Time 30m

Yield Makes 4 cups batter

Number Of Ingredients 11

2 cups all purpose flour, spooned and leveled, plus 1 teaspoon for dusting berries
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups low-fat buttermilk
1/2 cup (1 stick) unsalted butter, melted and cooled
2 large eggs
1 cup fresh blueberries (6 ounces), plus more for serving
Nonstick cooking spray
Sweetened creme fraiche and confectioners' sugar, for serving

Steps:

  • Preheat oven to 275 degrees; set a rack on a baking sheet and place in oven. Preheat waffle iron according to manufacturers instructions.
  • In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt; set aside. In a large bowl whisk together buttermilk, butter, and eggs. Add flour mixture to buttermilk mixture and stir just until batter is combined. Toss berries in 1 teaspoon flour; fold into batter.
  • Lightly coat waffle iron with cooking spray. Pour 1 cup batter (this may vary depending on size of waffle iron) in the center of iron, spreading evenly with a spatula. Close iron; cook until waffles are golden brown and crisp, 7 to 8 minutes. Remove from iron and quickly toss back and forth from hand to hand to cool slightly and allow waffles to crisp up. Transfer to rack in oven; repeat with remaining batter. Serve with blueberries, creme fraiche, and a sprinkle of confectioners' sugar.

WHOLE GRAIN WAFFLES

Whole Grain Waffles image

These crispy whole grain waffles are perfect for weekend breakfasts. These freeze well for later, too (just defrost in the toaster).

Provided by Cookie and Kate

Categories     Breakfast

Time 25m

Number Of Ingredients 11

1 cup whole wheat pastry flour
1 cup whole wheat flour (you can also use spelt, rye, cornmeal or buckwheat)
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk (make your own: add 2 tablespoons of vinegar or lemon juice to 2 cups milk, and let sit for 5 minutes)
3 eggs
1 tablespoon maple syrup (or honey)
1/4 cup (1/2 stick) butter (original recipe called for one full stick of butter)
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract

Steps:

  • To keep the cooked waffles warm while you finish cooking the rest, reheat your oven to 200 degrees and heat up your waffle iron.
  • Mix the dry ingredients (flours, baking powder, baking soda, and salt) in a large mixing bowl.
  • In a large measuring cup, whisk together the buttermilk, eggs and syrup or honey.
  • Pour the liquid ingredients into the dry ingredients. Stir just until they are mixed. Add the melted butter and mix well.
  • Pour batter into your waffle iron until the batter reaches the edges of the iron. Cook until crisp and golden.
  • Place each waffle on a rack in the oven in a single layer to keep them warm until you're ready to serve. Five minutes in the oven may actually help them get a little crispier.

WHOLE WHEAT BLUEBERRY WAFFLES

Whole Wheat Blueberry Waffles image

This is a variation I invented on my easy waffle recipe. It makes a quick, hearty breakfast, and is delicious with fruit syrup. Even with a non-stick waffle iron, I suggest spraying a cooking spray onto the plates between each waffles. Blueberries don't understand the meaning of "non-stick". The blueberries also mess up the auto-sensor on my waffle iron, so they need to come out before the waffle iron thinks they are done--I look to see when they stop steaming.

Time 8m

Yield 12 waffles, 12 serving(s)

Number Of Ingredients 7

2 cups whole wheat flour
2 cups milk
1/3 cup oil
1 tablespoon baking powder
2 eggs, separated
1 pinch salt
1 cup fresh blueberries or 1 cup frozen blueberries

Steps:

  • Separate the eggs, then beat the whites until they reach the soft peak stage. Set aside.
  • sift together the flour, salt, and powder.
  • blend the egg yolks, milk and oil into the flour mixture until well mixed.
  • carefully fold in the egg whites.
  • carefully stir in the blueberries--the more movement the berries have in the batter, the more likely they are to turn the batter purple.
  • spoon onto a greased waffle iron.
  • cook until done.

WHOLE WHEAT WAFFLES

Whole Wheat Waffles image

Don't use an electric mixer to make these healthy, crispy, whole grain waffles. Stir the batter together gently by hand. A non-stick waffle iron should not need greasing. The almonds add lots of protein and healthy fats but they are optional. - Jenny Jones

1 teaspoon baking powder
1/2 teaspoon baking soda

1 1/2 cups sliced almonds (optional)

  • Gently fold buttermilk mixture into flour mixture. Keep it lumpy.

WHOLE-WHEAT BUTTERMILK BLUEBERRY WAFFLES RECIPE

WHOLE-WHEAT BUTTERMILK BLUEBERRY WAFFLES RECIPE image

Categories     Breakfast

Number Of Ingredients 12

3/4 cup all-purpose flour
1/4 cup whole-wheat pastry flour
1/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 teaspoon cinnamon
2 Tablespoons granulated sugar
1 1/2 eggs (0.75 grams), at room temp.
2 Tablespoons (1 oz) unsalted butter, melted
1 cups buttermilk, at room temp.
1/4 teaspoon vanilla extract
1 cup blueberries

Steps:

  • Preheat your waffle iron. Place a few paper towels underneath it if you are a serial over-filler like I am. Mix the all-purpose flour, whole-wheat flour, baking soda, baking powder, salt, cinnamon and sugar in a large bowl with a whisk until fully combined. In a small bowl (or a 4 cup measuring cup) measure out buttermilk. Add the eggs, melted butter and vanilla and gently whisk together until thoroughly blended. Add the buttermilk mixture to the flour mixture, blending until JUST combined (or the flour disappears) with a whisk or a rubber spatula. It's best not to over-mix here. A few lumps are better than none, trust me. Gently and quickly fold the blueberries into the batter taking care not to over-mix. Spray your waffle iron with a spritz of non-stick cooking spray. Cook the waffle batter in your waffle iron according to manufacturer's instructions (every waffle iron is different but mine took about 5 minutes per waffle batch).

  • Lightly grease the waffle iron and heat according to the iron's directions. (I usually preheat mine to medium-high.)
  • Combine the flour, whole wheat flour, baking powder, salt, brown sugar, and millet (if using) in a mixing bowl. Stir well to combine.
  • Tempter a small amount of buttermilk mixture into the melted butter and whisk with a fork to combine. Then pour the butter into the buttermilk mixture and whisk thoroughly.PRO TIP: Tempering a small amount of the cold buttermilk into the warm melted butter evens the temperature and creates an emulsification that prevents the butter from seizing into small, shard-like bits when added to the buttermilk mixture. That said, if the butter does seize, do not worry about it.
