Everybody raves over these -- they have a richer flavor than ordinary chocolate chip cookies! This is for people with access to freshly-ground flour; it's just not the same with store bought or all white flour. Pecans can be used in place of the walnuts.

¾ cup margarine
1 cup white sugar
1 cup light brown sugar
1 ½ teaspoons vanilla extract
2 eggs
2 cups sifted whole wheat pastry flour
1 cup all-purpose flour
¾ teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Generously grease cookie sheets.
  • In a medium bowl, cream together the margarine, white sugar and brown sugar until smooth. Stir in the vanilla and eggs. Combine the whole wheat flour, all purpose flour, baking soda and salt, gradually blend into the creamed mixture. Fold in chocolate chips and walnuts if desired. Drop by rounded spoonfuls onto the prepared cookie sheet.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. For bar cookies, press dough into a 10x15 inch jelly roll pan and bake for 12 to 15 minutes.

1 egg

1 package (12 ounces) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 375°F.
  • Mix sugars, butter, vanilla and egg in large bowl. Stir in flour, baking soda and salt (dough will be stiff). Stir in chocolate chips. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheet.
  • Bake 8 to 10 minutes or until light brown (centers will be soft). Cool slightly; remove from cookie sheet. Cool on wire rack.

1 cup butter, softened
¾ cup white sugar
¾ cup brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups whole wheat flour

1 cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cream butter, white sugar, and brown sugar together in a large bowl until smooth. Add eggs and vanilla extract and mix until light and fluffy. Add whole wheat flour, baking soda, and salt and mix. Stir in chocolate chips and walnuts to make a very crumbly dough. Use hands and spoon to press and compact dough.

1/2 cup quick cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup brown sugar
1/4 cup vegan butter substitute, softened
1/4 cup melted coconut oil
1/4 cup almond butter
1 tablespoon ener-g egg replacer (What is ener-g?)
5 tablespoons water
1 teaspoon vanilla extract
1/2 cup vegan chocolate chips
1/4 cup dried cranberries
1/4 cup chopped pistachios
whole wheat flour - all purpose flour
brown sugar - white sugar
vegan butter - dairy butter or solidified coconut oil
coconut oil - any other neutral flavor oil
almond butter - peanut butter
add ins - any dried fruit, nuts, chocolate chips of your choice

Steps:

  • Preheat oven to 350F/180C for 15 minutes. Beat together the egg replacer powder and water; set aside.
  • In a medium bowl stir together the dry ingredients.
  • In a large bowl beat together the brown sugar, vegan butter substitute and oil. Once it is smooth add the almond butter, ener-g mix and vanilla extract and beat well.
  • Fold in the flour mix and combine well. Stir in the chocolate chips, cranberries and pistachios.
  • Scoop out 1 tablespoonful of dough for each cookie and place it on a baking sheet 2 inches apart. Flatten the dough lightly with fingers.
  • Bake for 12-14 minutes, or until cookies are golden brown and dry on top. Remove the cookie sheet out of the oven and leave the cookies on it for another 5 minutes before transferring to a wire rack to cool completely. Store the cookies in an air tight container.

1 teaspoon baking soda
1 teaspoon salt
½ cup white sugar
½ cup firmly packed brown sugar
2 sticks butter (1 cup), at room temperature
2 large eggs
1 teaspoon pure vanilla extract
1 cup rolled oats
1½ - 2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large mixing bowl, cream the butter and sugars until pale in color and fluffy in texture. Add the eggs and vanilla extract and beat until combined.
  • In a separate bowl, combine the flour, baking soda, salt.
  • Add the flour mixture to the butter mixture and beat until combined. Add the oats and use a wooden spoon to stir until combined. Add the chocolate chips and stir until combined.
  • Drop the cookie batter onto a cookie sheet using an ice cream scoop or spoon, in about 1-inch rounds. Bake for 8-10 minutes.

3/4 cup butter (I use Crisco) or 3/4 cup shortening (I use Crisco)
1 cup brown sugar, firmly packed
1/2 cup white sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
2 large eggs (I use Ener-G egg replacer)
1 teaspoon vanilla extract
1 3/4 cups whole wheat pastry flour
2 cups rolled oats
1 cup chocolate chips (Tropical Source chocolate chips for vegans)

Steps:

  • Preheat oven to 375°.
  • Use a mixer to beat butter/shortening in a large mixing bowl; add sugars, baking powder and baking soda, and blend well.
  • Add eggs (or egg replacer) and vanilla, mixing until combined.
  • Finally, mix in the flour, and gradually add the oatmeal and lastly the chocolate chips.
  • If the mixture forms individual dry clumps, try adding a little water (I had that problem when I used egg replacer).
  • Roll dough into tablespoon-sized balls, and place about 2-inches apart on a cookie sheet (I highly recommend the insulated sheets, or use two sheets layered on top of each other with the cookies on the top sheet).
  • Bake for 10-12 minutes until the tops are brown.
  • Let sit for several minutes before removing to cool on a wire rack.
