WHOLE WHEAT FLATBREAD
Kind of like a chapati, a flat pita, or a whole wheat tortilla. It is thin, perfect for scooping up dips or rolling into wraps. You could probably make these on a grill, too, and they would be lovely. These turn out to be around 6- or 7-inch diameter breads, more or less. If you want larger breads (think burrito-sized) then cut these into 8-10 pieces instead of 12.

SOFT AND FLUFFY FLATBREAD (NO YEAST)
This soft and fluffy flatbread recipe calls on baking powder instead of yeast. It takes minutes to make the bread dough and about 10 additional minutes to allow the dough to rest before cooking. These homemade flatbreads are cooked in a skillet on the stovetop, which means you can make these in about 30 minutes!

Steps:
- In a large bowl, whisk the flour, baking powder, and salt together until well blended.
- Make a well in the middle of the flour mixture, and then add olive oil, maple syrup, and most of the water (saving a few tablespoons to add later as necessary).
- Switch to a rubber spatula or spoon and stir the wet ingredients into the flour mixture. If the dough seems dry, add the remaining water. When the dough comes together, transfer to a floured work surface and knead 5 to 10 times until smooth. Cover with a clean dish cloth and leave for 10 minutes.
- Divide the dough into six equal pieces. Dust each piece in flour and roll into a disc that's between 1/8-inch and 1/4-inch thick. (Rolling thinner will make thinner bread that's less soft in the middle. Rolling thicker will make thicker, fluffier bread.)
- Add one to two tablespoons of oil to a skillet placed over medium heat. When the oil looks shimmery, add a flatbread (or more if they fit), and cook until golden brown on one side, flip and cook until golden brown on the second side, 1 to 2 minutes on each side.
- Transfer cooked flatbread to a plate, cover with a clean dish towel to keep warm, and then continue with the remaining flatbreads. If the skillet looks dry, add a little more oil before continuing.

WHOLE WHEAT GARLIC FLATBREAD
Steps:
- Combine the yogurt, whole wheat flour, all-purpose flour, baking powder, 2 tablespoons chopped parsley and 1/2 teaspoon salt in a food processor and process until the dough is smooth. Wrap the dough in plastic and refrigerate for 30 minutes.
- Preheat the grill to medium-high heat.
- Divide the dough into 6 equal portions. On a floured surface, using your hands or a rolling pin, flatten each piece of dough into a large oval, about 6-inches in length. Oil the grill grate. In batches, grill the flatbreads until puffy and charred around the edges, 2 to 3 minutes per side. (Alternatively cook in a pizza oven or on a pizza stone for 4 to 5 minutes.) Hold the flatbreads on a plate under a warm towel as you cook the rest.
- Combine the butter with the garlic and remaining 1 tablespoon minced parsley and 1 teaspoon salt. Brush the hot flatbreads with the butter mixture.
WHOLE WHEAT FLAT BREAD
I really like the taste of this simple, dense bread, and you don't even have to wait for it to rise! I bring it on camping trips all the time -- makes a great open faced sandwich with almond butter and preserves. It's also a great snack. Healthy and vegan. Cooking time includes cooling time.

Steps:
- Preheat oven to 350.
- Mix ingredients together in a large bowl (I use a wooden spoon for this, although you could also use the bread hook on a mixer, or even a bread machine).
- The dough should form a ball -- not too dry, but not too sticky either. If you have mixed for a long time, and there is still a lot of flour in the bowl, add a tiny bit more water; If the dough is too wet, add more flour.
- Cover the ball of dough with a thin dusting of flour, so you can remove it from the bowl.
- Using floured hands, spread the dough onto a greased cookie sheet -- The dough should be thin enough cover the entire sheet (make sure that the cookie sheet is greased so that the dough doesn't stick when you're trying to spread it).
- Bake for 25 minutes at 350 (for a more "cracker-like" snack, bake longer).
- Transfer to a cooling rack to cool, and cut into 12 slices.

- Mix vegetable oil, boiling water, honey, and molasses into the flour mixture, and stir until thoroughly combined. Turn the dough out onto a well-floured work surface, and knead a few times to be sure the dough is completely mixed. Divide the dough into quarters, and roll each quarter into a ball. Press each dough ball into a circle about 1/4-inch thick, and place on prepared baking sheet. If desired, use a kitchen knife to lightly score the breads with 2 criss-cross lines to break the breads apart later.
- Bake in the preheated oven until browned, about 15 minutes. If desired, brush the breads with melted butter after removing from oven.

- This recipe works best with a finely ground whole wheat flour, a flat skillet or griddle, and a simple rolling pin. In the notes section below I share with you how whole wheat roti is made in India, and include links so you can source the equipment if you wish. When I was learning Indian cuisine, I desperately wanted someone to show me what an unfamiliar item was, and where I could purchase it. It took marrying an Indian to get that introduction. :) Now you have me. :) :)Of course, you don't need to purchase anything special if you don't want to. There are substitutions below in the Notes section that will allow you to get started with this recipe using your own pantry ingredients and kitchen equipment. Have fun! This recipe is so simple, it's sublime.
- Add the flour and water to a bowl. Use a wooden spoon to mix until the flour comes together with the water into a shaggy mess. If it does not come together, add a few extra drops of water. If it is too sticky, sprinkle in a bit of flour. Now set the spoon aside and prepare to get your hands dirty.
- Divide the dough into four individual portions. Shape each portion between your two palms into a smooth ball. Set the portions aside, and keep them covered until ready to use.
- Pre-heat a flat griddle or tava on medium-high heat. To check if it is hot enough, put a couple drops of water on the tava. If it sizzles right away, it is ready.

- In a bowl or glass measuring cup, combine the warm water and sugar, stir to dissolve. Then sprinkle the yeast over the top and let that foam up for 5-6 minutes.
- In a large bowl, combine the flours and salt. Pour the yeasty water mixture in with the flour mixture and stir until a dough ball forms. Knead for 3-4 minutes. Place in a lightly oiled bowl, cover, and allow to rise for an hour.
- Punch the dough down and divide into 6-7 small balls. On a floured surface, roll the balls until they are flat and about 1/4 inch thick or a little less. You don't have to flatten them into tortillas, but you don't want them too thick or they won't cook all the way through.
- Cook in a hot (medium/high heat) skillet with a little oil for 3-4 minutes on each side. They may puff a little as you cook them and that's OK! That's how those more pronounced brown spots are formed.

- Combine flour and salt in a large bowl. Add 1 tablespoon oil and mix with your fingers until crumbly. Slowly add water and mix until the dough just comes together. If the dough doesn't come together easily, mix in up to 2 tablespoons more water. Knead on a lightly floured surface until the dough is smooth and no longer sticks to your fingers, about 2 minutes. Cover with a damp cloth; let rest for at least 15 and up to 30 minutes.
- Divide the dough into 8 balls and cover with a damp cloth. Lightly flour a rolling pin and a clean work surface. Flatten 1 dough ball and roll it out, picking it up and rotating it to make sure it isn't sticking, until very thin and about 5 inches in diameter. Transfer to a lightly floured baking sheet and loosely cover with plastic wrap or a towel. Repeat with the remaining dough, spacing the breads on baking sheets so they don't touch.
- Heat a large cast-iron skillet, heavy skillet or griddle over medium-high heat. Add one bread and cook until small bubbles appear, 30 seconds to 1 minute. Flip, then brush the top side with a little of the remaining oil and cook until lightly puffed, 30 seconds to 1 minute more. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining breads, stacking and covering them as you go to keep them warm and pliable.

- In a food processor with the dough blade attachment, add all of the ingredients. Process until dough forms a large ball.
- Remove from food processor. Dust surface with flour. Form dough into a ball. Cut the ball of dough in half. Then cut the two halves in half, creating 4 equal quarters. Cut each quarter in half, creating 8 equal pieces of dough. Roll each dough into a small ball.
- Using your fingers gently flatten the small balls of dough. Using a rolling pin, roll them out until they are thin, flat, and about 6 inches in diameter.
- Heat a skillet on medium-high. Brush with olive oil. Place 1 or 2 flatbreads on skillet and cook into dough begins to bubble, about 2 minutes. Flip and cook on the other side an additional 1-2 minutes. Dough should have golden brown bubbly spots. Repeat for the remaining flatbreads.

- Add the yogurt and mix thoroughly until the dough comes together. Let your dough rest for a few minutes.
- On a floured surface, set and divide the dough into 4 portions. Roll each portion into an oval/circular shape about ¼" thick. (the dough will be sticky so flour your surface as needed).
- If needed: Add just enough oil to lightly coat the bottom of a pre-heated pan or grill that is large enough to accommodate your rolled out dough. (Note that the pan should be hot but not smoking). Set the rolled out dough into the pan and using a pastry brush, lightly oil the top.

- In a large bowl add the yeast, water and sugar. Whisk to combine. Then whisk in the yogurt, olive oil and salt. Then add all the flour and combine with a spatula or your hands to combine. If the dough feels too sticky and wet add more flour a little at a time, until it forms a round. (This can also be done using a table-top mixer fitted with the dough hook.)
- Transfer the dough to a lightly floured surface (either flour is fine) and knead for about 5 minutes. Then divide the dough into 10 equal-sized rounds. Cover lightly with a kitchen towel or plastic wrap and let rise for about 20-30 minutes. (They should almost double in size.)
- Then when the rounds are ready, heat a lightly oiled cast iron skillet. Working with one dough round at a time, roll each round out either on a floured surface or between two lightly floured pieces of parchment. (I like them about 1/8" -1/4" thick. Then when the first round is ready, carefully transfer it to the hot skillet and let it cook a couple minutes on the first side until it starts to bubble up and has golden brown spots on the bottom. Flip over and cook about 2 minutes more on the second side until its brown in spots. Continue to roll the next round while the first one cooks and so on. (I usally can get 2 flatbreads in the skillet at the same time)
- Once you remove the flatbread from the skillet, transfer to a clean kitchen towel and keep covered while you cook the rest.
