SPINACH AND ARTICHOKE PIZZA



Spinach and Artichoke Pizza image

My from-scratch pizza has a whole wheat crust flavored with beer. Top it with spinach, artichoke hearts and tomatoes, then add chicken or ham and fresh basil if you want to include meat. -Raymonde Bourgeois, Swastika, Ontario

Number Of Ingredients 13

1-1/2 to 1-3/4 cups white whole wheat flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon each dried basil, oregano and parsley flakes
3/4 cup beer or nonalcoholic beer
TOPPINGS:
1-1/2 teaspoons olive oil
1 garlic clove, minced
2 cups shredded Italian cheese blend
2 cups fresh baby spinach
1 can (14 ounces) water-packed quartered artichoke hearts, drained and coarsely chopped
2 medium tomatoes, seeded and coarsely chopped
2 tablespoons thinly sliced fresh basil

Steps:

  • Preheat oven to 425°. In a large bowl, whisk 1-1/2 cups flour, baking powder, salt and dried herbs until blended. Add beer, stirring just until moistened., Turn dough onto a well-floured surface; knead gently 6-8 times, adding more flour if needed. Press dough to fit a greased 12-in. pizza pan. Pinch edge to form a rim. Bake until edge is lightly browned, about 8 minutes., Mix oil and garlic; spread over crust. Sprinkle with 1/2 cup cheese; layer with spinach, artichoke hearts and tomatoes. Sprinkle with remaining cheese. Bake until crust is golden and cheese is melted, 8-10 minutes. Sprinkle with fresh basil.

The meaty artichoke hearts provide a nice balance to the light and creamy ricotta cheese. Take premade dough out of the fridge a few hours before you plan on using it to let it rise.

4 Steamed Artichokes
1 tablespoon fresh lemon juice
1 tablespoon olive oil, plus more for baking sheet
1 pound whole-wheat pizza dough
1 cup fresh ricotta cheese
2 plum tomatoes, thiny sliced crosswise
1/4 cup pitted Kalamata olives, halved
3 ounces Pecorino Romano cheese, shaved with a vegetable peeler
1/4 cup fresh basil leaves

Steps:

  • Use a paring knife to trim away all of the artichokes' fibrous leaves and chokes so only the hearts remain. Slice the hearts thinly crosswise. In a small bowl, toss artichoke hearts with lemon juice.
  • Preheat oven to 450 degrees. Lightly oil a baking sheet. Stretch dough on prepared sheet and brush with oil, making sure to coat edges well. Scatter spoonfuls of ricotta over dough. Top with tomatoes, artichokes, olives, and 3/4 of the Pecorino. Season with salt and pepper.
  • Bake pizza until browned, 20 to 25 minutes. Top cooked pizza with basil and reserved Pecorino.

Asparagus & Purple Artichoke Pizza image

Lemon and pecorino top off this delicious and easy homemade pizza that gets vibrant color from asparagus and artichoke. Shiso is a fuzzy-leafed herb in the mint family that's used in a variety of Asian cuisines. Devoted fans grow it in their gardens; look for it at Asian and farmers' markets. Note: Baby artichokes hardly have chokes, so you can use a paring knife to extricate any fluff.

1 tablespoon cornmeal
1 pound whole-wheat pizza dough, at room temperature
2 tablespoons extra-virgin olive oil, divided
2 cloves garlic, sliced
¼ teaspoon kosher salt, divided
⅛ teaspoon crushed red pepper
1 ½ cups shredded part-skim mozzarella cheese
2 baby purple artichokes
1 teaspoon lemon zest
2 tablespoons lemon juice
8 ounces purple asparagus, trimmed
2 ounces shaved pecorino cheese (1/2 cup)
¼ teaspoon ground pepper
Purple shiso leaves for serving

Steps:

  • Position rack in lower third of oven; preheat to 450 degrees F. Sprinkle a baking sheet with cornmeal.
  • Roll out dough on a lightly floured surface into a 12-inch oval. Transfer to the prepared pan and brush with 1 tablespoon oil. Sprinkle the dough with garlic, 1/8 teaspoon salt and crushed red pepper, then top with mozzarella. Bake until bubbling and golden brown, 12 to 15 minutes.
  • Meanwhile, snap the tough outer leaves off artichokes and cut off the top two-thirds, down to the heart. Peel the tough stem. Cut the artichokes in half and remove any fuzzy choke. Thinly slice the artichokes and toss in a bowl with lemon juice. Shave asparagus into long strips using a vegetable peeler; thinly slice what can't be shaved. Add the asparagus to the bowl along with pecorino, pepper, the remaining 1 tablespoon oil and 1/8 teaspoon salt; toss to coat.
  • Top the pizza with the vegetables and sprinkle with lemon zest and shiso, if using.
