MOLASSES BUTTER FOR BAKED WHOLE SWEET POTATOES
Slather this "spiced-up" butter on your baked sweet potatoes! The butter can be prepared up to 1 week in advance, and can be doubled, make this topping well in advance, it will save you time. If you have a any leftover butter, it can be frozen. This amount of butter should be enough for 5-6 medium baked yams depending on the amount used on each potato. This is wonderful on baked sweet potatoes!

Steps:
- Mix the first 6 ingredients in a bowl using an electric mixer until fluffy; cover and chill (soften slightly before using if desired).
- After the yams are baked cut slits across center of each yam.
- Press ends together toward the center to expose the flesh.
- Spoon 2-3 tablespoons of spiced butter into each.
- Pass the spiced butter around at the table.
WHOLE ROASTED YAMS W/ MAPLE-ALLSPICE BUTTER
This is super easy and it is wonderful! I have made the yams whole, and sometimes I cut them into either halves or chunks. I have also made these "twice baked" By baking the yams,cutting them in half, taking out the filling, blending the filling with the seasoned butter,stuffing it back into the shell and heat them up again....

- 1. Mix all the ingredients except for the whole yams (or sweet potatoes) Butter can be prepared ahead of time and refrigerated. Bring to room temp before serving.
- 2. Pre-heat oven to 375 degrees. Pierce yams (sweet potatoes) with a fork all over.Wrap them in aluminum foil. Set them on a rack in oven. Make one yam per guest if they are smaller in size, or cut in half after baking. Bake until tender, about an hour.
- 3. Cut a cross shape on top of yams. Using an oven mitt, squeeze yam gently in from sides, forcing to open. Spoon 1 Tablespoon of prepared butter into each yam. Serve and pass remaining butter.
YAMS WITH TOASTED SPICE RUB

- Preheat oven to 375 degrees F.
- Put sweet potatoes in a glass or stainless steel bowl.
- Melt the butter in a small saucepan over low heat. Stir in brown sugar and lemon juice. When sugar is completely melted, stir in Toasted Spice Rub and gray salt. Pour mixture over sweet potatoes. Toss well.
- Arrange sweet potatoes in a baking dish, cut side up. With rubber spatula, scrape all the butter and spice mixture over the top of the sweet potatoes, and then add a sprinkling of Toasted Spice Rub on top of each one. Cover with foil and bake at 375 degrees F until easily pierced with a knife.
- Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool. Put in a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients.

- Put oven rack in middle position and preheat oven to 450°F. Generously butter a large (13- by 9- by 2-inch) shallow baking pan.
- Heat zest, juice, molasses, salt, and pepper in a small saucepan over moderate heat, stirring, until molasses is dissolved.
- Toss potatoes with molasses mixture in baking pan and arrange, cut sides down, in 1 layer. Bake, uncovered, turning over once (to other cut side), until tender and glazed, 25 to 30 minutes.

- Preheat oven to 350°F Line large baking sheet with heavy-duty foil. Using small, sharp knife, make one 1/2-inch-deep lengthwise slit in each yam, leaving 1 inch of yam uncut at each end. Place yams on baking sheet. Bake yams until tender, about 1 hour 15 minutes.
- Cut slits across center of each yam. Press ends toward center to expose flesh. Transfer yams to platter. Spoon 1 tablespoon spiced butter into each. Pass remaining spiced butter separately.
