Steps:
- Preheat oven to 500 degrees Fahrenheit with a rack in the upper third of the oven.
- Whisk water, oil, honey and yeast in a liquid measuring cup or small bowl. Allow yeast to proof for 5 minutes. It should puff up some by then.
- Pulse flour, Parmesan, and salt in food processor until combined. While running the food processor, slowly pour in the water mixture and process until a shaggy ball forms, about 1 minute.
- Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together. Halve the dough.
- On a floured surface, use a rolling pin to roll dough into two rounds about 11 inches in diameter. For best results, roll the dough out about as thin as reasonably possible. Aim for even thickness rather than a perfectly round shape.
- Carefully lift and transfer one of the rounds onto a baking sheet lined with parchment paper. Brush the outer 1-inch of the dough with a light coating of olive oil. Add half of the pizza sauce or crushed tomatoes (crush the tomatoes over the sink to get out as much liquid as possible). Sprinkle with half of the cheese and any other toppings you'd like to add.
- Bake on the top rack until the crust and cheese are lightly golden, about 10 minutes for cheese pizza and 12 minutes for pizza with additional toppings. Repeat with the remaining dough, then slice and serve. Leftover pizza will keep well in the refrigerator for about 4 days.

Steps:
- (See notes below for alternate stand mixer instructions.) In a large mixing bowl, briefly whisk together the warm water, honey and yeast until combined. Let the mixture rest for 5 to 10 minutes or until the yeast is foamy.
- Add the white whole wheat flour, olive oil, salt and stir until a loose dough ball is formed. Turn the dough out onto a floured surface and knead it by hand for 5 minutes until smooth.
- Rinse out and dry the earlier mixing bowl, then mist the bowl with olive oil or non-stick spray. Form the dough into a ball, place it in the greased bowl, then cover the bowl with a damp towel or aluminum foil. Let the dough rise for 30 to 45 minutes, or until it has nearly doubled in size.
- Heat oven to 450°F. If using a pizza stone, be sure to place the stone in the cold oven and to allow it to heat gradually. Alternatively, you can bake the pizza on a flat baking sheet, which will not need to be preheated.
- Turn the dough back out onto a floured surface and use your hands to flatten it into a round disk. Using your hands or a rolling pin, gently stretch the dough evenly into a 12- to 14-inch round for a thick-crust pizza, pinching the outer edges up slightly to form a rim. (Alternatively, you can cut the dough in half and roll it into two rounds for two thin-crust pizzas.)
- Transfer the crust to a large baking sheet that has been lightly sprinkled with cornmeal. (Or if you are using a pizza stone, transfer the crust to a pizza peel that has been lightly sprinkled with cornmeal.) For an extra-golden crust, brush the outer rim of the crust lightly with olive oil. Add the sauce and toppings in the center of the pizza as desired.
- Transfer the baking sheet to the oven (or slide the pizza from the peel to the stone) and bake the pizza for 16-18 minutes, or until the crust is golden brown and the toppings are melted and cooked.
- Transfer the pizza to a cutting board. Slice, serve and enjoy!

EATING WELL'S WHOLE WHEAT PIZZA DOUGH
Using half whole wheat and half all purpose flour yields a light crust with a distinctive nutty taste. Quick rising yeast shortens the rising time to just 10 minutes, making wholesome homemade pizza a possibility for busy weeknights. A food processor makes fast work of mixing the dough, but you can also use a stand mixer fitted with a paddle attachment or a little elbow grease to do it by hand. Whichever method you choose, add enough liquid to the dry ingredients to make a soft dough. If kneading by hand, knead for about 10 minutes. The dough will keep, in a plastic bag coated with cooking spray, in the refrigerator for up to 2 days.

Steps:
- In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
- Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
- When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
- Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
- Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

HONEY PIZZA DOUGH (AWESOME)
This is Wolfgang Puck's recipe, and we love it. If you don't have honey, just use sugar. We've found that this makes some of the best dough we've ever had.

Steps:
- In a small bowl, dissolve the yeast and honey in 1/4-cup warm water (100-110 degrees).
- In a mixer fitted with a dough hook, combine the flour and the salt. (can do by hand with spoon if you don't have a mixer).
- Add the oil, the yeast mixture, and the remaining 3/4 C water, mix on low speed until dough comes cleanly away from the sides of the bowl and clusters around the dough hook, about 5 minutes.
- If the dough is still sticky, then simply add a bit more flour until it pulls cleanly away from the hook.
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes.
- The dough should be smooth and firm. Place in lightly oiled bowl an cover with plastic wrap.
- Let sit for about 30-45 minutes. (When ready, the dough will stretch as it is lightly pulled).
- Take dough out of bowl and divide into either 2 or 4 balls, depending on whether you want 2 large pizzas or 4 small.
- Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times.
- Cover the dough with a damp towel (I just use plastic wrap, loosely fitted) and let rest 15 to 20 minutes.
- At this point, the balls can be used or wrapped in plastic and refrigerated for up to 2 days.
- To make pizzas, I stretch out onto greased pizza pan, top with sauce and toppings, and bake at 450 degrees for 12-16 minutes, until done. (smaller pizzas will take less time, so keep watching it)
- I usually slide the pizza off the pan for the remaining 2 minutes to crisp it up a bit.
GUILT FREE WHOLE WHEAT PIZZA DOUGH
Soooo good! And only 70calories per slice (at an average of 8 slices, and sauce that has 60cal. per 1/2 cup), it's fantastic. Although I did burn the bottom of the pizza the first time I made it, this pizza tastes just as good as the market restaurant I went to in central Toronto; a thin crust delight that's sure to please. (Note: Add 1/2 a tsp. more yeast for bigger crust)
