WHOLE GRAIN FRENCH TOAST WITH FRESH PAPAYA

Papayas are an underappreciated fruit that deserve more play. We chose to pair them with this recipe because their juicy, bright flavor is a nice contrast to the fried bread, and, well, because we love them. But feel free to substitute whatever fruit you like.

Steps:
- 1. Peel the papaya and cut it in half lengthwise. Use a spoon to remove the seeds. Slice the papaya into cubes (you should have about 1 cup).
- 2. In a large shallow bowl whisk together the milk, egg, sugar, vanilla, and salt. Dip each slice of bread into the egg mixture, soaking both sides so that the bread is well coated and has absorbed the custard.
- 3. Melt the butter in a large pan over medium-high heat. Add the bread and cook, working in batches, if necessary, until golden brown, about 2 minutes per side. Add additional butter to the pan if the bread seems to be sticking.
- 4. Transfer the French toast to two serving plates and drizzle with maple syrup, if desired. Top with the chopped papaya and serve.

- Preheat Griddler, fitted with the griddle plates, to 375°F (190°C), and grease with nonstick spray.
- Use a whisk to beat the eggs in a 9x13-inch (23x33-cm) casserole dish until smooth.
- Add the milk, maple syrup, vanilla, cinnamon, and salt, and whisk until smooth and well combined.
- Dunk the bread in the batter, 4 slices at a time, until just soaked. Do not let the bread soak in the wet ingredients too long or it will become too wet and fall apart when you attempt to pick it up.
- Transfer the soaked bread to the Griddler and cook for 10 minutes.
- Sprinkle with powdered sugar, drizzle with maple syrup, and serve.
- Enjoy!

- In a medium bowl, whisk together eggs, sugar, heavy cream, milk, and vanilla until combined. Pour into a shallow bowl that's big enough to dip a piece of bread into.
- Soak the bread slices in the mixture for 20-30 seconds on each side (if it gets too mushy and break, soak it for only a few seconds). Meanwhile, over medium-low heat, melt some of the butter in a skillet pan (swirl it around so it coats the pan bottom evenly) and sprinkle some of the sugar, if using. The sugar will turn into caramel so work quickly so it won’t burn.
- As soon as the sugar is added, place however many slices of bread that fit into the pan. Cook until golden brown, 1-3 minutes on each side (the first side usually takes longer). Clean the pan carefully (it’s hot!) with a kitchen paper towel so there’s no sugar left, and repeat the process; melt butter, sprinkle sugar, if using, and cook the bread slices.
- Serve immediately with your favorite toppings: butter, maple syrup, jam, sour cream, powdered sugar, fruit.

- In a shallow bowl, add your eggs and slightly whisk them. Then add in your almond milk or coconut milk, brown sugar, vanilla extract, almond extract, and cinnamon.
- While the butter melts, dunk a slice of bread gently in the egg mixture and then flip to make sure you coat both sides of the bread; do not leave bread in the mixture for too long. 10-15 seconds max.
