WHOLE WHEAT BREAD RECIPE FOR BOSCH
This recipe makes 6 loaves of soft, moist whole wheat bread. I use this recipe each week, and everyone loves it! Children especially like it. You can use honey instead of sugar, but decrease the water by 1/2 cup.

Steps:
- Place first 5 ingredients in Bosch mixer bowl (using the dough hook), and mix well on speed 1.
- Add next 5 ingredients, being careful to add the yeast last. Mix on speed 1 until well-mixed. Let sit for 10 minutes.
- Add dough enhancer and mix on speed one. Add 4 cups of flour 1 cup at a time, mixing as you go.
- Add 2 cups flour 1 tablespoon at a time, mixing on speed 1. After this, mix on speed 2.
- Continue to add flour until sides of bowl are clean, and the dough is not too sticky.
- After you have finished adding flour, continue mixing (kneading) on speed 2 for 5 - 7 minutes.
- Preheat oven to 200 degrees for 5 minutes. Remove dough from bowl onto greased surface and form into loaves (I usually get 6 24-ounce loaves, with a few ounces left over for little rolls). Place loaves in greased loaf pans (non-stick spray works best), cover with tea towels, and let rise in preheated (but turned off) oven for 30 - 45 minutes.
- Remove towels and bake at 325 degrees (you don't need to preheat -- just turn the oven to 325 as soon as the rising is done) for 35 minutes (I have "speed bake" on my oven and that's how long I cook them. It may take a bit longer in a conventional oven).
- Remove loaves from pan and cool on wire racks. Slice when cool.
WHOLE WHEAT BREAD (BOSCH RECIPE)
Got this from my in-laws, who got it from the Bosch store cooking class. I use it at least twice a month to make really delicious bread.

Steps:
- Mix water, oil, 2 tablespoons lecithin (optional), and honey.
- On top, add 8 Celsius freshly ground whole wheat flour, SAF instant yeast, dough enhancer, and vital wheat gluten. Mix well.
- Next add salt and 4-8 Celsius freshly ground whole wheat flour until the dough cleans itself off the mixer and is does not stick to a lightly floured finger.
- Knead or mix for 10 minutes, then let rise in a greased and covered bowl for 90 minutes or until doubled in size.
- Form loaves and place in greased pans.
- Let rise another 90 minutes or until doubled in size again.
- Bake at 350 for 25-30 minutes.
1 HOUR WHOLE WHEAT BREAD OR YOUR KIDS WILL EAT THE CRUST!
This is the Bosch master recipe for freshly ground whole wheat bread. My kids never used to eat the crust. Now they do! :) I have done some experimenting with this to get a more firm loaf. I think I finally have it. So the recipe is adjusted, based on my tinkering. Minimum rising time included in prep time. The original recipe is from Phyllis Stanley, a Bosch consultant. She also recommends using saved potato water for the water and pureeing any leftover veggies as part of the water. Adds more nutrition and some taste. NOTE: If you don't use freshly ground flour, you will probably have to adjust the flour amounts.

Steps:
- Put ingredients in the Bosch bowl in order listed.
- Turn Bosch on and knead on speed 1 for a total of 8 minutes.
- Quickly add (after turning on) additional flour (1/2 C at a time) if needed for dough to pull away from side of the bowl, turning off Bosch each time you add flour.
- It should only pull initially half way up the side of the bowl, and during the 5 minutes, it will completely pull away.
- Turn oven on to 375° and oil your hands and counter well, spraying 4-5 loaf pans with cooking spray or oil.
- Divide the dough between the loaf pans and let rise for approximately 30 to 45 minutes. They will rise more in the oven.
- Turn oven down to 350° and bake for 30-35 minutes, or until golden brown.
- Remove from pans and let cool on cooling racks, covering with a tea towel, before cutting (if you can wait!).

MAKE 6 LOAVES OF WHOLE WHEAT BREAD IN ONE HOUR!
Steps:
- If grinding your own wheat, begin there (I use a hard white winter wheat, but red wheat is good too. Grinding the wheat using a NutriMill only takes about 4 minutes and it only has one ingredient: wheat!).
- With dough hook in place on your Bosch mixer, place water, dough enhancer, gluten, oil, honey, yeast, and 6 cups flour in the bowl. On the Bosch mixer, flip the switch over to "M" to incorporate.
- Add another 7-8 cups of flour and salt and turn the speed on the mixer to "1".
- Continue adding flour 1/2 cup at a time until dough cleans the edges of the bowl (takes just a minute or two).
- Continue kneading dough on speed "2" for another 6-8 minutes.
- Oil your hands and lightly oil a spot on a clean surface. Divide the dough into six equal portions and shape into loaves.
- Put loaves into greased pans and let rise until double in size (about 20 minutes).
- Bake at 350 degrees for 30-40 minutes (internal temperature should be about 195 degrees and the outside will be nice and golden).
