JUICY ROAST TURKEY RECIPE

Juicy Roast Turkey Recipe image

How to Make the Juiciest Roast Turkey Recipe (no lengthy marinating required)

Provided by Natasha of NatashasKitchen.com

Categories     Medium

Time 2h50m

Number Of Ingredients 17

12 lb turkey ((Anything from 11-15 lbs will work, but bake time will vary))
Salt & Pepper for the inside and outside of the bird
1 cup (2 sticks) unsalted butter, softened
2 Tbsp olive oil (not extra virgin, plus more to drizzle top)
4 Tbsp fresh lemon juice (from 1 large lemon, plus 1/2 Tbsp lemon zest)
3 large garlic cloves (pressed)
1/4 cup freshly chopped parsley
1/2 Tbsp salt (I used sea salt)
1/2 tsp black pepper (freshly ground)
1 large onion (quartered (no peeling))
4 garlic cloves (halved (no peeling))
1/2 bunch parsley
1 lemon (quartered)
Kitchen String
Heavy duty foil
A heavy roasting pan that accommodates your bird (but isn't over-sized)
A temperature probe (to ensure a fully-cooked turkey)

Steps:

  • Season inside of turkey cavity generously with about 1 tsp salt and 1/4 tsp pepper.
  • In a medium bowl, combine: 2 sticks softened butter, 2 Tbsp olive oil, 1/2 Tbsp lemon zest, 4 Tbsp lemon juice, 3 pressed garlic cloves, 1/4 cup chopped parsley, 1/2 Tbsp salt, 1/2 tsp pepper. Mash /stir with a fork until well combined (the lemon juice doesn't easily stir into butter but keep mixing and it will happen after a few minutes). Take a whiff of it; you'll fall in love with how fresh it smells!
  • Separate the skin from the turkey breast by pushing your fingers under the skin. Do this from the front and the back of the turkey; being careful not to tear the skin.
  • Stuff 2/3 of the butter mixture under skin then spread the butter around by massaging over the top of the skin. This butter keeps the turkey breast tender, juicy and provides rich flavor.
  • Rub remaining butter over the outside of the turkey (breast, legs, wings). Drizzle all over the top of the turkey with olive oil and generously season with salt and pepper; I just love a crisp, salty skin.
  • Stuff turkey with quartered onion, 4 halved garlic cloves, 1/2 bunch parsley and quartered lemon. Tie turkey base and legs together; crossing the legs to better close up the turkey cavity, plus it looks extra fancy on the table.
  • Here is a fantastic tip: to protect the turkey breast and keep it juicy: Fold a large square sheet of foil into a triangle. Rub one side of your triangle with olive oil and shape the foil (oil-side-down) over the turkey breast, then remove foil; it will shield your turkey breast and keep it from getting dry. You'll apply this shield later in the roasting process.
  • Place an oven-safe meat thermometer into the bird; beneath the drum stick; deep into the dark meat. Start roasting uncovered at 430˚F for 20 min.
  • Remove from oven; quickly baste with butter from the bottom of the dish. You can use a baster or tilt one side of the pan and collect drippings with a large spoon. Now apply prepared foil triangle to turkey breast area.
  • Reduce oven to 350˚F and bake for another 2 hours 30 min for a 12 lb bird. (Once you have reduced the oven to 350˚F, you will bake about 13 min for every pound of turkey). The turkey thigh should register at 170˚F on the temperature probe and the breast at 160˚F to make sure it's fully cooked through then remove from the oven (keep in mind the turkey temp continues to rise slightly after it's out of the oven).
  • Transfer turkey to serving platter and cover loosely but fully with foil. Let turkey rest for at least 1 hour. It will become more tender and easier to carve, the longer it sits. Keep the drippings from roasting pan for gravy. Now you can decorate around your turkey and make it festive. I used kale for my greens, then added small apples, sliced oranges and quartered lemons.

HOW TO COOK A TURKEY

How to Cook a Turkey image

The biggest myth in all of American cookery is that a juicy, perfectly cooked turkey is difficult for the novice cook to achieve. Even if this is your first time, don't play scared, this will work! There is nothing to fear but the fear of dry turkey itself.

Provided by Chef John

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 3h45m

Yield 24

Number Of Ingredients 10

1 onion, coarsely chopped
1 stalk celery, coarsely chopped
1 carrot, coarsely chopped
1 (12 pound) whole turkey, neck and giblets reserved
2 tablespoons kosher salt
1 tablespoon ground black pepper
1 teaspoon cayenne pepper
3 tablespoons butter
4 sprigs fresh rosemary
½ bunch chopped fresh sage

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place onion, celery, and carrot in a large, shallow roasting pan.
  • Place turkey, breast side up, on top of the vegetables in the roasting pan. Pat the outside and inside of the turkey dry with paper towels.
  • Combine salt, black pepper and cayenne pepper in a small bowl. Season the inside of the turkey with about 1/3 of the salt mixture. Fold wing tips under the bird.
  • Melt butter in small saucepan over medium heat until the edges begin to turn golden, about 2 minutes. Cook and stir rosemary and sage for 1 minute.
  • Place rosemary and sage inside the cavity of the turkey; reserve melted butter. Tie the legs together with twine.
  • Brush outside of the turkey completely with the melted butter. Season with remaining 2/3 of the salt mixture.
  • Bake turkey, uncovered, in the preheated oven until no longer pink at the bone and the juices run clear, about 3 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the turkey from the oven and allow to rest in a warm area 10 to 15 minutes before slicing.

Provided by I Heart Recipes

Categories     Dinner

Time 3h35m

Number Of Ingredients 15

13 lb Whole Turkey (everything removed from cavity)
8 tbsp salted butter (softened (not margarine))
1 tsp salt
2 tsp ground sage
1/2 tsp ground black pepper
2 tsp garlic powder
2 tsp onion powder
4 large stalks of celery (roughly chopped)
2 large carrots (peeled & chopped)
1 bunch of Italian parsley
1 large onion (chopped)
2 large oranges (sliced)
2 large granny smith apple (sliced)
1 large lemon (sliced)
5-6 sprigs of thyme

Steps:

  • First things first. Make sure that you thoroughly wash all of the fruit, veggies, and herbs prior to anything else. Then set to the side.
  • Preheat the oven on 350 F.
  • Clean the turkey. Make sure that the cavity is emptied, and all of the excess skin if trimmed.
  • In a medium sized mixing bowl, toss in the softened butter.
  • Sprinkle in the onion powder, garlic powder, sage, salt, and pepper.
  • Mix everything until it is nice and cream.
  • Loosing up the turkey skin by using a spatula.
  • Make sure that the skin is loose enough to place your hands underneath.
  • Divid the butter mixture in half.
  • Rub half of the butter mixture under the turkey skin, and in the cavity.
  • Stuff as much of the mixed veggies, herbs, and fruit into the turkey cavity.
  • Toss the remaining apples, celery, and etc in the bottom of your roaster pan.

  • Put turkey in the oven, on the lower rack, uncovered for 1 hour.
  • Remove the turkey from the oven and baste.
  • Cover the turkey with foil, and cook for another 2 hours and 15 minutes. Remove and baste every hour.
  • Once the turkey is done, remove it from the oven, baste, cover, and let rest for 30 minutes to 1 hour before serving.
  • Enjoy!

TRAEGER SMOKED TURKEY RECIPE | TRAEGER GRILLS

Traeger Smoked Turkey Recipe | Traeger Grills image

Our favorite smoked turkey recipe for Thanksgiving dinner. Use your pellet grill this year to free up oven space. Let that bird smoke its way to deliciousness.

Provided by Traeger Kitchen

Categories     Poultry

Number Of Ingredients 7

water
Traeger Rub
Sugar
minced garlic
Worcestershire sauce
(12-16 lb) fresh or frozen turkey, thawed, giblets removed
Canola oil

Steps:

  • Make the brine: Pour the water into a 5 gallon non-metal bucket. Add the Traeger rub, sugar, garlic, and Worcestershire sauce and stir until the sugar has completely dissolved.
  • Place the turkey, breast side down, in the bucket with the brine, making sure the turkey is completely submerged. Cover the bucket and refrigerate overnight.
  • Remove the turkey from brine and pat dry. Rub the canola oil all over the outside of turkey, then place breast-side up in a disposable aluminum roasting pan.
  • When ready to cook, set the Traeger temperature to 225°F and preheat with the lid closed for 15 minutes. For optimal flavor, use Super Smoke, if available.

  • Increase the grill temperature to 350℉ and continue cooking until the internal temperature of the turkey reaches 165°F, 3 1/2-4 hours more.

EASY, NO FUSS THANKSGIVING TURKEY

Easy, No Fuss Thanksgiving Turkey image

Foolproof Thanksgiving Turkey recipe that packs all of the flavor and juiciness you expect from the perfect roasted turkey, with none of the stress! Step by step for how to cook the perfect turkey.

Provided by Lauren Allen

Categories     Main Course

Time 3h50m

Number Of Ingredients 12

1 12-20 pound turkey
1 onion (, peeled and quartered)
1 lemon (, quartered)
1 apple ((your favorite kind), quartered)
.75 ounce container fresh rosemary (*)
.75 ounce container fresh thyme (*)
.75 ounce container fresh sage (*)
1 cup unsalted butter (, softened)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
6-8 cloves garlic (, minced)
fresh chopped herbs

Steps:

  • If the turkey is frozen: Thaw in the fridge, 24 hours for every 5 pounds of Turkey. I like to give myself 1 extra day, just to be safe.
  • Remove the thawed turkey from the fridge 1 hour before roasting, to let it come to room temperature.
  • Adjust your oven rack so the turkey will sit in the center of the oven. Preheat oven to 325 degrees F.
  • Make the herb butter by combining room temperature butter, minced garlic, salt, pepper, one tablespoon fresh chopped rosemary, one tablespoon fresh chopped thyme, and half a tablespoon of fresh chopped sage. (You'll use the remaining fresh herbs for stuffing inside the cavity of the turkey)
  • Remove turkey from packaging and remove the neck and giblets from the inside the cavities of the bird. (Reserve them for gravy, if you want, or discard them). Pat the turkey very dry with paper towels.
  • Season the cavity of the turkey with salt and pepper. Stuff it with the quartered lemon, onion and apple and leftover herbs.
  • Use your fingers to loosen and lift the skin above the breasts (on the top of the turkey) and smooth a few tablespoons of the herb butter underneath.
  • Tuck the wings of the turkey underneath the turkey and set the turkey on a roasting rack inside a roasting pan*.
  • Microwave the remaining herb butter mixture for 30 seconds (it doesn't need to be completely melted--just really softened). Use a basting brush to brush the remaining herb butter all over the outside of the turkey, legs and wings.
  • Roast at 325 degrees F for about 13-15 minutes per pound, or until internal temperature (inserted on middle of thigh and breast) reaches about 165 degrees.
  • (I remove the turkey from the oven once it reaches 160 degrees. Then, I tent it with foil, and let it rest on the counter. It will continue cooking under the foil, to reach 165 degrees F.)
  • ***Check the turkey about halfway through cooking, and once the skin gets golden brown, cover the top of the turkey with tinfoil, to protect the breast meat from overcooking. Alternately, you could start cooking the turkey with it tented in foil, then during the last hour or so of cooking you can take the foil off to let the turkey brown.
  • Allow turkey to rest for 20-30 minutes before carving. https://tastesbetterfromscratch.com/how-to-carve-a-turkey/
  • Reserve any drippings and juice remaining in your roasting pan to make turkey gravy.

  • Place foie gras or chicken liver and dried bread crumbs in a large bowl. Add herbs, beaten eggs and mushroom mixture. Sprinkle with salt and pepper. Mix until all ingredients are incorporated.
