- Preheat the oven to 425 degrees F.
- Combine yeast, honey and warm water in the bowl of a stand mixer fitted with the paddle attachment. Let sit for 5 or 6 minutes, or until mixture begins to foam. While yeast mixture is sitting, combine whole-wheat flour, all purpose flour and 2 teaspoons salt in a bowl and whisk to combine. Add flour mixture and oil to yeast mixture and mix on low speed until just incorporated and dough begins to form. Switch to dough hook and mix on low to medium speed for 2 to 3 minutes, or until dough is smooth but still pliable. If the dough is very sticky, add all-purpose flour, by the tablespoon, as necessary.
- Remove the dough from the bowl and roll into a long log. Cut log into 16 pieces and roll each piece into a 10 by 1-inch tube. Spray 2 baking sheets with cooking spray. Twist each dough stick several times and arrange sticks on cookie sheets, about 1 to 1 1/2 inches apart. In a small bowl beat the egg with water and brush on dough. Combine 1 tablespoon salt with sesame seeds and sprinkle evenly among dough pieces. Bake for 18 to 20 minutes, or until a golden crust has formed but pretzels are still soft inside. Remove from oven and cool completely.

I can only imagine that these are better for you than what the pretzel vendors churn out in the malls. ;) I like to enjoy them with garlic-horseradish mustard and a tall, dark beer. Hmmm, suppose then that circumnavigates the whole 'better for you thing'...

- Dissolve yeast, sugar and salt in warm water: let yeast mixture stand 5 minutes, or until foamy.
- Combine flours and cheese in large mixing bowl.
- Add yeast mixture; beat at low speed until well-blended.
- Turn dough out onto lightly floured surface, and knead until smooth.
- Cut dough into 32 pieces, using kitchen shears dipped in flour, or a floured dough slicer.
- Shape each piece into a ball.
- Roll each ball on a lightly floured surface to form a rope about 14" long.
- Twist each one into a pretzel shape; place on baking sheets coated with cooking spray.
- Combine egg white and water; mix well.
- Brush each pretzel with egg white mixture.
- You may also sprinkle sesame seeds on top.
- Bake at 425° for 12- 15 minutes, or until lightly browned.

- Combine all the dough ingredients in the bowl of a stand mixer, and mix with the paddle attachment until somewhat combined (or just mix by hand with a wooden spoon). Change to the dough hook and knead on medium low for 10 minutes. The dough shouldn’t be sticky, just slightly tacky to the touch. Place the dough in a ziploc bag and let the dough rise for 30 minutes.
- Preheat the oven to 450 degrees F, and lightly grease a baking sheet with vegetable oil. You could also do parchment paper if you can find one that’s rated high enough (most parchment papers I’ve seen only go up to 420 degrees F).
- Remove the dough from the bag and place onto a clean countertop. Divide the dough into 8 pieces (just cut it with a knife).
- Whisk to combine the warm water and baking soda and heat in the microwave for 1 minute. FYI it’s not going to dissolve completely, and that’s okay.

- Preheat oven to 425°F (218°C). Line baking sheet with a silicone baking mat or parchment paper. The pretzels can stick to parchment, so give it a light spray with nonstick spray or lightly grease with butter. Set aside.
- Dissolve yeast in warm water. Stir with a spoon until fairly mixed, about 1 minute. Some clusters of yeast will remain. Add salt and sugar; stir until fairly combined. Slowly add 3 cups of flour, 1 cup at a time. Mix with a wooden spoon until dough is thick. Add 3/4 cup more flour until the dough is no longer sticky. If it is still sticky, add up to 1/2 cup more. Poke the dough with your finger – if it bounces back, it is ready to knead.
- Turn the dough out onto a floured surface. Knead the dough for about 3 minutes and shape into a ball. With a sharp knife, cut ball of dough into 1/3 cup sections. This measurement does not have to be exact – use as much or little dough for each pretzel as you wish – the size of the pretzel is completely up to you.
- Roll the dough into a rope with an even diameter. My ropes were twenty inches long. This measurement will depend how large you want the pretzels. Once you have your long rope, take the ends and draw them together so the dough forms a circle. Twist the ends, then bring them towards yourself and press them down into a pretzel shape. - Roll half of the dough into an 8x6-inch rectangle. Cut into twenty-four 8x1/4-inch strips. Repeat with the remaining dough. Gently pull strips into 10-inch ropes. Shape each pretzel by crossing one end over the other to form a circle, overlapping about 2 inches from each end. Take one end of dough in each hand and twist once at the point where the dough overlaps. Carefully lift each end across to the edge of the circle opposite it. Tuck ends under edges to make a pretzel shape; moisten ends and press to seal.
