2 cups Gold Medal™ whole wheat flour
1 cup Gold Medal™ all-purpose flour
1 3/4 cups sugar
2 cups mashed very ripe bananas (about 4 medium)
1/2 cup coarsely chopped nuts
2/3 cup vegetable oil
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
4 eggs

Steps:

  • Heat oven to 350°F. Grease bottoms only of 2 (9x5- or 8x4-inch) loaf pans with shortening or cooking spray.
  • In large bowl, beat all ingredients with electric mixer on low speed 30 seconds. Beat on medium speed 45 seconds, scraping bowl frequently. Pour batter into pans.
  • Bake 55 to 65 minutes or until toothpick inserted halfway between center and edge of pan comes out clean. Cool 10 minutes. Loosen sides of loaves from pans. Remove from pans to cooling rack. Cool completely, about 2 hours, before slicing.

This is a really quick and easy recipe. Most of all its healthy, moist and tasty. The recipe has been in the family as long as I can remember. Not really sure where it came from. Kids still ask for it when they're coming home from college on the weekend.

1/2 cup butter
3/4 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup whole wheat flour
1/2 cup unbleached flour
1 teaspoon baking soda
1 1/4 cups mashed bananas (2 large or 3 small)
1/4 cup yogurt or 1/4 cup sour cream
1 cup walnuts, chopped
1/2 cup carob chips or 1/2 cup chocolate chips
1/2 cup raisins (optional)
1 -2 tablespoon icing sugar, for dusting (optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl cream butter and sugar together until very light and creamy.
  • Beat in egg.
  • Add vanilla extract and blend, set aside.
  • Into a medium bowl or on a sheet of wax paper sift together whole wheat, unbleached flours and baking soda.
  • In a small bowl blend buttermilk and mashed banana.
  • Add dry ingredients alternately with the banana mixture to the butter mixture.
  • Stirring just enought to combine well.
  • Stir in walnuts and chocolate chips, raisins if you like.
  • Turn into a greased and floured 9 x 5 loaf pan or bundt cake pan.
  • Bake for 50-55 minutes on middle rack.
  • Until tooth pick comes out clean.
  • Let cool in pan for 5- 10 minutes.
  • Remove from pan and cool on rack.
  • After it is cooled just a light dusting with icing sugar if you like.

I actually abandoned my "family" banana bread in favor of this one... It's more a like a cake than a bread. I have increased the bananas from the original recipe, and I prefer to omit the nuts. I like mine warm with butter on top. Yummy!

1/2 cup butter or 1/2 cup margarine
1 cup sugar
2 eggs, slightly beaten
3 medium bananas, preferably frozen, then defrosted (1-2 cups mashed)
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1 cup whole wheat flour
1/3 cup hot water
1/2 cup chopped walnuts

Steps:

  • Melt butter.
  • Put the butter, sugar, bananas and eggs in a blender. Blend until nice and smooth.
  • Now transfer to a mixing bowl.
  • In a separate bowl, stir together flours, salt, and baking soda.
  • Add dry ingredients to banana mixture alternately with hot water.
  • Stir in chopped nuts.
  • Cut a piece of waxed or parchment paper the size of the bottom of your loaf pan.
  • (This helps the loaf come out in one piece while still warm).
  • Put the paper in the loaf pan and spray the pan well with non-stick spray.
  • Scoop the batter into the pan.
  • Bake in a preheated 325 degree F oven for one hour and 10 minutes.
  • Test with a cake tester to make to make sure it's done.
  • Sometimes it takes a little bit longer.
  • If the top gets too brown, cover it with a piece of aluminum foil so it doesn't get too much darker.

vegetable cooking spray (for coating baking pan)
5 medium bananas (very ripe and peeled)
¾ cup walnuts (toasted and coarsely chopped, divided)
¼ cup unsweetened applesauce
¼ cup coconut oil (melted)
2 large eggs
½ cup honey
1 teaspoon vanilla extract
1 ¾ cups white whole wheat flour (or whole wheat flour)
1 teaspoon baking soda
½ teaspoon kosher salt

Steps:

  • Adjust oven rack to middle position and heat oven to 350°F. Spray loaf pan with vegetable cooking spray.
  • Place 5 peeled bananas in a medium-sized bowl, cover with plastic wrap. Microwave for 4 minutes, until the bananas are soft and have released liquid from the fruit. Transfer to a fine-mesh strainer over a bowl and allow to drain, occasionally stirring for 10 minutes. There will be about ½ to ¾ cup liquid retained in the bowl.
  • Toast walnuts in a medium-sized pan over medium heat for about 4 minutes, until fragrant, crunchy and lightly toasted. Roughly chop ½ cup. Chop ¼ cup into finer pieces for topping on bread.
  • Transfer drained liquid to a medium saute pan and cook over medium-high heat, until reduced to ⅛ cup, about 5 minutes. Remove pan from heat, stir reduced liquid into the cooked bananas, and mash until mostly smooth. Whisk in applesauce, coconut oil, eggs, honey, and vanilla.
  • Whisk flour, baking soda, and salt together in a large bowl.
  • Pour banana mixture into dry ingredients and gently fold with a spatula until just combined, with some streaks of flour remaining. Gently fold in ½ cup chopped walnuts. Sprinkle ¼ cup chopped walnuts evenly over the loaf.
  • Place banana bread pan on a sheet tray lined with parchment paper. Bake until a toothpick inserted in the center of the loaf comes out clean, 50 to 55 minutes. Let bread cool inside the pan for 10 minutes, then place it on a wire rack and let cool for 1 hour before serving.

1/4 cup melted coconut oil ((56 g))
1/2 cup maple syrup ((140 g))
2 eggs
1/2 tsp salt
1 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla extract
1 3/4 cups whole wheat flour ((240g))
1/2 cup add-ins, optional ((chocolate chips, nuts, dried fruit etc.))
1 banana, halved

Steps:

  • Preheat the oven to 350F and grease a 9×5-inch loaf pan.
  • In a bowl, mash the bananas. (Note 1)
  • Add the coconut oil, maple syrup, and eggs to the same bowl and whisk together.
  • Whisk in the salt, baking soda, cinnamon, and vanilla extract.
  • Add the flour into the bowl and fold gently until combined. Fold in add-ins, if using. (Note 2)
  • Pour the batter into your greased loaf pan.
  • Cut another banana in half lengthwise and place on top of the bread. Press gently to help the banana adhere.

Steps:

  • Preheat oven to 350 F degrees. Lightly grease a 9 x 5 inch loaf pan.
  • Beat together the butter, sugar, baking soda, salt, cinnamon, nutmeg and vanilla in a medium bowl until smooth. Add the banana, honey and eggs, beating until smooth. Add the flour and nuts, stirring until smooth. Spoon the batter into the prepared pan and let it rest at room temperature, uncovered for 10 minutes.
  • Bake the bread for 50 minutes. Lay a piece of foil gently across the top and bake until a cake tester (like a toothpick) inserted into the center comes out clean, 10 to 15 minutes more. Remove the bread from the oven and allow it to cool for 10 minutes before turning it out of the pan onto a rack to cool completely.
