6 to 8 garlic cloves, peeled
1 tablespoon canola oil
1 medium red onion, thinly sliced
2 tablespoons butter
1 tablespoon brown sugar
8 ounces crumbled goat or feta cheese
1 tablespoon white balsamic vinegar
Salt and pepper to taste
1/4 cup thinly sliced fresh basil
Thinly sliced French bread or assorted crackers

Steps:

  • Place garlic and oil in a pie plate. Cover and bake at 350° for 30 minutes. , Meanwhile, in a small skillet, saute onion in butter until tender and lightly browned. Add brown sugar; cook and stir until sugar is dissolved. Remove from the heat., Remove garlic from pie plate. Spread onion mixture in pie plate; top with cheese. Place garlic over cheese. Bake, uncovered, for 15-20 minutes or until cheese is melted. , Mash garlic mixture with a fork. Stir in the vinegar, salt and pepper. Transfer to a serving bowl; sprinkle with basil. Serve warm with French bread or crackers.

1 (3 1/2-pound) roasting chicken
4 ounces goat cheese
10 to 12 whole fresh sage leaves
1 bunch fresh herbs, such as flat-leaf parsley, basil, and chervil, plus more for garnish
Coarse salt and freshly ground pepper
8 small white onions, peeled
8 shallots, peeled
4 garlic cloves, peeled
3 tablespoons unsalted butter, melted
1 pound carrots, cut on an angle into 1/2-inch-thick slices
1 pound parsnips, cut on an angle into 1/2-inch-thick slices
2 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees. With your fingers, loosen the skin on the chicken breast. Cut the goat cheese into 4 1/2-inch-thick rounds. Carefully place rounds in a decorative pattern under skin, and press a sage leaf into each round.
  • Stuff chicken with herbs, and truss with kitchen twine. Season with salt and pepper. Place on a rack in a roasting pan. Surround chicken with onions, shallots, and garlic.
  • Roast, uncovered, and basting occasionally with melted butter, until chicken is cooked through, 1 hour to 1 hour and 20 minutes.
  • Place carrots and parsnips on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Transfer to oven, and roast until tender, about 1 hour. Serve chicken with vegetables; garnish with herbs.

Roasted Garlic and Baked Goat Cheese make an easy, yet elegant appetizer to serve to guests on the coming chilly nights. It also makes a meal in itself with the proper accompaniments. Cheese and bread always pleases!

2 head garlic
1/4 cup olive oil
salt
black pepper
4 oz goat cheese log ((1 cup))
2 tbsp panko bread crumbs
1 tsp dried tarragon
1 French baguette (sliced)

Steps:

  • Preheat the oven to 350°. Cut the top off the garlic heads so that the cloves are exposed. Place the heads in a small baking dish.
  • Drizzle 3 tablespoons of the oil over the tops, allowing it to sink in around the garlic papers. Season to taste with kosher salt and freshly ground pepper. Bake for 1 hour.
  • Meanwhile, prepare the goat cheese for baking. In another small baking dish, place the log of goat cheese. Drizzle the remaining tablespoon of oil over the cheese, rolling the log to coat.
  • In a small bowl, combine the bread crumbs, tarragon, and a little more freshly cracked pepper. Sprinkle the bread crumb mixture over all sides of the log, turning as necessary.
  • Bake cheese, uncovered for 30 minutes alongside the garlic.
  • The garlic cloves will practically pop out of their skins. Spread them on baguette slices along with some goat cheese.

2 whole garlic bulbs
1 foot aluminum foil
1 tablespoon olive oil
1/4 cup pine nuts
1 sourdough baguette, cut into 1/2-inch slices
4 ounces strong goat cheese
6 sprigs Italian parsley

Steps:

  • Preheat oven to 400 degrees F.
  • Slice 1/2-inch off the pointed end of the garlic bulb to expose each clove. Place garlic on aluminum foil. Pour 1 teaspoon of olive oil over the top of each bulb and let it sink into the cloves.
  • Wrap foil around garlic bulbs and bake for approximately 1 hour, or until exposed cloves are golden brown.
  • In a dry saute pan over medium-high heat, toast pine nuts for approximately 5 minutes, or until golden brown.
  • Toast baguette slices in oven or toaster oven.
  • To serve, place garlic, cheese, pine nuts and parsley on a serving plate along side crostinis. Instruct guests to extract individual garlic cloves from bulb with a small fork, spread on toast, and top with goat cheese, pine nuts and parsley leaves.

Steps:

  • For roasted cauliflower:
  • Preheat oven to 475°F. Bring wine, oil, kosher salt, juice, butter, red pepper flakes, sugar, bay leaf, and 8 cups water to a boil in a large pot. Add cauliflower, reduce heat, and simmer, turning occasionally, until a knife easily inserts into center, 15-20 minutes.
  • Using 2 slotted spoons or a mesh spider, transfer cauliflower to a rimmed baking sheet, draining well. Roast, rotating sheet halfway through, until brown all over, 30-40 minutes.
  • For whipped goat cheese and assembly:
  • While cauliflower is roasting, blend goat cheese, cream cheese, feta, cream, and 2 tablespoons oil in a food processor until smooth; season with sea salt. Transfer whipped goat cheese to a serving bowl and drizzle with oil.
  • Transfer cauliflower to a plate. Drizzle with oil; sprinkle with sea salt. Serve with whipped goat cheese.
  • DO AHEAD: Whipped goat cheese can be made 1 day ahead. Cover; chill.

1 1/2 pounds Granny Smith apples, peeled, cored, cut into -inch pieces (about 4 cups)
1 cup golden raisins
1 cup diced seeded plum tomatoes

1 French-bread baguette, cut into 1/3-inch-thick slices

Steps:

  • Stir sugar and vinegar in heavy large saucepan over medium heat until sugar dissolves. Add next 4 ingredients and simmer until mixture is syrupy and reduced to 1/2 cup, about 8 minutes. Mix in apples and raisins. Increase heat to high and boil until apples are tender, stirring frequently, about 10 minutes. Cool to room temperature. (Chutney can be made 3 days ahead; cover and refrigerate.) Mix in tomatoes and mint.
  • Preheat oven to 450°F. Arrange baguette slices on baking sheet and brush with olive oil. Bake until golden and crisp, about 8 minutes. Spread each toast with roasted garlic; top with goat cheese and chutney.

2 large garlic heads
2 tablespoons olive oil
salt
fresh ground black pepper
1 ounce goat cheese, from a log

Steps:

  • Preheat oven to 375°.
  • Remove any loose papery skins from the outside of the garlic heads; cut off the top 1/3 of the heads to open the cloves; set aside for another use; place the heads in a small baking dish, cut sides up; pour olive oil over them and sprinkle with salt and pepper.
  • Cover the dish tightly and bake until 3/4 done, about 45 minutes; uncover and continue to bake another 15 minutes or until the cloves begin to pop out of their skins and brown.
  • Top each head with 1/2 ounce slice of goat cheese and broil until golden, about 1 minute; serve warm.
