Number Of Ingredients 12

4 medium Russet potatoes (peeled and diced or 8 yukon gold potatoes)
3-4 carrots (peeled and diced)
1 onion (chopped)
1 pound hamburger
1 package frozen peas (the small pkg.)
1 can tomatoes (16 oz )
1 can tomato sauce (8 oz)
1 package taco seasoning (or roughly 1/4 cup)
1 can corn (undrained)
1 can chili beans (undrained)
1 can green beans (undrained)
1 can kidney beans (undrained)

Steps:

  • In a large pot add a drizzle of olive oil and place over medium heat.
  • Cook the onions until tender, about 3 minutes.
  • Add the carrots and potatoes and add just enough water to cover them.
  • Cook until tender.
  • In a separate pan, over medium heat cook the hamburger, drain the grease and add to the water and tender veggies.
  • Add all of the remaining ingredients and cook until heated through.
  • Serve with shredded cheese, sour cream and fritos!

4 tablespoons olive oil
1 medium onion, roughly chopped
4 large cloves garlic, roughly chopped
2 jalapenos, seeded and sliced
1 tablespoon dried oregano
1 teaspoon dried cumin
1 (28-ounce) can chopped tomatoes
3 cups shredded cooked chicken
Few dashes Worcestershire sauce
3 to 4 cups chicken stock
1 lime
1 cup cooked white rice
Kosher salt
Sour cream, for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Heat oil in a saucepan over medium heat. Add onion and saute for 1 to 2 minutes. Add garlic and jalapeno and sweat until soft and translucent. Add spices and cook for 1 to 2 minutes until fragrant and aromatic. Add tomatoes, chicken, Worcestershire, and stock.
  • Bring to a simmer and cook 20 minutes.
  • Cut the lime in half, squeeze juice into the pot, and then add the juiced halves as well.
  • Add white rice and cook 5 minutes longer to warm rice through. Season, to taste, with salt.
  • Ladle into bowls and garnish with sour cream and cilantro.

1 pound ground beef
2 cans (15 ounces each) black beans, rinsed and drained
2 cans (10 ounces each) diced tomatoes and green chiles
1 can (15 ounces) tomato sauce
1-1/2 cups frozen corn (about 7 ounces)
2 teaspoons chili powder
1/2 teaspoon ground cumin
Crushed tortilla chips, optional

Steps:

  • In a large saucepan, cook beef over medium heat until no longer pink, breaking into crumbles, 6-8 minutes; drain., Stir in beans, tomatoes, tomato sauce, corn, chili powder and cumin. Bring to a boil. Reduce heat; simmer 5-10 minutes to allow flavors to blend. If desired, top each serving with tortilla chips., Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

2 pounds ground beef
1 onion, chopped
2 (15 ounce) cans ranch-style beans
1 (15.25 ounce) can whole kernel corn
1 (10 ounce) can diced tomatoes with green chile peppers
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (1.25 ounce) package taco seasoning mix

Steps:

  • In a large pot over medium high heat, combine the ground beef and onion and saute for 5 to 10 minutes, or until meat is browned and onion is tender; drain excess fat.
  • Next, stir in the beans, corn, tomatoes and green chile peppers, tomatoes and taco seasoning. Mix well, reduce heat to medium and allow to heat through, about 15 minutes.

My mother gave me this recipe. She found it while clipping coupons. It is from S&W. This is the best stew I have ever eaten and my family requests me to make it quite frequently. It has become a "comfort food" for us. Perfect to make if you have leftovers after baking a large turkey or chicken. Can be made vegetarian or vegan if desired.

1 cup diced onion
1 -2 garlic clove, finely chopped
1 tablespoon olive oil
3 cups cooked chicken or 3 cups cooked turkey, diced or shredded
1 (1 1/4 ounce) package taco seasoning mix
2 (14 1/2 ounce) cans ready-cut diced tomatoes, undrained
1 (15 ounce) can black beans or 1 (15 ounce) can kidney beans, drained
1 (8 3/4 ounce) can whole kernel corn, drained
1 (4 ounce) can diced green chilies, drained
1 cup chicken broth
1/2 tablespoon cornstarch

Steps:

  • Cook onion and garlic in oil in large saucepan until tender.
  • Add cooked chicken, taco seasoning, tomatoes, beans, corn and chilies.
  • Blend broth and cornstarch; add to saucepan.
  • Bring to a boil; reduce heat and simmer 15 minutes; stirring occasionally.
  • Serve with cornbread for a hearty meal.

1 lb lean ground beef
1 medium onion, chopped
1 (15 1/4 ounce) can whole kernel corn, undrained
1 (10 ounce) can diced tomatoes with mild green chilies, undrained
1 (15 ounce) can pinto beans in chili sauce, undrained
1 (1 1/4 ounce) envelope taco seasoning
1 (10 3/4 ounce) can tomato soup, undiluted
1 cup water
baked corn tortilla chips (I prefer Doritos) or plain Doritos (I prefer Doritos)
cheddar cheese, grated

Steps:

  • Brown the beef and onion in a dutch oven, then drain.
  • Add all ingredients to the beef/onion mixture, except for the tortilla chips and cheese.
  • Cook over medium heat until thoroughly heated.
  • TO SERVE: Crumble a handful of either tortilla chips or Doritos in individual serving bowls and cover with a generous helping of stew.
  • Sprinkle with cheese.
  • HINT: You can reduce the heat by substituting the pinto beans in chili sauce with either red kidney beans, plain pinto beans, etc.
