Categories     Bread     Yeast Bread Recipes     Whole Grain Bread Recipes     Wheat Bread

Time 3h50m

Yield 12

Number Of Ingredients 6

1 ¾ cups warm water
2 tablespoons honey
¾ teaspoon active dry yeast
3 ½ cups whole wheat flour, or more as needed, divided
1 tablespoon olive oil
1 teaspoon sea salt

Steps:

  • Mix the warm water, honey, and yeast in a stand-mixer bowl until mixture becomes foamy, about 5 minutes.
  • Add half the whole wheat flour, olive oil, and salt to the mixture. Mix with a spatula or wooden spoon until incorporated. Let sit for 1 to 2 minutes.
  • Mix with a dough hook attachment on low speed, slowly adding the remaining whole wheat flour, increasing the speed to high. Mix on high until the batter is combined and not sticking to the sides of the bowl, about 7 minutes. Cover the bowl with a towel and let rest for 15 minutes.
  • Meanwhile, prepare a 9x5-inch loaf pan with parchment paper. Flour a surface to work the dough.
  • Place the dough onto the floured work surface and shape into a loaf. Use more flour if necessary. Place into the prepared loaf pan.
  • Let shaped dough sit in a warm place until it has risen over the top of the pan, about 1 hour.
  • Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until top of the loaf sounds hollow when tapped, about 35 minutes. Remove from the oven and let cool for 15 to 20 minutes before removing from the pan and transferring to a wire rack. Let cool an additional hour before slicing; otherwise it will feel doughy.

SIMPLE WHOLE WHEAT BREAD

Simple Whole Wheat Bread image

Simply a great-tasting and easy-to-make whole wheat bread.

Provided by Nita Crabb

Categories     Bread     Yeast Bread Recipes     Whole Grain Bread Recipes     Wheat Bread

Time 3h

Yield 36

Number Of Ingredients 9

3 cups warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
⅓ cup honey
5 cups bread flour
3 tablespoons butter, melted
⅓ cup honey
1 tablespoon salt
3 ½ cups whole wheat flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
  • Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
  • Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

PLEASE SEE MY METRIC CHART ABOUT THE FLOUR. Make sure the egg and oil are at room temperature and be sure to aerate your flour before measuring. No mixer? Just mix it in a bowl by hand but knead longer, about 150 turns. (This recipe also works with all white flour) - Jenny Jones

Time 1h30m

Yield One loaf

Number Of Ingredients 9

2 cups (240-260 g) whole wheat flour (Aerate Flour Before Measuring - See How)
1/2 cup (60-65 g) bread flour or all-purpose flour

  • In a large bowl, dissolve yeast in warm water. Pour in oil and honey and give it a stir. Let yeast mixture sit for about five minutes to activate, or until yeast is frothy.
  • Add egg, salt, baking soda, and 3 cups of flour and knead for a few minutes. Depending on how sticky your dough is, you may add up to an additional 1/2 cup flour if needed.
  • Preheat oven to 425°F. Place dough in a bowl and cover with a dish towel or plastic wrap and let sit for 10 minutes.

  • Combine all of the ingredients and mix and knead them — by hand, mixer, or bread machine — until you have a soft, smooth dough., Allow the dough to rise, covered, for 1 to 2 hours, or until it's puffy and nearly doubled in bulk., Lightly grease (or line with parchment) a baking sheet., Gently deflate the dough, and transfer it to a lightly greased work surface.
  • Divide it into three equal pieces, shape each piece into a rough log, cover the pieces, and let them rest for 10 minutes., Roll each piece of dough into an 18" rope.
  • Place the three pieces of dough side by side on the prepared pan, and braid them, squeezing the ends together, then tucking them neatly underneath., Cover the braid gently with lightly greased plastic wrap or a proof cover, and allow it to rise for about 1 hour, until it's puffy, but not doubled in bulk., Preheat the oven to 375°F., Bake the bread for 20 minutes, tent it with foil and bake for an additional 10 minutes, until it's a deep, golden brown, and an instant-read thermometer inserted into the center registers 190°F., Remove it from the oven, and after a minute or so carefully transfer it to a rack.

  • Combine the water and milk in a microwave-safe liquid measuring cup or bowl. Warm the milk and water to 105-115° F. (If you do not have a microwave, you can warm them in a pan on the stove.)
  • Pour the milk and water into the bowl of a stand mixer.* Add the honey and yeast and stir to combine. Let stand for 5 to 10 minutes, until the yeast starts to foam or bubble. If nothing happens after 10 minutes, your yeast may be dead and you should start over with new yeast.
  • Add the flour, salt and butter to the bowl. Mix using the paddle attachment until everything is combined.
  • Switch to the dough hook. Knead the dough on low speed for about 8 minutes. The dough should feel slightly sticky when you touch it, but a lot of dough shouldn't stick to your finger. If the dough is very sticky, add more flour, 1 to 2 tablespoons at a time. As the dough kneads, stop the mixer every few minutes, as needed, and use a spatula to scrape the dough away from the sides of the bowl. After kneading, the dough will be a little sticky and very soft. It won't hold its shape tightly in a ball, but should hold together when you transfer it to an oiled bowl using your hands or a spatula.
