⅓ cup honey
2 tablespoons butter, softened
2 cups bread flour
1 ¼ cups whole wheat flour
1 ½ teaspoons salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
2 teaspoons active dry yeast
1 cup sweetened dried cranberries

Steps:

  • Place all ingredients (except cranberries) in the pan of the bread machine in the order recommended by the manufacturer. Select Sweet Bread cycle; press Start.
  • If your machine has a Fruit setting, add the cranberries at the signal, or about 5 minutes before the kneading cycle has finished.

Nothing better than a great stuffing and this Whole Wheat Apple Cranberry Stuffing is so easy you can have it for supper tonight with chicken never mind waiting for the big turkey day!!

6 cups day old artisan whole wheat bread, cut up into 1" cubes
1 1/2 cups vegetable stock (chicken stock can be used too)
1/2 cup white wine (omit if necessary and just add more stock)
1 cup dried cranberries
1 cup pistachio nuts, chopped
1 cup celery (about 2 stalks), chopped
1 onion, chopped
2 Tbsp. butter
2 Honey Crisp apples, chopped
1 tsp. salt
1 1/2 tsp. poultry seasoning
Freshly ground pepper
Cooking spray for dish

Steps:

  • Preheat oven to 350F. Spray an oval 11" dish with cooking spray and set aside.
  • Heat broth in the microwave until just hot and soak cranberries for 30 min. (I love to do this with raisins also to plump them up before using just using water).
  • In a small saute pan melt the butter and cook the onions and celery until the onions are translucent. About 5 min.
  • Place the bread cubes in a large bowl and then add the onions, celery, cranberries, pistachio nuts, apples, salt, poultry seasoning, pepper, stock and wine if using.
  • Mix together well and place in prepared dish. Bake for 30-40 min. or until apples are tender and the bread is starting to toast slightly.

2 cups peeled, cored and chopped apple
¾ cup white sugar
2 tablespoons vegetable oil
1 egg
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 teaspoon ground cinnamon
1 cup fresh or frozen cranberries
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch baking pan.
  • Stir together apples, sugar and oil. Add egg; mix well. In a separate bowl, sift together flour, baking powder, baking soda and cinnamon. Stir flour mixture into wet ingredients, mixing just until dry ingredients are moist. Stir in cranberries and walnuts. Spread batter into prepared pan.
  • Bake in preheated oven for 35 to 45 minutes, until toothpick inserted into center of loaf comes out clean.

1 1/4 cups Gold Medal™ Better for Bread™ bread flour
3/4 cup Gold Medal™ whole wheat flour
1 teaspoon salt
1/4 teaspoon ground mace
1 1/4 teaspoons bread machine yeast
1/3 cup dried cranberries of golden raisins
1 cup plus 2 tablespoons water
1/4 cup honey
2 tablespoons butter or margarine, softened
2 cups Gold Medal™ Better for Bread™ bread flour
1 1/4 cups Gold Medal™ whole wheat flour
1 1/2 teaspoons salt
3/4 teaspoon ground mace
2 teaspoons bread machine yeast

Steps:

  • Make 1 1/2-Pound Recipe with bread machines that use 3 cups flour, or make 1-Pound Recipe with bread machines that use 2 cups flour.
  • Measure carefully, placing all ingredients except cranberries in bread machine pan in the order recommended by the manufacturer. Add cranberries at the raisin/nut signal or 5 to 10 minutes before last kneading cycle ends.
  • Select Whole Wheat or Basic/White cycle. Use Medium or Light crust color.

Having grown up with Pepperidge Farm stuffing, I will always have a weakness for bread stuffing seasoned with sage and thyme, with plenty of chopped onion and celery. I prefer to use 100 percent whole wheat bread, one that isn't at all sweet. A mixed grains bread would also work. The apple and cranberries contribute sweetness, tartness and texture to the classic dressing. I bake this in a gratin dish; you can double the recipe if you want to use it for a stuffing as well, and put half inside the bird. But, moistened with a well seasoned vegetable stock, the dressing makes a great vegetarian side dish. Just be sure to use plenty of stock to moisten, as the problem with most stuffings that are baked outside the bird is that they are dry. Tender apples like McIntosh, Gala, Macoun and Cortland work well in this dish.

8 to 9 ounces whole wheat bread (with crusts), cut into 3/4 to 1-inch cubes (4 to 5 cups)
3 tablespoons extra virgin olive oil
1 medium or large onion, finely chopped
2 stalks celery, diced
Salt and freshly ground pepper to taste
1 large apple, peeled and diced
1/4 cup chopped flat-leaf parsley
2 teaspoons minced fresh thyme
1 tablespoon minced fresh sage or 1 teaspoon rubbed dried sage
1/2 cup dried cranberries
1 egg
1 cup chicken or vegetable stock
1 tablespoon unsalted butter

Steps:

  • Preheat oven to 350 degrees. Oil or butter a 2-quart baking dish. Place cubed bread in a large bowl.
  • Heat 2 tablespoons of olive oil over medium heat in a large, heavy skillet. Add onion and celery and cook, stirring, until onion is tender, 5 to 8 minutes. Season with salt and pepper and scrape into bowl with the bread. Add remaining olive oil to bowl and all of the other ingredients except egg and stock. Season generously with salt and pepper and toss well.
  • Beat egg in a small bowl and whisk in 1/2 cup of stock. Scrape into bread mixture and mix together well. Turn into prepared baking dish. Douse mixture with remaining stock (hold back about 1/4 cup if you are going to reheat). Dot top with butter.
  • Cover baking dish with foil and bake for 45 minutes. Uncover and bake another 15 minutes, until top is nicely browned. Serve hot.
