Copycat Whole Foods Jumble Nut Cookies image

The ultimate large, soft, and chewy everything cookie! Filled with almonds, chocolate, cranberries, oats, raisins, walnuts, and white chocolate.

Number Of Ingredients 18

¼ Cup Unsalted Butter (softened)
¼ Cup Granulated Sugar
¼ Cup Light Brown Sugar
1 Egg
¼ Teaspoon Vanilla Extract
¼ Teaspoon Salt
½ Teaspoon Cinnamon
¼ Teaspoon Nutmeg
½ Teaspoon Baking Powder
¼ Teaspoon Baking Soda
¾ Cup plus 2 Tablespoons All-Purpose Flour
¾ Cup Old Fashioned Rolled Oats
½ Cup Jumbo Semi-Sweet Chocolate Chips
1/3 Cup White Chocolate Chips
¼ Cup Raisins
¼ Cup Dried Cranberries
¼ Cup Slivered Almonds
1/3 Cup Chopped Walnuts

Steps:

  • In the bowl of an electric stand mixer fitted with the paddle attachment, cream together the sugars and butter. Scrape down the sides.
  • Add egg and vanilla. Mix on medium until combined. Scrape down sides.
  • In a medium mixing bowl, whisk together the salt, cinnamon, nutmeg, baking powder, baking soda, flour, and oats.
  • With the mixer on low, add the flour mixture all at once. Mix on low until almost combined. Add in the chocolate chips, white chocolate chips, raisins, cranberries, almonds, and walnuts. Mix on low or with a spatula until combined and no more flour is visible.
  • Chill the bowl with the dough in the refrigerator for at least two hours.
  • Preheat the oven to 350 degrees F. Line two large baking sheets with parchment paper.
  • Scoop 5 tablespoon portions of chilled dough on to the parchment paper lined baking sheets. Press each ball of dough gently with the palm of your hand to flatten into a cookie disc.
  • Bake the cookies for 14-15 minutes until golden around the edges. Let cookies cool on sheet.

1/4 cup brown sugar, plus 2 tablespoons
1 large egg
1/2 teaspoon vanilla extract

1/2 teaspoon baking powder
1/2 cup roasted, unsalted peanuts, coarsely chopped
1 cup bittersweet chocolate chips
fleur de sel, to taste

Steps:

  • Preheat oven to 350 degrees.
  • In a large mixing bowl, cream the butter, peanut butter, sugar, brown sugar, egg, and vanilla extract. Whisk together the flour, baking soda, and baking powder and add to peanut butter mixture, stirring to combine well. Stir in chopped peanuts and chocolate chips.
  • Drop generous spoonfuls of dough onto an ungreased cookie sheet. Press each mound of dough with a fork to flatten slightly.
  • Bake until bottom of cookies are golden brown, about 10 minutes. Remove from oven and sprinkle immediately with fleur de sel to taste. Let cookies cool on sheet for a few minutes before transferring to a cooling rack to cool completely.

Drop dough by the tablespoon onto cookie sheets, allowing 2-3 inches between each cookie. Bake about 10 minutes, until golden brown. Cook slightly on pan and then transfer to wire racks to cool.
