ROASTED BABY POTATOES
Quick and easy recipe for roasted baby potatoes. Bake them at the same time as you cook your main dish! Can also be used as a quick appetizer! These were so good you don't even need butter or salt to taste. Made the mistake of having them done before the main dish and they were almost all gone by the time dinner started!

WHOLE ROASTED POTATOES
This recipe is quick because you cook the potatoes in the microwave and then finish them in the oven. The unique thing about this is putting garlic and onion powder on the skin of the potato to give the skin great flavor. The inside is nice and creamy while the outside is crispy and flavorful. I make these once a week.

Steps:
- Wash the potatoes but do not peel them.
- Meanwhile, preheat the oven to 400.
- Put the potatoes on a microwavable plate and put them in the microwave for 6 or more minutes(depending on the size) until they are done all the way through and a knife can be inserted easily.
- Remove the potatoes(be careful they are hot)and coat the skin with the olive oil.
- Next, generously, put salt, pepper, the garlic powder and the onion powder all over the skin. (I never use exact amounts, just put as much as you want. I like a lot of the powders!).
- Put the potatoes directly on the rack of the oven for about 5- 10 minutes turning once. The skin will get nice and crisp.
- Remove the potatoes and enjoy. You may want a little butter on the potato.

WHOLE ROASTED TOMATOES
When you spot a good deal on plum tomatoes, buy a bunch. Roasting preserves them for later use and maximizes their sweetness. Use roasted tomatoes in Roasted-Tomato Pasta with Basil, Beef and Tomato Stew, and Spiced Tomato Soup.

- Preheat the oven to 425 degrees Fahrenheit with a rack in the middle of the oven. Line a large, rimmed baking sheet with parchment paper to prevent the potatoes from sticking.
- Slice the potatoes into 2-inch chunks (slice small potatoes in half, larger potatoes into quarters, and so on). Place them on the prepared baking sheet.
- Drizzle the olive oil over the potatoes, then sprinkle on the garlic powder, salt, and rosemary, if using. Toss with your hands until the potatoes are evenly coated in the mixture (it might seem like you don’t have enough oil, but you do—keep going!). Arrange the potatoes in an even layer across the pan with their flat edges against the pan.
- Roast the potatoes for 40 to 45 minutes, stirring halfway, until the potatoes are deeply golden (check the undersides) and easily pierced through by a fork. Stir in the parsley, if using, and season to taste with additional salt and some black pepper (careful, the potatoes are hot). Serve promptly.

- Parboil the potatoes in salted water for about 5 minutes. Some people prefer to boil them longer; up to 8 minutes or so. This will produce a thicker and crispier jacket to the potato if you prefer.
- Meanwhile in a 375 degree F oven, heat a baking pan of sufficient size to hold your potatoes without crowding them. A glass or metal pan is fine, as long as it is well heated beforehand. This will help to prevent the potatoes from sticking to the pan.
- After parboiling, drain the potatoes and let them stand for 5 minutes. Then toss the potatoes with the olive oil, salt, pepper and garlic cloves.
- Transfer the seasoned potatoes, garlic and oil to the hot baking pan. These should sizzle as they hit the pan; a good indication that they will not stick.

- Wash, dry, and cut potatoes in half. Arrange cut side down on the baking sheet. Brush the tops with oil until coated.
- Sprinkle over salt, pepper, paprika, garlic powder, onion powder, and sugar. Place in the oven on the middle rack.
- Roast for 20 minutes. Check for tenderness by poking with a knife. If it slides in and out with no resistance, potatoes are done.* Larger potatoes, or thicker potatoes, may require an additional 5-10 minutes.
