing basket place the dough directly onto a sheet of parchment paper or on the wooden peel.
- Cover the dough and leave in a warm place until it's almost doubled in size and it springs back slowly when poked, about 1 hour depending on the room temperature and dough temperature. Meanwhile, preheat the oven to 425°F. Place a Dutch oven with a lid into the oven to preheat.
- If the loaf is in a proofing basket, place a sheet of parchment over the dough and gently flip it over. Use a single edge razor or very sharp knife to cut a 1/4" deep X or square across the top of the loaf. Remove the preheated pan from the oven and remove the lid. Use the parchment to lift the loaf into the Dutch oven. If you don't have a Dutch oven, slide the parchment paper onto a baking sheet or onto a preheated pizza stone.
- Replace the lid on the pot and slide it into the oven. Bake for 20 minutes. Remove the lid from the Dutch oven. The loaf should be well risen and just beginning to brown.
- Continue baking another 20 minutes until the loaf is nicely browned and beginning to crisp. Remove the pan from the oven. Use the parchment to lift the loaf out of the pan. Use the parchment to place the loaf directly onto the rack in the oven. Bake another 5-10 minutes until the loaf is deeply browned and very crisp. Total baking time is about 40-50 minutes. If you are baking directly on a pizza stone or sheet pan the baking time may be closer to 30 minutes.
- Cool completely on a wire rack before slicing.

- Arrange the frozen garlic toast on the prepared baking sheet.

PIZZA DOUGH - PROFESSIONAL 3 WHEAT BLEND
Why pay $5.00 or more for a great pizza? Here's the best dough recipe you'll ever find for homemade pizza! I've been using this recipe for over 7 years and I'm a bit of a pizza freak. This makes a medium crust, lightly crisp on the outside and a chewy texture. You MUST use the Semolina flour in the recipe as that's what provides the beautifully "chewy" texture. (I use Bob's Red Mill). By "par-baking" and freezing the crusts, I can have a delicious, inexpensive homemade pizza in about 1/2 hour whenever the mood strikes - with no delivery charge! The 9-inch pie will satisfy two people quite nicely. You'll be able to make two 13-inch pies when guests are over or a lovely 16 inch if you'd like. As of 2019, I've started making this as a "No Knead" recipe. Mix the ingredients and let rise till doubled+. A bit easier and just as good!

- Bread maker Method:.
- 1. Add warm water, sugar and yeast to your bread maker pan.
- 2. Add the three types of flours. Remember: it's the Semolina that makes this recipe unique.
- 3. Add the salt.
- 4. Process in the bread maker on the "Dough" setting including the rising time.
- No Knead Method:.
- Mix dry ingredients then add water. Mix in a large bowl with the stick end of a wood spoon and let rise till doubled +.
- When finished, the dough will be easy to work and slightly sticky. Rub your hands with olive oil so the dough doesn't stick. For my use, I divide the finished dough into 6 pieces. Use olive oil to season 6, 9 inches cake pans and press the dough into each pan. Brush additional olive oil onto the top of each then cover the pans and let the dough rise again for about a half hour. After the third rise, press to the edges of the pan. You can also divide into two 13 inch crusts or one 16 inch.
- Next, prick the dough with a fork to prevent air bubbles then, par-bake the crusts for 5 minutes in a 425 degree oven. Place the cooked crusts on a rack and when cool, the 9 inch size fits in 5 gal freezer bags to freeze for use whenever you want a great pizza. I've tried these not par-baking first but it seems par-baking makes the better "lite crunch" on the outside of the crust and is best for freezing.
- When making a pizza from a frozen crust, thaw the crust first (in the microwave for 12 seconds on high). Place the crust back into a 9 inch pan, which has again been seasoned with olive oil and brush the top of the crust again. If you use a pizza screen, brush top and bottom. Apply the toppings of your choice and bake for 12-15 minutes at 425 degrees (less time if using a screen). You'll have a finished pizza that has a light crunch on the outside and a delightfully chewy texture. When checking cooking time, look for a golden brown edge on the crust.

100% WHOLE WHEAT PIZZA DOUGH

- In a large bowl, combine lukewarm water, yeast and honey. Mix with a spoon, then let sit until foamy, about 5-8 minutes.
- Add in the olive oil, whole wheat flour and salt stirring with a spoon until the dough comes together but is still sticky. Using your hands, on a floured surface, form the dough into a ball. Knead the dough for 5 minutes or until smooth.
- Rub the same bowl with olive oil, then place the dough inside, turning to coat. Cover with plastic wrap and place in a warm place for 1-2 hours or until doubled in size.
- Once the dough has doubled in size**, punch it down and divide in two balls. Sprinkle cornmeal onto a floured surface and roll out each dough. Alternatively, use floured hands to stretch the dough into a circle, then place on the prepared baking sheet and stretch a little more, pinching the edges of pizza dough to form a crust. To get the dough super thin, briefly roll with a rolling pin.
- Garnish the pizza with toppings of your choice and bake at 450°F (230°C) for 15-20 minutes***, or until the edge is golden and crispy.

- Mix the yeast, salt, sugar, olive oil and water in a 12 quart capacity bucket. (This recipe can be halved if you do not have a large enough container.)
- Stir in the flour until no dry pockets remain. You do not have to knead it, but I find the easiest way to have it thoroughly mixed is to wet one hand and forearm and use that one to mix it in completely.
- Cover lightly (Do not put a lid on tight. Trust me.) and let rest at room temperature until the dough has doubled and collapsed. (Or at least until dough is very, very puffy.) This takes a less than 2 hours in warm weather and more than 2 hours in cool or cold temperatures.
- You can use the dough immediately. If you have leftovers, you can store them in the container, lightly covered (again, do not use a tight lid!) for up to 10 days. If you need to store the dough beyond that time, divide into individual pizza sized servings. Freeze in re-sealable plastic bags that have about a teaspoon of olive oil smeared around inside each for up to 3 months.
