Healthier Homemade Mac and Cheese image

To make this rich mac and cheese recipe healthier we use whole wheat bread crumbs, low-fat milk and cheese, whole wheat noodles, and reduced the amount of butter. Serve with a salad for a healthy meatless dinner.

1 (16 ounce) package whole wheat macaroni (such as Smart Taste®)
2 tablespoons butter
2 ½ tablespoons all-purpose flour
2 cups shredded low-fat Cheddar cheese
½ cup grated Parmesan cheese
3 cups low-fat (1%) milk
2 tablespoons butter
½ cup whole wheat bread crumbs
1 pinch paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly. Stir in Cheddar and Parmesan cheeses and cook over low heat until cheese is melted and sauce is thick, about 3 minutes. Place macaroni in large baking dish and pour sauce over macaroni. Stir well.
  • Melt 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and stir until butter is absorbed, 2 to 3 minutes. Spread over macaroni to cover. Sprinkle with paprika.
  • Bake in preheated oven until cheese sauce is hot and breadcrumbs are browned, about 30 minutes.

Whole Grain Macaroni and Cheese image

This is a macaroni and cheese that's not too heavy and benefits mightily from the use of whole-wheat pasta and the addition of broccoli. You can assemble it ahead and bake it when you need it, or bake it ahead and reheat. There are a number of excellent whole wheat macaroni products on the market now. Check out Community Grains and MagNoodles. When you cook the macaroni, be sure to cook it for less time than usual so that it is more al dente; otherwise it will become too soft and may fall apart when you bake it in the final casserole.

2 tablespoons plus 2 teaspoons extra virgin olive oil, plus additional for oiling dish
1/2 pound whole grain macaroni shells, elbows, penne, or fusilli
1 large broccoli crown, broken into small florets (about 3/4 pound)
2 tablespoons finely chopped shallot
2 tablespoons flour, sifted
3 cups milk (1 percent, 2 percent or whole, to taste)
Salt and white or black pepper
Pinch of nutmeg
4 ounces Gruyère, grated (1 cup tightly packed)
1 ounce freshly grated Parmesan (1/4 cup tightly packed)

Steps:

  • Heat oven to 350 degrees. Oil a 2-quart baking dish.
  • Bring a large pot of water to a boil and salt generously. Add macaroni and cook al dente, a minute short of however long you typically cook pasta if you were serving it right away. Use a skimmer or strainer to lift macaroni from cooking water and transfer it to a large bowl. Toss with 2 teaspoons olive oil and set aside.
  • Add broccoli to boiling water and boil 3 minutes. Transfer to a bowl of cold water, drain, and then drain again on paper towels or a kitchen towel.
  • To make béchamel, heat remaining 2 tablespoons oil over medium heat in a medium-size heavy saucepan. Add shallot and cook, stirring, until softened, 2 to 3 minutes. Stir in flour and cook, stirring, for about 3 minutes, until smooth and bubbling, but not browned. It should have the texture of wet sand. Whisk in milk all at once and bring to a simmer, whisking constantly until mixture begins to thicken. Turn heat to very low and simmer, whisking often and scraping the bottom and edges of the pan with a rubber spatula, for 15 minutes, until sauce has thickened and lost its raw flour taste. Season with salt, pepper and a pinch of nutmeg. Remove from heat.
  • Strain béchamel while hot into the bowl with the pasta. Add cheeses and broccoli and stir together until pasta is nicely coated with sauce. Scrape into prepared baking dish.
  • Bake 30 to 40 minutes, until bubbly and the top is lightly browned. Remove from oven and allow to sit for 5 to 10 minutes before serving.

Traditional baked mac and cheese with my children-tested healthy twists. Beware: they now will not eat mac out of a box, and neither will you! When you remove from oven it should look a bit loose still; if it isn't it cooked too long. Lessen cooking time for next time. You can use any whole grain short pasta for this recipe.

½ cup water
¼ cup butter

10 ounces shredded extra-sharp Cheddar cheese
4 slices American cheese

2 ½ cups butternut squash soup
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine elbow macaroni and water in the bottom of a 9x11-inch baking dish.
  • Melt butter in a large saucepan over medium heat. Whisk flour into melted butter until smooth. Gradually whisk milk into flour mixture; bring to a boil and cook, stirring constantly, until smooth and thick, about 2 minutes.
  • Stir Cheddar cheese, American cheese, and Parmesan cheese into milk mixture until cheeses are melted and mixture is smooth. Gradually stir butternut squash soup into cheese mixture. Season with salt and pepper to taste.
  • Pour cheese mixture over elbow macaroni and stir to combine.
  • Bake in the preheated oven until top begins to brown, about 50 minutes. Let cool for 10 minutes before serving.

2 tablespoons extra virgin olive oil
1 clove garlic, chopped
2 cups heavy cream
1 cup Asiago cheese, diced
1 cup Fontina cheese, diced
½ cup Parmigiano-Reggiano cheese, shredded
Salt and black pepper, to taste

Steps:

  • Bring a large pot and a small pot of water to a boil
  • Pre-heat Oven to 400° F
  • *To make carrot puree: Boil carrots in the small pot; when tender drain and rinse
  • Puree the carrots in a food processer or blender until smooth adding water as needed to make a thick sauce
  • Meanwhile in a large skillet sauté garlic in olive oil until slightly yellow in color
  • Add cream to skillet; slowly bring to a simmer and add carrot puree
  • Whisk in Asiago and Fontina cheeses, simmer
  • Cook pasta 1 minute less than package directions
  • Drain, and toss with sauce
  • Pour mix into a 2-quart casserole dish, top with Parmigiano-Reggiano cheese and bake 10 minutes in the oven

1/2 pound whole-wheat rotini
4 tablespoons butter
1 to 2 tablespoons diced onions
2 tablespoons all-purpose flour
Pinch ground black pepper
2 cups milk
1/2 cup grated Muenster
1/2 cup grated Cheddar
1/2 cup baby spinach
2 teaspoons oil, from marinated sun-dried tomatoes
8 sun-dried tomatoes, chopped
1 1/2 cups bread crumbs (recommended: Panko)
1 tablespoon smoky paprika

Steps:

  • Preheat oven to 350 degrees F.
  • In a large pot of boiling salted water, add rotini and ook for 6 to 8 minutes until tender. Drain and set aside.
  • In a saucepan over medium-high heat, melt 2 tablespoons of butter and add the onions. Add the flour and pepper and mix until mixture is pasty and forms a roux. Whisk milk into pan incorporating the roux. Bring to a simmer over low heat and allow to thicken; about 5 minutes. Once thickened, whisk in the cheeses. Add the pasta and mix until the pasta is well coated. Fold in spinach, sun-dried tomato oil, and sun-dried tomatoes.
  • In a small saucepan, melt remaining 2 tablespoons of butter over medium heat. Once melted, turn heat off and add bread crumbs and paprika. Mix well to combine.
  • Pour rotini into a casserole dish large enough to hold the pasta. Sprinkle the top with bread crumbs and place in oven for 15 to 18 minutes or until brown and bubbling.
