WHOLE WHEAT ALMOND BISCOTTI

Whole Wheat Almond Biscotti image

These are based on the classic biscotti de Prato, but they are much less sweet and made with whole wheat flour and almond flour. Cut them in thin slices on the diagonal and dip them in tea, coffee or wine.

Provided by Martha Rose Shulman

Categories     dessert

Time 2h

Yield 5 dozen smaller cookies (cut across the log)

Number Of Ingredients 8

250 grams (approximately 2 cups) whole wheat flour
60 grams (approximately 2/3 cup) almond flour
5 grams (approximately 1 teaspoon) baking powder
1/8 teaspoon (pinch) of salt
125 grams (approximately 2/3 cup, tightly packed) organic brown sugar
165 grams (3 large) eggs
5 grams (approximately 1 teaspoon) vanilla extract
100 grams almonds, toasted and chopped (approximately 3/4 cup chopped)

Steps:

  • Preheat the oven to 300 degrees. Line a baking sheet with parchment. Whisk together the flour, almond flour, baking powder and salt in a bowl.
  • In the bowl of a stand mixer, or in a large bowl with a whisk or electric beater, beat together the sugar and eggs for 2 minutes. Scrape down the sides of the bowl and beaters. Add the vanilla and beat for another minute. Turn off the mixer, scrape down the bowl and beaters, and add the flour mixture. Mix in at low speed until combined. The batter will be sticky. Add the almonds and mix until well combined.
  • Using a spatula or a bowl scraper, scrape out half the batter onto the baking sheet. Moisten your hands so the dough won't stick, and form a log, about 12 inches long by 2 1/2 inches wide. Repeat with the other half of the batter. The logs can be on the same baking sheet but make sure there is at least two inches of space between them.
  • Place in the oven and bake 50 minutes, until lightly browned and dry. Remove from the oven and let sit on a rack for 20 minutes (or longer). Place the logs on a cutting board and slice thin, about 1/3 inch, either straight across the logs (for more, but smaller biscotti) or on the diagonal (for more traditionally shaped biscotti).
  • Place the cookies on baking sheets and return one sheet at a time to the middle rack of the oven. Bake 15 minutes. Flip the cookies over and bake for another 10 to 15 minutes, until hard and lightly browned. Remove from the heat and allow to cool.

HEARTY WHOLE WHEAT BISCOTTI

Hearty Whole Wheat Biscotti image

These are very good. My mom used to make them when I was younger, and as I remember, they were especially nice dipped in coffee (or hot chocolate or tea...). Not too much sugar, made with whole grain, and they store well. Enjoy! Serving size is approximate, since we haven't made these for a while and I can't remember exactly how many the recipe makes.

Time 50m

Yield 24 biscotti

Number Of Ingredients 7

2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
3 eggs
1 teaspoon vanilla extract
1/4 teaspoon almond extract

Steps:

  • Mix together dry ingredients.
  • Add remaining ingredients and mix well.
  • Divide dough in half. On greased baking sheet, form 2 logs about 2 inches wide and 13 inches long.
  • Bake 25 minutes at 350 degrees, then cool on rack for 5-10 minutes.
  • Slice with serrated knife at ½ inch intervals.
  • Return to oven for 10-15 minutes more, turning once.
  • Cool completely and store in airtight container.
  • If you have trouble handling the dough because of stickiness, add a little more flour, but not more than ¼ cup. Try oiling your hands or using a rubber spatula and wax paper.

1/2 cup all-purpose flour, spooned and leveled, plus more for work surface

HEALTHY DOUBLE CHOCOLATE BISCOTTI

Healthy Double Chocolate Biscotti image

These biscotti are perfect for any chocolate lover! They're crisp, crunchy, and completely packed with decadent dark chocolate flavor (similar to 72% dark chocolate!). These cookies taste incredible on their own, but they're also fun to dip in coffee, tea, or even hot chocolate for an extra chocolaty treat! Leftovers should keep for at least two weeks if stored in an airtight container, and they also freeze (and ship!) really well. This recipe is easily doubled to make more, too!

Provided by Amy's Healthy Baking

Categories     Dessert

Number Of Ingredients 7

¾ cup (90g) white whole wheat flour or gluten-free* flour
½ cup (40g) unsweetened cocoa powder
½ tsp baking powder
1 large egg, room temperature
1 tsp vanilla extract
½ cup (96g) coconut sugar
2 tbsp (28g) finely diced dark chocolate ((see Notes!))

Steps:

  • Preheat the oven to 350°F, and line a baking sheet with a silicone baking mat or parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder. In a separate bowl, whisk together the egg and vanilla extract. Stir in the coconut sugar. Add in the flour mixture, stirring until fully incorporated. Fold in the diced dark chocolate.
  • Transfer the cookie dough to the prepared baking sheet, and shape into a long and skinny rectangle that's 2 ¼" wide and ¾" tall using your hands or a spatula. (If the cookie dough sticks to your hands, rub them with a little neutral-tasting oil first!)
  • Bake at 350°F for 33-35 minutes. (The outside should be very dry and crusty!) Let the rectangle of baked cookie dough cool on the baking sheet for 10 minutes (no more and no less!).
  • Transfer the rectangle of baked cookie dough to a cutting board. Using a sharp serrated knife, cut the rectangle into ½"-thick strips (no wider!), working from one short end of the rectangle to the other. (Both diagonal strips and horizontal strips will work!) You should end up with cookies that are ½" thick, ¾" tall, and 2 ¼"+ wide.
  • Place the cookies onto the original baking sheet with one cut side facing down and the other cut side facing up. Bake at 350°F, flipping the cookies halfway through, for 6-8 minutes (for centers with just a bit of "give") or 12-16 minutes (for centers that are completely hard and dry). Cool completely to room temperature on the baking sheet.

WHOLE WHEAT CHOCOLATE CHUNK BISCOTTI

Whole Wheat Chocolate Chunk Biscotti image

These cookies aren't for everyone, but they are my personal favorite. They are very different from other cookies. The flavor and texture are much more intense.

Categories     Dessert

Time 1h5m

Yield 12-14 serving(s)

Number Of Ingredients 9

1/3 cup honey
1/4 cup extra virgin coconut oil
1 teaspoon vanilla
1 large egg
1 1/2 cups whole wheat flour
1/2 teaspoon baking powder
1 dash salt
1/2 cup nestle semisweet chocolate chunk
1/2 cup walnuts

Steps:

  • Melt coconut oil and mix with honey, vanilla and egg in a large bowl.
  • Mix in chocolate chunks and walnuts.
  • Add whole wheat flour, baking powder and salt and mix well.
  • Shape into a log (log will be moist -- it helps to spray hands with non-stick vegetable spray when shaping) and bake at 350°F on a parchment paper lined cookie sheet for 30 minutes.
  • Remove from oven and cool whole log on wire rack for 10 minutes.
  • Meanwhile lower oven temperature to 325 degrees.
  • After the 10 minutes, slice log into cookie slices and place back on cookie sheet, leaving space between each cookie.
  • bake for 15-20 minutes more.
  • Remove from oven and cool completely on wire rack.
  • *For variation sometimes I add 1/4 cup baking cocoa with flour.

TRIPLE CHOCOLATE WHOLE WHEAT BISCOTTI ... - THE YUMMY LIFE
This recipe is so rich in chocolate that it completely masks the whole wheat and olive oil flavor; honestly you'd never know they're there. I also dipped some of my baked biscotti in melted chocolate--admittedly not consistent with the healthifying theme--but it does increase the chocolate decadence of these delicious treats. Plain or chocolate-dipped, these are yummy.
