Steps:
- Combine 1/4 cup oil, shrimps, jalapeno pepper, salt, oregano, pepper, lemon juice and garlic in a large bowl and toss well. Cover with plastic wrap, and chill at least 2 hours.
- Preheat oven to 450º. Place a 15" x 10" baking pan in oven 10 minutes or until extremely hot. Carefully spread shrimp in a single layer across pan. Bake 8 minutes, stirring once halfway through cooking.
- Serve in shallow bowls with good loaf of sourdough bread and a cold bottle of Kenwood Sauvignon Blanc.

OVEN ROASTED SHRIMP WITH TOASTED GARLIC AND RED CHILE OIL

Steps:
- Preheat oven to 500 degrees F.
- Place the shrimp in a cazuela or an ovenproof casserole and season with salt and pepper, to taste. Drizzle olive oil over shrimp, add crushed garlic, and toss to coat. Roast in the oven until pink and cooked through, about 4 to 5 minutes. Drizzle generously with Red Chile Oil and sprinkle with thyme and Toasted Garlic Chips. Serve with crusty bread.
- 1 cup olive oil
- 6 dried chiles de arbol, lightly toasted and crushed
- 6 cloves garlic, finely chopped
- Pinch salt
- 3 sprigs fresh thyme, leaves removed
- Blend all ingredients including the thyme leaves in a blender until smooth.. Strain through a fine mesh strainer into a bowl.
- 1 cup olive oil
- 8 cloves garlic, thinly sliced

- Heat the oil in a small skillet until it begins to shimmer. Add the garlic and cook until the slices begin to brown and curl. Remove with a slotted spoon to a plate lined with paper towels and season with salt.
SPICY BAKED SHRIMP
Steps:
- Whisk olive oil, Cajun seasoning, lemon juice, parsley, honey, soy sauce, and cayenne pepper together in a large glass or ceramic bowl. Add shrimp and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 1 hour.
- Preheat the oven to 450 degrees F (230 degrees C). Spray a baking dish with cooking spray.
- Transfer shrimp into the prepared baking dish and pour any remaining marinade over top.
- Bake in the preheated oven until shrimp are bright pink on the outside and the meat is opaque, about 10 minutes.

- Combine first 7 ingredients in 9x13-inch baking dish. Add shrimp and toss to coat. Refrigerate 1 hour.
- Preheat oven to 450°F. Bake until shrimp are cooked through, stirring occasionally, about 10 minutes. Garnish with lemon wedges and serve shrimp with French bread.
